This seems petty compared to some of the other posts in here, but every now and then it drives me CRAZY!
I seem to be the only person I know who understands what “organized” means. It is not a matter of the area looking all nice and fancy like an interior designer has been here. Only interior designers care about “making it pop” and “having a wow factor.” I certainly don’t.
It’s not about having everything neatly lined up in evenly spaced rows like new recruits standing at attention. That doesn’t do any good if you still can’t find the can of mushroom soup amid the cans of green beans and tomato sauce and sweet potatoes and carrots and everything else. Those new recruits are also lined up in alphabetical order by last name, or inspection would still be a fustercluck.
It’s not about impressing anyone with my housekeeping skills, and it’s only us living here, and nobody else ever sees inside of there, so who cares what it looks like? I agree. Who cares about somebody else’s opinion of my pantry or my bathroom cabinet?
It’s about me being able to find what I need right away without having to spend an hour looking for it, and then having to move twenty other unrelated objects to get to it. It’s about not having sixteen jugs of cooking oil because we didn’t see it in the cluttered pantry, thought we were out, and bought more.
My husband thinks as long as something isn’t left out in plain sight, if it’s in a drawer or behind a closet or cabinet door, it’s put away. Doesn’t matter on what shelf or even which drawer or cabinet. I can spend an entire day organizing a cabinet or closet, and he thinks I am doing it ONLY to get rid of expired things and make space. So he comes in with new purchases and just puts it all anywhere there’s room, regardless of what it is, and I’m right back where I started. He has a limited concept of food goes in the kitchen, hygiene supplies go in the bathroom, and clothes go in the bedroom, but he is absolutely incapable of categorizing any deeper than that.
If we were to go to the grocery store, and the merchandise is all picked up off the floor, but the chicken and the hamburger and the hotdogs and the cheese are all lumped in with each other, we’d never get out of there because we’d spend all day looking for what we came for. Why can’t he understand that? Can anyone else?

It's night now and I have to go to bed, but it will be warming in the slow cooker for a few hours tomorrow before lunch... is there anything I can easily add to it to give it a bit more flavour? I'll put the recipe I used below (I know now I used too many potatoes!)
- 1.8kg potatoes
- 6 leeks
- 2 brown onions
- 6 cloves garlic
- 300g bacon
- about 4tbs butter (for frying off onions, leeks and bacon)

Nausea was bad but not HG.
I also had a question for experienced moms: did y’all really drink regular milkshakes and not develop GD? It sounded ridiculous at first but on extra starving days I see the appeal.

Hi vegetable hater here but trying not to be, I hate vegetables. I understand their health benefits so I force myself to eat them, however I just hate most of them. Broccoli, cabbage, green beans, cauliflower, carrots, brussels sprouts are all very musty tasting and sour. I do not boil or steam them to mush either. My parents did that and I thought they were just all supposed to taste like farts for years. In my late teens i was enlightened to how to cook them so they don't become gross mush. However, they still taste quite sour and sometimes musty, even if I stir fry or bake them till they have just a slight bite and are majority cooked (like I was told I am supposed to). I season them with Asian sauces but even that won't help entirely. I just feel like I am doing something wrong and can't see what. I read it could be from extra taste buds and while science is amazing for explaining why I still don't know how to fix it so my cooking doesn't taste sour or musty. It just makes me hate those vegetables so much! But they are very healthy and cheap so i want to find recipes or ways to cook them and not have them be sour and musty. Then there is pumpkin and sweet potatoes. I do not have an allergy they just make me feel ill. I can eat them as muffins or bread but other than that they make me feel sick from how sweet they are. I cant even put them in my mouth without feeling nausauos so i avoid them a lot. I have tried over the years new recipes but it has remained the same so far. The texture is not great either. I have tried sweet potato fries and gnocchi and the gummy texture and sweet flavour is just gross and sickening to me. Sonce pumpkin and sweet potato are so nutrient dense i want to try some more recipes and see if any are enjoyable for me. I am trying to improve my eating habits and enjoy eating more vegetables that aren't extremely bland like zucchini or aromatics. I am still eating all the sour vegetabkes fyi , I just hate them, so it would be nice to find some recioes or way to eat them and actually like it. If anyone has suggestions I'd love to hear them :) For health reasons I cannot have a lot of complex carbohydrates so I do not want to eat a lot of breadlike products which is the only way i have found i can stomach sweet potato and pumpkin without feeling nauseous. If anyone has any suggestions for recipes for sweet potato and pumpkin that don't make it taste overly sweet or gummy I would love some of those. Thanks all for your suggestions.

I feel like if I'm going to ask anywhere, it'd have to be here, right?
Winter's rolling up where I live at, and I'm working on the ULTIMATE, PERFECT chicken noodle soup. I live in a country where we use mainly natural ingredients, so things like storebought chicken broth are not a thing, but I do love me some enhancers such as bullion.
My recipe is as follows:
Mirrepoix: goes in first, minimal amount of deglazing, I'm not after that flavour profile after all. Everything chunky, I like it that way. This goes over olive oil, for that golden shine. Chicken Breasts: 2, with the bone connecting them, same with sinew. goes in before the water over the veg to get it soaked in those flavours. Later removed and shredded with a hand blender (love this since I found out its a thing lol) Potatoes: That starch is soooooooo good. Leek: Alongisde the mirrepoix, a little later, for the sake of not burning it. Garlic: Lots of it. Herbs: Bayleaf, rosemary, thyme. Spices: Salt and pepper, some MSG if needed. Bullion: 1 chicken 1 veg, for that extra kick. Cheese: The meltiness is just sooooo good.
I cook everything down for about 2 hours to get it to that magical spot. Then small portion ladeled into a smaller pot to cook the noodles in the broth (I make a big pot of stock and then portion out every time I'm going to eat, I fricking love soup).
That's my recipe, needless to say it works like an absolute charm, a 9/10 in my book, but I'm after that extra point!
My current thoughts are:
Mushrooms?: Maybe dried pine mushrooms, rehydrated in the stock? my worry there is flavour profiling. Also thought about button mushrooms, but I can't imagine the texture would be good enough?
Pancetta: Some smoked pancetta bits, rendered in the olive oil, to boost the WHOLE thing up, and leave me with salty little bombs. This is currently my biggest idea.
Soy Sauce?: No idea tbh, thinking of soy sauce bases in ramen maybe?
Any ideas appreciated!

