Former Panera employee here. I worked there about 15 years ago and this was and remains my favorite sandwich of all time. I was super sad when they got rid of it. submitted by use27 to TopSecretRecipes [link] [comments] So over the years as Iāve gotten better at cooking I realized I had a pretty good idea of how you could make all of the components of the sandwich. I gave it a shot I am absolutely addicted. Weāve made these at least twice a week for months now. There are already a few copycat recipes out there but none of them get it quite right in my opinion which is why I wanted to make this post. There are 2 key ingredients that no one gets right: Ancho chipotle spread (not chipotle mayo) Citrus pepper chicken which went away at the same time as the sandwich. While my recipe does include mayo in the spread, itās more than 50% pepper and includes ground ancho chilis which are critical for the flavor. The citrus pepper chicken is just chicken with blackened seasoning then soaked in a triple citrus juice. The original sandwich came on French bread, but I always used the Asiago focaccia so I recommend making that fresh for these. The original also came with tomatoes which I donāt like so theyāre not included in the recipe. If anyone actually sees this and tries it Iād love to hear about your results! Maybe it would be helpful to brush the rectangle with water or egg whites before rolling it up? I was thinking it was an issue with under hydration of the dough, but my dough is pretty darn moist. Any wetter and it would be too sticky to knead by hand. The recipe is roughly 3.75 cups flour and 1.75 cups liquid (including water, milk, egg, and honey). Thank you! |

Iāve been using Claire Saffitzās NYT sourdough recipe (link: https://cooking.nytimes.com/guides/59-how-to-make-sourdough-bread) and prior to my last few loaves Iāve had loaves with a nice crumb and ear that Iāve been happy with (first loaf example: https://www.reddit.com/Sourdough/s/C4ZgoJaAqO). The last few loaves Iāve made have had no ear, the rise doesnāt seem to be as good/even, and the crumb doesnāt seem as uniform. submitted by object_shelter to Sourdough [link] [comments] Previously I was going a full seven hours for bulk fermentation. It never doubled but it seemed to have a whipped cream like texture vs. cream, so I just stopped there as that was the end length given in the recipe. My last few loaves Iāve only gone like four hours, but it seemed to have a similar whipped cream like texture and a decent rise so I was afraid of over proofing as my starter seems a lot stronger than when I baked my first loaf. The only other thing Iāve changed is adding a pizza stone under the DO to avoid burning (Iāve had issues) and sometimes adding a layer of tinfoil or a tinfoil trivet. These loaves are from the exact same batch and baked right after one another. Both were cut two hours+ after baking. Iāve tried to figure this out online and it seems underproofed to me but Iām not sure. Looking for other opinions. |

Okay, I posted my sad sandwich loaves a few days ago. Needless to say they were awful! With some help, and kind feedback from you lovely people I am MUCH happier with my second loaf! Iāll post a photo story. submitted by Happie_Bellie to Sourdough [link] [comments] 1st photo the absolute failure 2nd my redo today 3rd crumb on my redo 4th crumb on the loaf my friend helped me bake, when she tried to teach me. So, hereās what I learned. Another friendās father is a sourdough wizard. So, I learned about crumb from her. I see a vast difference between my redo loaf, and the friend loaf. I think my friendās is dense with minimal air pockets is because she puts it into a stand mixer to knead, opposed to folding. I could be wrong. I am new after all.
