I made: - RecipeTin eats Vanilla cupcakes with chocolate meringue buttercream - salted caramel and white chocolate cupcakes - cinammon scrolls (pastry from scratch) - a Beyblade Stadium cake (decoration isn't my forte) but the marble cake was amazing
A massive kitchen undertaking and I feel like the house will be sticky for a couple of days, but he had a blast.

I am going sugar free, starting today. Iā€™m writing this is the morning to tell you my starting pints and cutting habits, and every day I will come back and write any changes, improvements or struggles. I eat a lot of sugar in the day. I usually start the day with a big bowl of chocolate cereal and a kinder bueno, for lunch I eat a sausage wrap with lettuce, around 5 Jaffa cakes and some cucumber, then for a snack I eat either another bueno with 5 Jaffa cakes or 2 ice cream cones, for dinner I eat a more balanced meal which usually has protein and stuff (changes every day but always healthy) and then I eat more Jaffa cakes or sugary food. I know, itā€™s terrible. And thatā€™s why I want to change. I have always got extremely low energy and Iā€™m always super tired. Iā€™m also getting a bit bloated, and I have lots of acne everywhere. Here we go. Starting weight: 58.0kg

Followed the recipe to a T and its fantastic!
(I lied) i used chocolate chips and chunks instead of simply chips and it really upped the chocolate factor! Super happy with the results!
This is more accurately a brown butter chocolate chip oatmeal cookie but its honestly very well done! The cooking time is perfect and 6 per sheet is also perfect! Iā€™ll happily put this in my cookie rotation!

It's just fried bread with sugar on top. I might consider unglazed over a glazed donut but still mid. Not worth the sugar intake at all. I don't really understand donut culture. It's just a sour bread and chocolate sauce. And most of a donuts personality lies in the dripped on topping. Might as well but a bottle of chocolate topping instead.
Not to hard too make and not at all a mind-blowing treat for my tastebuds.
Something like pies, baklava, and tea cakes are where the real fun begins. So much variety and not too heavy on the stomach. At least I can have half a piece of pie and pop it into a Tupperware if I'm full. You have to commit to a full donut other wise it gets hard and uncomfortable to eat later. Pies stay MOIST.

This comes from a 340-year-old book that Iā€™ve been reading. It may seem simple because the text says half-quarter which just sounds like an eighth, yeah Iā€™d be inclined to assume that as well. Unfortunately I have gotten about 100 pages into it and it uses the word eighth for a measurementā€¦ much to my dismay. "150 Nonpareil (6pt) to make 1 foot gives 12.5 Nonpareil for an inch, and consequently 25 scabbords for an inch; so by proportion, 15 scabbords and 1/3 part of a scabbords, gives 5/8 part of an inch." so it might not and donā€™t even get me started on trying to figure out the foot Which I also kind of need to figure that out to figure this out so is greatly appreciated. The text comes from ā€œMoxonā€™s Mechanick Exercisesā€ which has a table for how many pieces of the of a certain point size fit in a ā€œfootā€ problem is that the foot is 12.5 modern inches plus or minus 5/16ā€ please Iā€™m at wits end with this godforsaken measurement. itā€™s the same issue as trying to make something from an old recipe. We donā€™t know the size of the cups and you donā€™t know what kind of eggs they were using so when you try to re-create Napoleonā€™s cake, it doesnā€™t work. Got a love that standardization, THANK YOU NIST.

If you haven't been keeping track, some of our users keep a half of a kilo of Salo on hand for emergencies, so we were thinking we might share yet another dish that requires this translucent gold - Potaptsi - bread pieces fried in pork fat (can be substituted with butter). There are many variations but most of them belong to two versions - the most common savory version, and the less common sweet version that is just like French toast, just traditionally served with another culinary staple - honey.
This dish often accompanies Horilka as a chaser, or is served as a snack, an hors d'oeuvre or appetizer alongside soup or salad - in fact, there is a version that is essentially just really intense croutons.
Simplicity itself.
As a simple open-faced sandwich type deal, you may have guessed that Potaptsi are very easy to prepare; they require very little time and only a few ingredients. Perhaps it was for this reason that they were so very popular as a snack of Kozaks and Chumaks that even found their way to inclusion in Kotliarevskyi's Aeneida, thought to be the first work of literature published in colloquial Ukrainian. In that action packed satire of the classical Latin work, a king is faced with war. He longs for simpler times when he could just sit around and eat Potaptsi.

How to Make Potaptsi in Like Seven or Eight Minutes

Got a few minutes?
Ingredients
  • Pork belly fat / Salo (can be substituted with butter of course, or oil) - 100-200 grams (depending on your love for Salo)
  • Bread - rye; black; or any other bread - 500 grams
    • Similar to French toast, it does not have to be fresh!
  • Garlic - 1-3 cloves (depending on your garlic tolerance)
  • Green onion, dill, parsley, to garnish (optional)
  • Salt, to taste.
Recipe
  1. Mince the garlic and set aside.
  2. Cut the pork belly or Salo into slices (not cubes, so if you are frequent in making Shkvarky you need to retrain your muscle memory). Some people like giant slices, some people like thin slices. It's up to you!
  3. Fry the pork, but don't overdo it - only lightly fried: a golden crust should appear, but be careful not to dry it out. It needs to be fried from both sides. Set aside the fried slices.
  4. Next, slice the bread and fry it in the fat rendered from the pork fat. Also from both sides. Place the bread on a plate, spread the garlic in a you-appropriate amount, and then put the pieces of the fried pork on top. At this time you can add a pinch of salt on each potapets and garnish it with green onions or dill.
  5. There is another common way to make Potaptsi by cutting the bread itself into cubes and frying them in pork fat to make a lovely addition to soups, like croutons. And also, today, often people substitute the pork with tomatoes and/or melted cheese!

So I'm trying to narrow down what type of cake I want for my birthday, and honestly, I can't pick.
Here are some ideas I have:
  1. Lemon cake. Passion fruit & swiss cream filling. Icing ??? I don't know, I got stuck here.
  2. Vanilla cake. Key lime and coconut filling. Coconut buttercream.
  3. Matcha cake. vanilla cream filling. white chocolate ganache for icing. dusting of some of the matcha powder on top.
  4. Matcha cake. hazelnut mousse filling. Swiss meringue buttercream frosting. dusting of the powder on top again.
  5. Almond Cake. Orange & Lemon Curd filling. Vanilla buttercream frosting.
I am trying to stay away from anything strawberry since I've done that two years in a row. I had a strawberry, pistachio, and bavarian cream cake last year that was really good, and I don't want to keep doing strawberries (even though I LOVE them).
Out of these flavors, what would you choose? I know its my birthday so it should be what I want but i'm indecisive.

2024.05.19 04:13 quinn_is_fed_up Has anyone else had this problem when baking GF banana bread?

This is the third time Iā€™ve made this choc chip banana bread (gf each time) and something like this has happened every time.
First time (no picture) the chocolate chips sank to the bottom, but the cakey part itself was really fluffy. To do this, the batter was a bit more like cake batter. Second time (also no pic) I made it a much thicker batter, and the chocolate chips didnā€™t sink, but it didnā€™t rise as much so was more dense. Third time (pictured above) I tried doing an in between of batter thickness, and the choc chips sunk in a weird U shape around the outside.
Next time iā€™m going to try a cakey batter, but flour and layer the choc chips as I put the batter in the tin, if that makes sense. If anyone else has any tips, Iā€™d love them
