Mamposteao recipe

Hi there! I recently had mamposteao at a restaurant with plantain mixed in, and it was delicious. Does anyone have a mamposteao recipe they love? Thank you!

A few years ago I had an amazing arroz mamposteao risotto at a restaurant. That place has since closed down and im trying to make my own version of that dish, but there are zero recipes online.
Arroz mamposteao is just rice and beans from the day before mixed together. The beans are like the picture in this recipe: https://www.food.com/recipe/puerto-rican-rice-and-beans-pink-beans-147650
Soo how do I work it? Do I just make a standard risotto and sub the bean sauce in for stock?
