I jsut want to start with a disclaimer: I love Chinese food. I *love* Sichuan cuisine. I love their authetnic and traditional dishes. I'm very intrigued and receptive to Chinese culture in general and I am *not* discriminatory towards the country or people nor do I want to be!

However, my opinion appears to be that they used a lot of oil in their cooking, which is broadly seen as unhealthy, and nothing has truly challenged that perspective to me as of yet.
When I see people asking this question online it seems people are very quick to suggest that restaurant dishes use excessive oil (and probably salt/sugar etc.) compared to traditional dishes but I'd have to say that I've followed loads of apparently authentic Chinese dish recipes either from google or youtube videos and the reality is that they still tend to use a lot of oil.
1 tbsp isn't necessarily loads of oil for a meal because you probably need at least that much for any stir-fry, though I notice basically every dish uses at least that much, and possibly more on top, and usually sesame oil as well.
Someone in this thread counters that a lot of olive oil is used in Western food but it's generally agreed that olive oil, especially extra virgin, is much healthier due to antioxidants and hgih amounts of 'healthier' monounsatured fats (whereas the Chinese oil mainstayys: peanut, rapeseed, sesame oil, are all high in the less good [depending on who you want to believe] polyunsaturated). I mean, the mediterranean diet is supposed to be the healthiest in the world.
Do people think this is a problem or not?
Second question: even if you don't believe the oil use to be a problem, please can someone give real examples of traditional home cooking which doesn't use a lot of oil? I see a lot of people saying this is case and playing devil's advocate, however I haven't really seen proper examples of traditional full meals. I know steamed vegetables and bao buns are things, and these may well be very light on oil, but does that consistute a full meal?

Again, don't mean any offense in this question but I do want to probe and get a bit of a dialogue on it and some proper examples of foods/meals commonly eaten which perhaps are much lighter on oil :-)

Hey folks, I'm looking for some books about international cuisines, which focus more on the conception, background, development, etc. rather than recipes. Preferably, but not necessarily, French, Italian and Chinese cuisines. Cheers!

I have this fermented tofu that I got from an asian supermarket. It is labelled as "WANGZHIHE- fermented tofu stinky/smelly" (translated from the German label that is itself a translation from Chinese?)

Plus, these are nice a thousands ways to Sunday. They cook very quickly, and are great oven-roasted, steamed, and BBQ'ed with other veg.

I’ve never been a fan of wings that are particularly wet or saucy. Some of my favorite wings are ones I get at Chinese or Thai restaurants with the hot stir fried peppers and onions. Anyone got some recommendations for good recipes in that vein?

This week I want to share some recommended foods to eat and avoid for people who are having the issue of frequent urination (频尿), especially at night.
Normally if you need to wake up from sleep and urinate for more than 1 time at night, then it is considered as frequent urination.
This happens because as we age, our kidney qi weakens and loses its fluid-holding strength (固摄功能). As the kidney and bladder are closely related in TCM perspective （肾与膀胱相表里）, it, therefore, results in frequent urination.
The following are some foods you can eat to improve the organ's 固摄功能 (fluid-holding strength):
1. Lotus seeds (莲子) - One of the properties lotus seeds have is strengthening the fluid-holding function in the Kidneys. Nowadays there are ready-to-eat snacks (lotus seeds) that you can buy and eat anytime. Else, you can add some (dried) lotus seeds into any soup for your meals.
2. Gordon Enryale Seed (芡实) - One of the recorded properties of the Gordon Enryale seed is that it can help to reduce urination frequency. You can buy the dried version and soak it for about 20 minutes then add it to your rice and cook together. It is a type of grain that can boost your daily fibre intake for healthy intestinal health too.
3. Si Shen soup (四神汤) - The above two foods are part of the four ingredients for Si Shen soup. Thus, drinking Si Shen soup can also help to reduce frequent urination at night. Do check out my previous posts on details on preparing Si Shen soup.
Another factor to consider is to reduce (or avoid) the following foods especially at night as they all have 利尿 (increased urination frequency) properties : Chinese barley, winter melon, green beans, red beans, Soy beans, corn, and most porridge (unless your porridge is 100% mixed grains, no white rice)

P.S. If this issue is bothering you a lot, then consider visiting a Chinese physician. There are a few very effective Chinese formulae that have good results in helping frequent urination.
Additional note regarding Si Shen Soup: When cooking Si Shen soup, some people like to add Chinese barley. if you have frequent urination issues, then please avoid adding Chinese barley because it can worsen the issue. The original recipe of Si Shen soup actually does not have Chinese barley.

TikTok tests ChatGPT-powered search results
TikTok is testing a new search feature that uses AI to generate results for some queries. For certain search terms, like recipes or product recommendations, TikTok will display AI-generated answers at the top of the results. Meta explores AI-assisted earphones with built-in cameras
Meta is currently exploring AI-powered earphones with built-in cameras. The project is known internally as “Camerabuds;” however, it’s uncertain if the final product will be in-ear earbuds or over-ear headphones. The cameras let the AI take in surrounding information visually, allowing it to translate foreign languages, identify objects, and more.
CEO Mark Zuckerberg has reportedly seen several possible designs but has not been satisfied with them. Outside of design, the major hurdle is fitting a camera and batteries in a tiny device like an earbud.

tl;dr I added a chicken bouillon cube to my Chana (Chickpea) masala recipe and it turned out to be the most delicious Chana masala I've had in my entire life.
So a little back story, in my eternal quest to perfect my restaurant style Indo Chinese fried rice recipe, I came across a video where a chef mentioned that restaurants actually use vegetable broth powder instead of msg to finish off the fried rice. I couldn't find powdered vegetable stock in the supermarkets here, only those bouillons which are dehydrated broth packaged into tiny cubes. I resorted to using Vegeta seasoning instead for my fried rice after some research but it didn't bring the flavor I was looking for.
Anyway, today on a whim, I decided to buy these bouillon cubes, specifically the Knorr chicken one. In the specific chana masala recipe I usually cook, onions, tomatoes, ginger and garlic are sauted along with powdered spices. I added one chicken bouillon stick at this point. After everything softens, the whole thing is blended and this mixture is cooked with boiled chana and some whole spices. I could already taste the strong umami flavor from the chicken bouillon, I balanced it by adding some coconut milk to it, finished it off with some fresh coriander leaves. I also like to pressure cook it so the chana softens more and flavours get into them.
The result was unbelievable, one of those rare moments when you can't believe that you cooked it. I understand that these cubes have natural msg in them. But I've actually tried using powdered msg in this specific recipe before but it wasn't nearly as good and flavourful. Even though it is chicken broth, there wasn't any noticeable chicken flavor or odor. I think the coconut milk was also complimenting the flavors from the bouillon really well.
Now I'm starting to wonder what other curries could make use of this little trick. I haven't tried the veggie bouillon yet though. I'm curious to know if you guys use it in your curries.
