Look at me stew

Hi! This will be my first time canning. I have 22 pounds of tomatoes and a presto pressure canner. I want to make this spaghetti sauce recipe today. My questions are: 1. I only have 22lbs of tomatoes, can I just use this or do I need to buy 8 more pounds to get to the recommended 30lbs the recipe calls for? If I do use 22lbs do I need to use less of anything else? 2. Can I add more ground beef? Our family loves protein and meat, and I’d love to add more if I can.

2024.05.18 17:02 Singitqueen Feeding a large group and running out of ideas

I work at a center where people can come and spend time so they're not stuck at home (to keep it vague.) People (6-12 is usual to max) come to have snacks and coffee in the morning and then I make and serve lunch.
We rely on our local food bank for our supplies, which has been fruitful, but limiting. We can bring our own items to use to cook though. An example would be that we had participants make fresh salsa and we bought those ingredients.
Now, the problem is, I can only feed them spaghetti with cut up smoked sausage in it so many times before they lose their appetites. (/hj, these folks are so kind about our cooking.)
Currently, we have tons of ground beef, chicken thighs, and mild smoked sausage links. We have rice and noodles, canned veggies, all sorts of seasonings. I'm currently torn on how to use these meats, but especially the sausage links because of their distinct flavor.
Along with that, I also have tons of garlic (I am not confiting it, for one I only get 2 hours to cook and two I don't want the entire center to smell of baked garlic.), onion, tomato, and so, so many limes. (Chock this up to multiple people buying supplies for 12 people to make salsa.)
I have a wealth of things to cook, I just don't have many ideas to cook them with.
Some other ingredients we have plenty of:
pork & beans
Garbanzo beans (canned & dry)
Bread crumbs
Cream of (soup)
Celery! We got... A whole box... From the food bank. (Grateful, I like to make mire poux ? With tour mandolin and freeze it.)
Bread (we get baked goods sometimes and the bread gets frozen. I like to make croutons.)
Chicken bouillon (I rely on this for most of my broths)
I'll comment more if I think of any more but I'm running low on time.
I'm asking for short (or easy to shorten/two day prep) recipe or food ideas. I'm happy to bounce around ideas.

I am thinking of pitching for rights to a food stand on a corner parcel of abbot. The menu concept would be a “north south” fusion. I’m originally from South Carolina. Back home we had a dish called chicken bog . Basic recipe below. The choices would revolve around various combinations of the original take incorporating Buffalo flavors.
I am simply looking for input around the product viability. If it sounds awesome throw me an upvote.
Original Carolina chicken bog Boil polish kielbasa , chicken thighs, onion , pepper , garlic, salt, l . Strain proteins and add rice to liquid base re add protein cover and cook until rice is soft.
Variations - shrimp bog Substitute chicken for shrimp w significantly reduced protein cook time
Variations - buffalo chicken bog Add hot sauce and blue cheese dressing to finished bowl ( room for weck seeds, horseradish etc)
Special item avail irregularly Buffalo hot beef Ground beef Philly with banana peppers/ sweet peppers , onion & cheese choice- topped with hot sauce and blue cheese . Three hot varieties- flaccid - chub- rock hard

I am always experimenting and trying to come up with new drink recipes.
Lately, I have been drinking this concoction.
1 tablespoon (5-6 grams) cacao powder
1 tablespoon (9-10 grams) beef gelatin powder.
200mg magnesium citrate powder
400mg potassium citrate powder
Big dashes of real, organic cinnamon, ginger and clove powders
All of this stirred into a mug that has hot brewed green tea + hibiscus made with loose leaf instead of bags.
I would add vitamin C powder but that is degraded by heat... I use gelatin instead of collagen but am going to try marine collagen powder after I use my gelatin powder up.
Anything else worth adding? I find the cacao pretty much covers up the flavor of anything else and the drink tastes really pleasant.

My shadowy menace's meals consist of Royal Canin's Gastrointestinal kibble, soaked in hot water for 20 minutes, mixed together with specially prepared hamburger: The hamburger is boiled and then left to cool in the refrigerator inside its pot of water overnight. The floating excess fat is scooped off of the top and the hamburger is drained. My cat has a sensitive stomach, which is what has started this whole process. 🫠 He no longer has horrible diarrhea, and his overall health has greatly improved.

I'm making some Taiwanese beef noodle soup for my dad (who is Taiwanese) but using pork (because he doesn't eat beef lol). Not quite sure what cut of pork to use, both pork butt and pork belly seem pretty widely utilized in instant pot recipes. I have done pork belly in the instant pot before, so I know I can super tendemelt in your mouth if I want to. Having never cooked pork butt before, I'm curious how it compares texture-wise to pork belly when cooked in an instant pot.
For reference, Taiwanese beef noodle soup typically calls for beef shank, which I guess is technically closer to pork butt, but I'm not sure it would work as a direct replacement because they're marbles differently. I'm planning to braise the pork in the soup at high pressure for as long as it takes to become tender. Would appreciate any tips/recommendations from anyone who has experience with these cuts.
