I have long held a fascination with myths/folklore/fairy tales. And even into my 30's I still love them and enjoy researching them.
I guess I can 'blame' two sources. Disney and Xena.
I was such a Disney kid (and a bit of a Disney adult of the older stuff) and my favorite movies were always the princess ones, and I became fascinated with fairy tales as a result. Later, as a teen I started to research them online, and was interested in how many fairy tales and folktales had variations in so many different cultures. Even non-European ones.
I loved Xena as a pre-teen and would watch her before school on Oxygen, and I became OBSESSED with Greek mythology as a result and would spend hours on the computer learning about Greek mythology. Though nowadays, I'm more into Norse mythology just because I find the Norse gods 'cooler' for lack of a better word.
I feel that this hobby/interest has opened up a world of different cultures for me because I feel you can learn SO much about a country/ethnic group/culture through their stories.
Right now, I've been reading/listening to Japanese folktales lately. I've heard some of them before by being an anime fan, but it's fascinating to listen to them in the original context of stories and not just some reference in a cartoon.
Yeah, I have always been old enough to read fairy tales again because I never outgrew them.

Hi, I have to bake a full size sheet cake for someone's graduation party coming up and it would be my first time. I plan on doing 2 different flavored half sheet cakes and combining them into one with the frosting part. I'm obviously going to practice before making the actual thing because I am a bit nervous but I do have some questions.
One of the half sheets would be red velvet and the other would be just white cake.
I've been looking up information and watching videos.
- Am I supposed to cool the cake in the pan before flipping it onto the cooling rack or flip it on there immediately? How is the cooling process for half sheet cakes? Am I supposed to cool it right side up or just flipped over?
- I will probably use a box to transport it, would it be best to use a cake board alongside a box? Like frosting it on the cake board and then moving the cake board into the box?
- If I were to bake the cake in advance could I just freeze the cake and then frost when needed (probably the next day). Could I store the frosted cake or should I just frost as the last thing before I leave?
- Is there anything specific I need to do to make sure the cake cooks evenly? I will do test batches, but just because it's a big cake I want to make sure I'm cooking it properly. I will be using a metal pan and greasing + parchment paper so it will come out hopefully easier.

With the small number of ingredients, but in quantity, that we consume daily, this WOE lends itself to optimizing cost and time (prep, cooking, cleaning). Here are a few tips for beef and eggs. Please add others you have.

Eggs:

If you like them scrambled or omelette, crack and mix 12 or more eggs at a time, cover and refrigerate, and pour and cook a portion of it each day. The mix will keep well given the few days you'll be consuming them within.

Ground Beef:

Cook 3 or more pounds of ground beef at a time, let cool down for a bit in a container, then cover and refrigerate. You can microwave or pan reheat a portion of it individual meals.
When taking out a portion and since fat settles and congeals at the bottom, cut vertically like a cake slice instead of taking from just the top layer so you get and equal amount of fat in each portion.

Steak:

Cost saving: Instead of buying individually cut ribeye or NY strip steaks, get a ribeye roll or a striploin roll and cut them yourself
  1. Save a third or more in cost.
  2. You can cut them to the thickness you want
  3. You can retain more or all of the fat cap that's often removed by butchers and supermarkets.
  4. Saves the cost and time of vacuum sealing. Not needed if eating steak every day (just dry brine a couple in the fridge and individually wrap in plastic and freeze the rest).
Time saving option 1: Use the cold sear method. Demonstrated here, but in summary:
  1. Start with a tempered steak that's either dry-brined or not salted at all, but patted down to remove all surface moisture.
  2. Place in a non-stick pan at room temperature without tallow or butter.
  3. Turn on heat to medium-high.
  4. When you hear it start to sizzle, set a 2 minute timer, then flip for another 2 minutes.
  5. Reduce heat and flip every two minutes, or less, until your preferred doneness.
  6. A good sear will develop over the course of the flips without splatter or smoking.
  7. Saves time (no need to pre-heat pan and cleaning non-stick quicker than cleaning cast-iron or steel).
Time saving option 2: Use an electric "contact griddle", a heavier duty version of a panini press.
  1. Cooks steak from both top and bottom at the same time.
  2. Start at sear temp and dial it down after a couple of minutes.
  3. Doubles as a steak press creating an even sear on both sides.
  4. Reduces overall cooking time by about half.
  5. Since the steak is heated from both sides, you'll want to pull it out earlier than otherwise to avoid excess carryover cooking while resting.
  6. Breville, Chefman, Cusinart, DeLonghi, Greenpan are some companies that offer contact griddles.

