My dad recently opened a bread bakery, a lot of people out of state want him to ship bread, but due to bread going stale in a day and fungus in 3 days. He is not able to ship bread. Basically he is not able to expand business.
I have looked online to see if we could hire a food scientist/consultant with bread baking experience and so far we do not have any luck.
Also to add we forge our bread with hand. besides mixing and dividing dough every other process is manually done.
we are based in Chicago.

Former Panera employee here. I worked there about 15 years ago and this was and remains my favorite sandwich of all time. I was super sad when they got rid of it.
So over the years as Iā€™ve gotten better at cooking I realized I had a pretty good idea of how you could make all of the components of the sandwich. I gave it a shot I am absolutely addicted. Weā€™ve made these at least twice a week for months now.
There are already a few copycat recipes out there but none of them get it quite right in my opinion which is why I wanted to make this post.
There are 2 key ingredients that no one gets right:
Ancho chipotle spread (not chipotle mayo)
Citrus pepper chicken which went away at the same time as the sandwich.
While my recipe does include mayo in the spread, itā€™s more than 50% pepper and includes ground ancho chilis which are critical for the flavor.
The citrus pepper chicken is just chicken with blackened seasoning then soaked in a triple citrus juice.
The original sandwich came on French bread, but I always used the Asiago focaccia so I recommend making that fresh for these. The original also came with tomatoes which I donā€™t like so theyā€™re not included in the recipe.
If anyone actually sees this and tries it Iā€™d love to hear about your results!
I wrote the recipe for myself so hopefully itā€™s not too hard to read.

After lots of trial and error, I finally have a recipe for whole wheat sandwich bread that my family loves. Just one issue - my loaves keep coming apart in the center. Any thoughts on how to prevent this?
To shape my loaves, I gently form a rectangle with my dough, roll it up, pinch the seam and ends, and place it seam down in my 9x5 loaf pan. Maybe it would be helpful to brush the rectangle with water or egg whites before rolling it up?
I was thinking it was an issue with under hydration of the dough, but my dough is pretty darn moist. Any wetter and it would be too sticky to knead by hand. The recipe is roughly 3.75 cups flour and 1.75 cups liquid (including water, milk, egg, and honey).

Hello. Iā€™ve been using Claire Saffitzā€˜s NYT sourdough recipe (link: https://cooking.nytimes.com/guides/59-how-to-make-sourdough-bread) and prior to my last few loaves Iā€™ve had loaves with a nice crumb and ear that Iā€™ve been happy with (first loaf example: https://www.reddit.com/Sourdough/s/C4ZgoJaAqO). The last few loaves Iā€™ve made have had no ear, the rise doesnā€™t seem to be as good/even, and the crumb doesnā€™t seem as uniform.
Previously I was going a full seven hours for bulk fermentation. It never doubled but it seemed to have a whipped cream like texture vs. cream, so I just stopped there as that was the end length given in the recipe.
My last few loaves Iā€™ve only gone like four hours, but it seemed to have a similar whipped cream like texture and a decent rise so I was afraid of over proofing as my starter seems a lot stronger than when I baked my first loaf. The only other thing Iā€™ve changed is adding a pizza stone under the DO to avoid burning (Iā€™ve had issues) and sometimes adding a layer of tinfoil or a tinfoil trivet.
These loaves are from the exact same batch and baked right after one another. Both were cut two hours+ after baking. Iā€™ve tried to figure this out online and it seems underproofed to me but Iā€™m not sure. Looking for other opinions.

Just for y'all here on ftb though, a secret history: A long time ago now, I announced on this sub my intention to do a modpack with the aether, the betweenlands, and galacticraft. Not all that exciting an idea, but I kept working on it. After 5 years of work, I had a cracked-out insane modpack where you'd visit 30 different dimensions, collecting resources from each and using them to build up your magitech empire. It had massive tech mods where every recipe had been tweaked to use minerals from different dimensions, it had a whole storyline, separate dimensions for a number of sets of vanilla biomes, a fully custom dimension mod, a part I loved at the start where you spawned in a desert world and had to create water by fusing hydrogen and oxygen atoms in a machine... I can go on forever. It was massive and I was excited about it. Then my hard drive broke. Everyone has to learn someday to make backups. What I had moved to a thumb drive was some other smaller modpack ideas that I wasn't very invested in and didn't need on my computer. Among those was a little pack themed around cooking. Wanting something I was more likely to complete than if I started over with my enormous project, I decided to do a fun little project where I'd do a lot less work and be able to publish a tiny modpack in a few weeks. This pack has 340 quests and over 1000 lines of custom scripts. I failed. Nothing can ever be simple. From the central idea of configuring Spice of Life: Carrot Edition to start you at one heart and continue well beyond its normal cap, most of the modpack basically just fell into place around that idea. I tried out Minestrappolation in the pack early, and found that it worked well as a core guiding level of balance for the game, so I tried not to step on its toes too much. For instance, its relatively expensive methods of ore doubling and accessing hang gliders have been left as viable options, I didn't let other mods completely superannuate it. I originally intended the quest book as just a "here's things that exist" list, but ended up expanding it to explain a lot more of the pack and make it approachable for players who are newer to modded Minecraft, and new to some of the mods I used, which I suspect is most people. I'd seen food mods in a ton of packs, but never felt interested in them, because Minecraft's food mechanics are more chore than content, and I wanted to try to build a pack where engaging with these mods was engaging. I think I did it! My brother tells me another pack released while I was working on this that went for this same gimmick, but he didn't tell me what it's called so I can't find it and he described it as "way worse" than mine, so, you know, I may be slow, but I stay winning.
Anyway, I made something, I think it's neat, and I'd appreciate it if you tried it out! It'll be a bit different from what you're used to, I imagine, but I think that both experienced and inexperienced players will be able to enjoy this one.

