How Much Should I Cook?

2024.05.21 22:06 therealwingdinger How Much Should I Cook?

Hi everybody, I need to fulfill an order of 225#'s of pulled pork. How many pounds of boneless butts do I need to cook to achieve this. I want to cook boneless to take the guesswork out of removing the bone weight. I know some fat will render, but I'll also be adding back some sauce. TIA!!

2024.05.19 21:53 AwakeningStar1968 Instant Pot Pork chops.... caveat...

So I got some pork chops on sale. Boneless. Followed a decent recipe, but it called for cream of mushroom soup. I made a large batch and put in two cans of campbell soup.....
along with worcestershire sauce, beef broth , onions and garlic etc... and I had browned the chops before hand.
All went ok.. but I have to say.. the flavor is off... I think it was the cream of mushroom soup. They were still good but I am TRYING to use up things in my pantry, ya know? Use up what you have.. so I thought this would be a good thing.. but yuck.
Is there anything I can do to make it taste better? I also did put onion powder in it.. it has to be the soup.
I realise that a lot of people avoid cream of .. whatever.. and I get it.. but I had these in my pantry and wanted to use them up ....
Thoughts> I did put a bit of Ranch seasoning in it and thought about some Pepporachini's to make a Mississippi pork roast flavor.. (which is soo good).

2024.05.18 21:02 __main__py How long should I expect it to take to smoke a 13 pound boneless pork shoulder?

I've never smoked something this large before, and I'm trying to get an estimate as to how long it will take. After reading older posts on here, plus random blogs, plus this article I am guessing somewhere in the 18 hour range if I cook it at 225. Does that sound reasonable to other people?

2024.05.18 15:13 Creative-Aerie71 Pork loin

Is a pork loin to lean to smoke? My father in law asked me to smoke some pork for pulled pork for Memorial Day. Told him yeah no problem, figured I'd do it Saturday, pull it and put it in a disposable tray with some juices so it can be reheated on the grill Sunday, sauce on the side because not many who will be there like the levels of spice he does. Today he shows up with a 10ish lb boneless pork loin. I'm thinking of just tossing it in the freezer whole or cutting it into chops for us and getting a bone in shoulder to smoke instead. Thoughts?

2024.05.16 03:29 Strange_Delay_550 Air Fryer Boneless Pork Chops

This recipe is a quick and easy way to cook juicy and flavorful boneless pork chops in your air fryer.
Ingredients:
Instructions:
  1. Preheat your air fryer to 400°F (204°C) for 5 minutes. This ensures the air fryer is properly heated for even cooking.
  2. Pat the pork chops dry with paper towels. Excess moisture can prevent the pork chops from crisping up in the air fryer.
  3. Season the pork chops. In a small bowl, combine olive oil, salt, pepper, garlic powder, and paprika (if using). Rub the mixture evenly onto both sides of the pork chops. You can also use other seasonings you like here.
  4. Place the pork chops in a single layer in the air fryer basket. Don't overcrowd the basket, as this can prevent proper air circulation and lead to uneven cooking.
  5. Cook for 12-14 minutes, flipping halfway through. The cooking time may vary depending on the thickness of your pork chops. Thin pork chops may cook faster, while thicker ones may require a few extra minutes.
  6. Check for doneness with an instant-read thermometer. The internal temperature of the pork chops should reach 145°F (63°C) for safe consumption.
  7. Let the pork chops rest for a few minutes before serving. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful pork chop.
Tips:
Enjoy your delicious air-fried boneless pork chops!

Air Fryer Boneless Pork Chops
This recipe is a quick and easy way to cook juicy and flavorful boneless pork chops in your air fryer.
Ingredients:
  • 2 boneless pork chops (about 1-inch thick)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika (optional)
  • Additional seasonings of your choice (e.g., Italian seasoning, Cajun seasoning)
Instructions:

  2. Pat the pork chops dry with paper towels. Excess moisture can prevent the pork chops from crisping up in the air fryer.

Tips:
  • For extra crispy pork chops, you can dredge them in a mixture of beaten egg and panko breadcrumbs before air frying.
  • You can also marinate the pork chops for 30 minutes to an hour before cooking for added flavor.
  • If your air fryer doesn't have a preheat setting, simply run it for 5 minutes at 400°F before adding the pork chops.
  • Be sure to not overcrowd the air fryer basket. Cook the pork chops in batches if necessary.

2024.05.15 20:29 Walkbeforerun Talk me out of having pork loin as my main protein source for my staffy

My 9 month old staffy has been on salmon and rice kibble up to this point- with an allergy to chicken , and boneless pork loin at 1.80 a pound, is this not the best option if I want to start making her homemade food? I trimmed up 4 pounds of loin and am sous vide at 135 degrees ATM (is this considered gently cooked?) and am going to add a bit in with kibble to see how she reacts… with the plan of eventually either doing 50/50 homemade and kibble or full pork and potato balanced with supplements . Has anyone had success feeding there dog pork and if anyone has any tips or advice it would be well appreciated! Also , what temp would you think is best to cook pork at? I have a sous vide so accuracy shouldn’t be to big of a problem.. like I said this first batch I’m doing at 135, but I keep seeing people say ‘gently cook’ without giving real temps.. thanks y’all!

2024.05.15 06:02 ejrole8 Bone-in Skin-on Chicken thighs are great on a budget for more than just meat!

Making this post because I had a less-than resouceful friend buy herself the boneless, skinless chicken thighs for way more than she should’ve. These tips also work for different cuts of chicken with skin and bones (though with drumsticks I usually just cook them in soup as-is).
Yes, the ones with skin on and bones included are cheaper by weight than the alternative, but if you’ve been just throwing the skin and bones away, stop! I have some budget friendly tips for you.
1) Collect the skin and bones and put them in separate gallon-sized freezer bags. You will be adding to them as you get more chicken. For the skin, keep adding chicken skins and fat to them. For the bag with the bones, you will also want to add veggie scraps such as the skins of onions, garlic, carrots, ginger, and celery. There are others you can add, but if you aren’t familiar with cooking times and qualities of vegetables yet, I’d try to just stick with those. Again, it’s better to use organic veggies or ones sourced from someone you know uses less pesticides when growing as you’re using the skins for this.
2) when you have a good amount of skins(like 3/4lbs or more), make shmaltz (rendered chicken fat). It’s basically the Jewish alternative to lard and tallow. It’s healthier than most cooking oils aside from avocado, olive, and coconut. It has a high smoke point so you can use it to fry, roast, bake, or whatever it is you do with your cooking oils. Because it is animal based, the chemical structure is easier to digest. You might want to steer clear if you have heart problems, though. I used a recipe from Serious Eats which goes like this:
3) When you eventually collect enough bones and scraps to fill the ziplock bag, you can make bone broth (or stock, for the anti-hippies). I sometimes add pork bones if I get any with my meat. I make mine in an instant pot so I’m going to use that recipe.
Bone broth(stock) is really good for your bones and adds a really nice flavor to whatever you use it for. Consider using it instead of store-bought stock or Better than Bouillon. You can use it for a healthy egg-drop soup. Supposedly some people use it in smoothies, but personally that’s not for me!
I like to get the crunchier packs of chicken when I can afford to (think free-range, organic, locally sourced), and if you have the means to, you should too since you can utilize all parts of the cut.

Picked up a pair of Costco boneless pork butts for a party this weekend.
I have traditionally done a 6-8 hour cook wrapping half way through but want to try an unwrapped method.
Would 12 hours around 200 dry them out too much without the bone?
Any advice is welcome!