For the past 4 years, I've rated every tea I've had and decided to put together a list of my top 10 teas that weren't some kind of one time release. Since I started tracking and rating my teas, I've gone through 304 teas from 31 vendors. These are my top 10:

2023 Smoke and Mirrors Wuyi Tongmu Smoked Lapsang

The one tea that made me question why I try new teas. The first time I tried this tea, I wrote that it somehow strikes a perfect balance between the smokey pine flavors that other lapsang teas have with the caramel and tangy notes of my ideal black tea. It is sweet and twisted, like liquid candy that spent the day in the smoker at my local BBQ joint. The smell alone of the dry leaves is almost overwhelming.

Asahi Honzu

Velvety smooth and sweet. In 2021, I tried a handful of matcha powders from a few sellers and this one stood out far above the rest. It has absolutely no grittiness and is perfect for both hot or iced drinks. It has those earthy, grassy, and umami flavors that linger after each sip, but there is plenty of sweetness that hits when it first touches your tongue.

Spring 2023 Jingmai Gulan

At the start of each year, I usually buy a cake or two from Farmerleaf. I enjoy how complex their sheng is and it always packs a punch. This year, they threw in a sample of this tea with my order and it was the star of the show. You get plenty of the green, young sheng flavor mixed in with some sourness and astringency like you'd have with fresh basil and mint. Those flavors linger on into that lasting sweetness that rounds out the experience. This is exactly what I want from a sheng.

Sweet Lamentations

Taiwanese Alishan that was charcoal roasted to hell and back again. This is the tea that doesn't give up. I've spent days trying to take a few grams of this tea to its limits and I haven't found an end. You can go session after session with it and it will still give you a wonderful cup of tea. I haven't managed to pull any bitterness out of it and its flavor is full on roasted. The taste is like sweet, roasted chestnuts, burned cigarette paper, and rose water. On the nose, I get cherries, charcoal, something earthy, and an almost fermented sourness. Despite all those strong flavors and smells, the tea is almost soft. This quickly became one of my staples that I always try to keep on hand.

2024 Camphire

This tea is quite the experience. A camphor tasting shou that is pine smoked in the style of lapsang souchong. I was a bit worried about how these flavors would mix, but they are absolutely stellar. The smokiness isn't overdone. You can still pick out the pine wood and the tingly potpourri flavors in between the sour, smokey flavor. It has a great spiciness that lingers after each sip.

2017 Moon Princess Sheng

Autumn harvest sheng with a good amount of astringency and bitterness. The initial sip of this is very smooth with the scent of leaves from a dry wooded forest. It has a wonderful lingering sweetness that is balanced with the bitter and astringent notes. This is the sheng I give folks to first introduce them to puerh. It is a great affordable cake.

Yuchi Wild Mountain, Lot 1153

A really rich and tasty Taiwanese black tea. This one unfortunately went out of stock in a day it took me to write this out. Hopefully it will return again at some point. This tea is my goto for making iced tea. It's a bit pricey, but the flavors are right on point. The smell is really rich, with smells of chocolate, cherries, and oats. The brewed tea is tangy and sweet, like oatmeal made from toasted oats. Cold brewing this tea with a bit of lemon is absolutely divine.

Kumari Gold

I originally got this tea thinking I would gift it to my friends and family who like tea, but aren't really tea nerds. Instead, I ended up drinking almost all of it on my own. This tea has such a nice story and the packaging is amazing, so it really is a nice gift to give someone. This is a smooth tea that tastes of caramel, apricots, and malt. While the Yuchi was my goto black tea for cold brewing, this was my goto for gongfu until I ran out.

2022 Boat Captain

A smoked sheng from white2tea. I definitely purchased this tea because of the description that is almost completely unrelated to the tea itself. The first few smoked teas I got from white2tea were a little too harsh for me and I fully expected this one to be smoked too much. To my surprise, while completely up front with the smokiness, you can still taste the sweet and sour flavors from the sheng. I really enjoyed this tea, but I think it will really improve over time. It's a nice break when I want something with tons of smokey and briny flavor, but I'm hoping to save some of it for a few years to see how it mellows out.

Chakouan #03 (H8204): 2023 Premium Imari Sencha, Sachi no Mai

I'm not usually a fan of green tea, but this one has been my favorite and I’m glad it has defied my preferences in tea. Yunomi lets you preorder their teas and this was one that I preordered last year. It is unbelievably smooth with plenty of nuttiness from its roasting. It has some nice acidity that lingers, but it is not too overbearing. Reminds me of the taste when you’ve added a splash of lemon to some spinach that you are sauteing.

