As an unfortunate NY transplant, I’m pretty snobbish when it comes to hoagies and Italian sandwiches. I know I should be focusing on Mexican, however, I’m all ears to your favorite spots when that sandwich craving hits.
Looking for any recs for:
-Hoagies/heros/Italian subs
-A good caprese
-Any place with schiacciata (like focaccia but thinner and crispier)
-Any other authentic Italian sandwich without having to make a trip to All’Antico Vinaio in LA
Places tried already:
-La Shore Market and Deli (hole-in-the-wall, big sandwiches with lots of meat)
-Poma’s in OB (could do with more meat)
Places on my list:
-Hungry Lu’s
-Giorgino’s

Well, the verdict is in for me. For my growing location and conditions, these tomatoes taste almost exactly the same. I would say maybe the CC is the teensiest bit more mealy in texture but not enough to notice when eating. I had to really hone in and eat them both plain with a touch of salt to tell. When I ate them as caprese or in a tomato sandwich, I couldn't tell the difference.
This is great news as the CC plant was insanely more productive and vigorous/healthy. More robust leaves etc. The CP plants had about 12 fruit on them while the CC had 20. The fruits were relatively the same size.
Both the CC and the CP had a ripe fruit on the same day. (Both being picked on the same day at the breaker stage.)
So I'm thrilled as the CP tends to be a little wimpy around here. I'll only plant CC from here on out.

A question of preference and presentation.
At my restaurant (fast casual, beach food) we served a variety of Burgers and Sandwiches. Some are fairly standard; crabcake, burgers) some are a bit more 'involved'; a seared salmon sandwich, a few specialty fried chicken sandwiches, a caprese, etc.
We currently serve them 'open' with the tops of some, like the burgers, face up with the trimmings resting on the lid, and the protein in the open.
Looking for opinions, i prefer that we top and close them, mainly because I don't love the occasional inconsistency in presentation. We are seasonal and get exceedingly busy all summer, staff is also seasonal and some have zero kitchen experience experience at the beginning of the summer.

I got a caprese panini in our local diner (I’m based in the US) in an attempt to eat a bit healthier before I even realized maybe the slices of fresh mozzarella wasn’t a great idea. I asked if it was pasteurized and he said he didn’t know. He went back to check and still seemed like he didn’t know. I ate half the sandwich before thinking to ask.
I thought pretty much all cheese sold here in the states had to be pasteurized.
Should I be worried???

The point of a caprese salad is that its simple. Mozzarella, tomato, balsalmic vinegar or glaze, basil, and some kind of lettuce if you really feel like it. The only way to make this dish better is to use fresher, nicer ingredients.
It is not a sandwich, you can't put cold cuts on it and wrap it in something and keep calling it a caprese salad.

Got 8 items, most expired yesterday. One of them I threw away was the chicken Caesar salad bc lettuce looked brown and I’m not going to risk it.