Okay, I posted my sad sandwich loaves a few days ago. Needless to say they were awful! With some help, and kind feedback from you lovely people I am MUCH happier with my second loaf! Iā€™ll post a photo story.
1st photo the absolute failure 2nd my redo today 3rd crumb on my redo 4th crumb on the loaf my friend helped me bake, when she tried to teach me.
So, hereā€™s what I learned. Another friendā€™s father is a sourdough wizard. So, I learned about crumb from her. I see a vast difference between my redo loaf, and the friend loaf. I think my friendā€™s is dense with minimal air pockets is because she puts it into a stand mixer to knead, opposed to folding. I could be wrong. I am new after all.

Not sure what this film is exactly, it doesn't smell bad or seem to have any negative effect, but the top of my starter is never pinholey.

I followed the Tartine Bread recipe, equal mix of wheat bread flour and whole rye flour. Feeding at 1:2:2 ratio. The first week I didn't really concern myself with the temperature so much, so it was reasonably cold, around 22Ā°C (72Ā°F). It had a nail polish smell for a couple of days before the morning feeding. The film was always there, or at least I didn't pay enough attention to when it appeared, but it definitely was there since it first rose to double it's size after a feeding. Currently, I found a way to keep the starter at around 27Ā°C (81Ā°F) with a seedling heating mat and a insulated bubble tea bag, and the smell became much more mild, but the film still remains.

ingredients - water, starter made with some multi-grain flour(can't remember brand) and strong organic white tesco bread flour.
This is the second ever loaf I've ever made...(first was in school approximately 30years ago, and was shaped like a hedgehog)
I dont know what I did wrong... but everything was fudged...
Pretty sure it looks this... ewww, because I over fermented it...
The 'dough' was really sticky(even stuck to baking paper)
Never managed to develop the classic domed shape of pre-baked sourdough dough.
Oh and the taste... its was mingin!
Followed a recipe from a website exactly how it said, yet I ended up with this monstrosity lol
Edit - kitchen temp was floating around 22 and 26 for bulk ferment and about 22 - 24 for proofing, before cooking.

New homeowner and excited to start grilling and smoking!
Here's where I'm at. I'd like to have a kettle and a dedicated off-set smoker.
For the kettle, actually I was thinking a kettle-kamado in the Weber Summit Kamado with a SnS. - Primary use is grilling - Kamado charcoal fuel efficiency (eventually will make up cost difference vs regular kettle) - Easy/forgiving temp control - Relatively set and forget 2nd smoker option if I want to mix up the proteins and the main smoker is in use.
Dedicated offset smoker is TBD. I'd like a reasonable amount of space to fit a lot of protein plus I believe the space and airflow leads to better cooks generally. I'm not there yet.
I'd like to make pizza/bread as well, including Neapolitan. Maybe the Summit can do just okay here but I'm generally a believer of having gear do one thing and do it damn well and be simple to use. Any experience from Summit users here regarding pizza/bread? Any suggestions or advice for outdoor ovens I could look at?

2024.05.16 21:11 intzaki After 2 Years of Extremely Serious Training. Reached Serious Plateaus as a Natty. Help?

Long story short, I am 29 years old. I have been involved in sports all my life, from a young age until I was 21-22, when I dropped out after five years of American football and became a couch potato. Seriously, I didnā€™t even walk until I turned 27. At that point, I had a serious talk with myself and decided to get back to the gym for real. I looked like crap, felt like crap, and lived like crap, so I decided to finally change it. Being a sports person, I knew that progress was going to be extremely slow, but I was determined to do it right.
When I went back to the gym, I felt extremely weak and could barely lift anything. I was doing bench presses with just the bar and two 5 kg weights, and I couldn't handle it. Four months in, with 4-5 workouts per week and a full-body split, I saw progress. I dedicated myself to learning from both science-based and non-science-based lifting. I studied a lot and came to understand my body and how to build muscle and strength, as I cared about both.
After the first four months, I made a personal oath to do five workouts per week, not drink alcohol, and stop smoking for a year. I did it, and let me tell you, progress was booming. I kept educating myself and learning more and more. After two years of working out, I grew bigger and extremely strong.
Now, I am here to ask the community of intermediate to advanced lifters for advice, as I have seriously hit plateaus on almost every exercise and lost about 15% of my strength on most lifts. My biggest strength is my lateral raise, doing 56 kg x 10 reps (28 kg per dumbbell). My deadlift max is 200 kg (with relatively poor form, but it was my goal since I started). My bench press max is around 140 kg (with a machine, not a barbell, as I simply can't stand it). My leg press max is around 280 kg x 8 reps.
I evolved my workout split to fit my personal goals and understanding of my body. I do a mixture of strength training (especially as the first exercise of every workout) and then focus on hypertrophy. Do not try to convince me that strength and hypertrophy do not work together, as I have personally tested doing them separately and found little to no difference, except probably at my current level of hitting plateaus where I need to concentrate on one or the other.
I eat really healthily, with a weekly cheat meal of a large pizza. Generally, I lift until past failure, as I feel like a wimp if I do not. I know it's not the best to always go to failure, and I am pretty sure I have hit overtraining.