My 9 year old told me this during our 1:1 time last night. Totally threw me for a loop and I'm scrambling on how to handle it.
It's not his first time saying this, he has said it a few times in the past few years. The first time he said this was right before he turned 5. He has told me this a dozen times and it's getting more frequent (about every quarter).
I've tried distraction, told him firmly that he came as a boy in this life and that's just it, and tried giving him all the perks and why it's great to be a boy/man. I've tried playing Barbies with him so he could work out the fantasy role play. He's always had a higher feminine energy, and we've discussed masculine/fem energy and that people have both sides to them.
He told me that he was a female in his former life. And he wishes he was a female in this life. I got him 3 sets of Disney princess PJs and he has worn them nightly.
He mostly has female friends when in school/playgroup; the girls flock to him cos he is so chill. He doesn't play with any boys much except his twin brother. Other boys have called him a nerd, or weird.
He came as a twin, and his brother is a total boys' boy, he's into wrestling and playing rough, games, and all the boy things. Their main conflict is that Son doesn't want to do boy things all the time. He'd rather play in his imaginary world or on his computer than rough house with his twin. He opts out of competition early. Sensitive. He cries easily and often. He is a very calm, studious, smart, creative sort. He is on the spectrum.
He's also a rule-follower, he has always followed all rules to perfection. He doesn't like breaking rules ever (it's part of his autism), so the fact that he wants to break societal norms tells me that this is coming from somewhere deeper.
I can't talk to his dad about this cos he's a useless underdeveloped human and will just make things worse as he will just tease/embarrass Son. They are not that close, even though his dad does love him, he just doesn't relate to him and they are quite different so besides a few kisses and meal time, they don't really talk much to each other (I have tried to get STBEX to spend time and teach Son things, to no avail, they rarely connect).
So it's up to me to figure out what he's trying to tell me, and help him navigate.
We are starting them back up in school, so I asked him if he wanted me to register him in school as a girl. He first quickly said yes, then changed it and said no once he thought about the teasing/bullying angle. I figured there is a way around it, esp since they are going to a new school. But I don't want to push him past his comfort level.
I told him that he can live his life as he chooses and I will always support and love him. That he can be his true self with me. And that I won't get mad or upset about it. That gave him much relief. I also explained that he needs to be happy with himself, and that is what matters. And also let him know that the rest of the world may not be as understanding, but he will find his tribe of quirky geniuses and that is all he needs.
Son and I have a very close relationship. He feels safe with me and that he can tell me anything. We talk about everything and I'm his homeschool teacher so our conversations run the gamut. He's always asking me about the body and how it works. He even understands genetics, that he is 50% both parents.
I asked him if he wanted to have surgery to become a girl i.e. cut off his boy parts and he said no. But he did say he wishes he had a more 'girly' voice and longer hair. And would like to wear girly clothes.
I don't think he has all the words to tell me what he's trying to say, and I don't know if I should be exposing him to the 🌈 or not.
I don't think it's a fad. I don't know if he's crushing on being a girl because I'm his favorite human and I'm a woman--or if it's something deeper. I am starting to believe that he may be on the rainbow spectrum (even though he doesn't have the words or idea of it yet).
When he was 6, he asked me if he could wear one of my wigs, and he was so happy, like beaming with joy that I had never seen on his face. I ended up giving him the wig and told him he can wear it anytime he wants to 'play dress up'. He has worn it a handful of times, even asked for some light makeup twice. He did wash it off before he left my room.
So the convo last night just had me reeling. I stayed up all night trying to really decipher what he's trying to tell me.
I get that I have to let him lead and I just support him along the way ..but I feel so alone in this. My family is ultra conservative Christian, and anything LGBT is "of the devil" so I don't have any support there. Same with STBExH family. I tried to broach it with my mom and she said it was Babylon and that I needed to send him to church school to snuff out the strange ideas. So that was another dead end.
Any advice you can give would be helpful. What questions should I ask him?
Has anyone ever had a similar issue? Am I making a mountain out of a molehill?
Pls advise/support if you can. I'm not sure what to do.

Eisner actually contacted the writers/producers of Friends and wanted to do an episode in Walt Disney World. They agreed but the script was rejected. Kevin S. Bright (an executive producer of the show) said that the premise was Joey gets a summer job as a giant lightbulb in the Electrical Parade. The cast goes down there to visit him but before they get there Joey has a date with the girl that plays Cinderella in the parade. They go to his place and have sex and when she realizes it’s almost midnight she has to rush out of there to get her costume back so they don’t dock her pay. Rather than leaving a glass slipper she leaves her bra and Joey keeps it as a reminder of his night he slept with a Disney Princess.

New to pizza making
Going camping in a few weeks and I was looking at pizza dough recipes to try and been using Bobby flay’s recipe. I’ve never really made pizzas before or bread in general. I do bake a lot but more cakes, cookies, etc. We will be cooking these on the grill and I just ordered a cast iron pizza pan. But these were made using a regular sheet pan.
