Heyo! Never done something like this before and haven't been on this sub in a while but I'm looking for a relationship. Honestly the worst part is not knowing if hitting the return key posts this or not so I'm gonna wing it and hopefully not post a half completed paragraph 😅
About me:
I'm an oddbal to say the least - I work in the games industry and spend weeknights playing games, but on weekends I'm comedically busy either going on adventures or volunteering at our transport museum. I love going on walks and trips either locally or around the country in my crappy 90's car that definitely will be the death of me 😅
I also like baking and cooking - recently nailed a brownie recipe by just simply not having enough of the ingredients to finish the mix (except the chocolate ofc - I made sure to have enough chocolate but forgot to check the rest....) so definitely expect some distasterous desserts!
Also a massive animal lover - unfortunately don't have pets atm but I regularly walk a pair of dogs and they are lovely! I will happily pay dog tax in dms!

2024.05.19 12:25 greenwasp3000 What to do with leftover dough?

When last I made dough, I only used about half of it for my intended purpose (mini pretzel bites). I'm unsure of what to do with the other half.
For context, was using the Nick DiGiovanni soft pretzel recipe. If you're not familiar, it's 1.5 cups water, 1 tbsp salt, 1 tbsp sugar, 1 packet (2.25 tsp) of Active Dry yeast, followed by 4.5 cups of flower and 2 tbsp of olive oil, once the yeast has activated.
Just wanted to include that last bit so the type of dough I have is clear. I don't know another way to describe it, I'm fairly new to baking.
Anyone with interesting ideas, lmk!

I always thought that the cornstarch in basque cheesecake was a gluten free replacement for flour, but does it actually have other important role?
I tried to bake one without it and for some reason the result was the cheesecake is very wet at the sides, and also the texture is a bit crumbly/dense compared to my other cheesecake that uses starch?? Is it because of the absence of the starch??? Or is it because of other factor?
Note: the reason i don’t use starch in this recipe is because i used matcha powder and i thought if i also added the starch the cheesecake will be too dense, should i also added the starch with the powder??

Hi, so let's get straight to the point.
I have to bake any recipe under an hour that must include fruit or veg for my home ec cookery exam this Wednesday.
I am so stressed bc I have to study and all this for other exams. I've spent so long trying to find a simple recipe that fits the criteria above. I would prefer if the recipe was around 50 min as it's not too long or short. All the other recipes I find have complicated ingredients like lemon zest or cream cheese. I just need something simple but not too simple.
I won't be able to use things such as melted butter and that because I won't be able to melt it in the kitchen there.
I am begging for anyone's help. I don't mind if you give a link or put the recipe here.
Please help. I am so stressed at the moment, and this would be a huge relief.

Edit: Sorry, I forgot to mention I'd prefer if it were cookies, muffins, or cupcakes you recommend as I don't know if we have cake or bread cases in the home ec kitchen.

I made: - RecipeTin eats Vanilla cupcakes with chocolate meringue buttercream - salted caramel and white chocolate cupcakes - cinammon scrolls (pastry from scratch) - a Beyblade Stadium cake (decoration isn't my forte) but the marble cake was amazing
A massive kitchen undertaking and I feel like the house will be sticky for a couple of days, but he had a blast.

Help me proof
Recently I stopped baking for around a month or so, and then I revived my starter. Ever since, I’ve been having issues with my loaves. They seem to turn out over proofed or under proofed. I realise that the weather has changed as it’s a lot colder. The weather ranges from 11-15 degrees in the morning then 17-18 degrees in the afternoon and finally 16-13 degrees in the evening/ night. (This is based off Google weather)
Does anyone have a guideline for how long I should be proofing based on the weather? Any help is appreciated. I have posted a photo of the recipe I follow

I've wanted to try baking some salted caramel cookies, but I'm kinda wondering about the type of sea salt that you sprinkle on top of it at the end.
Most recipes would usually recommend sea salt flakes. The only one I could find around here is of the Maldon's brand. But I feel like its a bit too pricey and too much for something that I would probably used once or twice. After looking through a bunch of stores nearby, here are what I've found;
Does it make a huge difference using any of these as opposed to regular sea salt flakes? Is there also a particular type of sea salt that I should avoid when making cookies/baking in general?

Half uncured pepperoni (can’t remember the brand but got it at Whole Foods)/half cheese (Trader Joe’s whole milk mozz), hand crushed Bianco DiNapoli whole tomatoes, a bulb’s worth of chopped fresh garlic in olive oil, grated parmesan, oregano, hot pepper flakes, and fresh basil on Ooni’s grandma style dough. Baked for 18 minutes at 450 on the lower-middle rack of an electric oven with 30 seconds under the broiler to finish.

First time baking 6 inch cakes, they're so cute c: The frosting didn't go on as smoothly as I hoped, but it still tasted great.
Mix of recipes from Sally's Baking Addiction. Strawberry cupcakes (has the correct volume of batter for 3 6" pans), cream cheese frosting from the strawberry cake recipe, lemon curd, and the leftover strawberry puree from the cake. I started with the full 9" size cake recipe before reading thru the comments to see the cupcake recipe is better fit for small cakes.

I saw a lot of recipe book and baking book recommendations in the subreddit search history, but I didn't see any book in those answers that looked like it covered raw, basic techniques. I'm specifically looking for the intersection between molecular gastronomy and baking/pastry, covering techniques like aeration, gelation, thickening, etc, and which explains which techniques to use with which ingredients for the best results.
An excellent example of what I'm talking about would be this: https://jordibordas.com/en/blog/como-combinar-alcoholes-y-gelificantes-en-pasteleria/ but they don't have a book on amazon and the course is over $2k.
Some of this might be covered in other cookbooks as part of other recipes, but I really don't want to have to flip through 4-5 books looking for examples of gelling and then do the work of organizing, categorizing, and then deriving the how and why principles underlying those specific recipes. I'd rather get the information raw so that when I see them used in these recipes, the choice of technique just seems obvious.
Here are some of the books that seemed to be highly recommended in general. Do any of these cover the techniques I'm referring to?

Hi all, I put my shokupan bread into the oven and it did not continue to rise in the oven while baking. I followed the recipe and let it rise to 90% of the bread tin, expecting for it to continue to rise while baking. What did I do wrong? This is the second time I made this and it came up slightly short both times. Here’s the recipe: 80g tangzhong 100g water 250g bread flour (King Arthur) 25g sugar 3g salt 3g yeast 20g butter
I baked at 375F (190C) for 25 minutes. I had a separate oven thermometer and the oven is hot (maybe a little hotter than 375) when I put in the dough