Today’s Bagels
Makes (8) 156g Bagels. 58% Hydration -
For Sunday morning bagels
  1. On Friday at 10am, Make pre-ferment, Mix:
a. 150g High Gluten Flour (>14%) I use Sir Lancelot
b. 150g Water
c. Pinch (1/16 tsp) dry yeast (SAF)
  1. Let Rest approx 10-12 hours at room temp until risen
  2. Around 8pm mix final dough
a. 631g High Gluten Flour
b. 302g Water
c. 3g yeast
d. 18.5g salt
e. 24g Barley Malt Syrup
f. 2g diastatic malt powder
g. All of pre-ferment
  1. Knead in kitchen aid until well developed and smooth, about 10 mins on speed 3.
  2. Let rest, covered for 10-15 mins to relax the gluten.
  3. Do not use any additional flour for dusting or handling
  4. Divide and shape into 8x 156g bagels using the leftover as a float test.
a. Roll quickly using one hand in the middle to about an 8” rope with fattened ends (dog bone shaped) then wrap over your hand with both thick ends in your palm and sealby rolling hard on the counter. The dough will retract and make a thick bagel with small hole.
  1. Place onto a floured silpat on on a baking sheet
  2. Rest, covered on counter for 15-30 mins until a float test ball barely floats in a bowl of water (70deg room temp, covered)
  3. Refrigerate, COVERED until Sunday morning (2 nights)
  4. Sunday morning: Remove bagels from fridge and move bagels with silpat onto counter
  5. Rest the bagels uncovered while the oven preheats and water boils, About 25 mins.
  6. While the bagels are resting, Adjust oven to middle/Top Rack and Preheat oven to 500 Convection
  7. Boil 3000g water
  8. Soak Bagel Boards
  9. Add a heaping soup spoonful (about ¼ cup) of barley malt syrup or honey to the boil
a. Watch for boil-overs
  1. Boil the bagels for about 30-45 seconds face down, pressing the bottoms down occasionally with a spider. They should start to look puffy and defined
  2. Drain right-side up on cooling rack
  3. Immediately add toppings to tops while still wet – do not delay at all.
  4. Place bagels upside down on soaked bagel boards
  5. Add toppings to bottoms
  6. Bake the upside-down bagels on the bagel boards for 5 minutes.
  7. Flip onto room temp baking sheet, lower temp to 450 and continue to cook until light golden, 16-18 mins or until golden brown, rotating halfway through.

2024.05.16 07:12 TechnomancerTab Got really bad insomnia from Carnivore diet. Stayed up all night learning about Potatos. Starting a plant based diet!

I've had a bunch of mental health issues and weight issues for most of my life. Tried all sorts of diets and nothing really helped.
Decided to try Carnivore cause I kept seeing it on social media. Sleep has been really weird. I'll be up all night, when I finally go to sleep, I sleep for like 5 hours and feel recharged, but it doesn't feel like I slept. Like the day doesn't reset. Really bizarre feeling.
I went down a rabbit hole and realized our ancestors ate lots of starches, fruits, veggies and carnivore makes no sense. Been watching a lot of videos by Dr. McDougall, author of "The Starch Solution", Potato Champion.
Ended the carnivore diet and ate a bunch of potatos and baked beans. Slept 12 straight hours and mood has been improving the last few days.
Going to try out plant based diet for a few weeks. I'll be eating primarily potatos, baked beans and whatever fruits/veggies I'm craving.
I'm excited!
EDIT: Thank you for all the useful info everybody. I feel very welcomed and really love the energy in this subreddit. I'm excited for this journey.

So I start this diet tomorrow. I am going full Penn. No oil, salt or butter. I am so excited to try this diet. I am going to bake and mash and even slice some thin and raw for a texture change and really go all in. I am currently 252 and 5’11”My goal is 200 or even 180. I am so grateful for you Spuddies. Your stories inspire me and I can’t wait to read more. I am fully ready to embrace the suck and fight cravings with more potatoes. I am really wanting a life changing experience and I know it will take months to achieve that.

My first homemade wings! (aka be nice I’m fragile and didn’t get a good picture before eating)
On the left are Cajun wings, then on the right all mangled up are garlic Parmesan. I just baked the wings (no other option) in simple seasonings such as garlic powder, onion powder, paprika, and s&p (also baking powder for crisp but I don’t think I put enough on). Then I just put some melted butter in 2 ziploc bags, and put garlic and parm in one and Cajun stuff in the other. I served it with cubed potatoes, cooked in a cast iron skillet with sun-dried tomato oil and various seasonings. I didn’t follow any recipes for the bagged mixtures. They taste better than they look, especially the mangled up garlic Parmesan wings lol, but I’m still kind of disappointed with the result even though my boyfriend allegedly likes them. I was really excited to make them though and I hope I have a grill soon in the future where I can make wings better :)!
