Stretched and folded 4 times @ 30 min intervals. Proofed for 2 hours.. Refrigerated for 4.5 hours. Placed into a bread pan which is placed into tree Dutch oven side that i can add water into the Dutch oven to generate the steam. Uncovered after 25 mins. Cooked for a total of 40 mins.
Personally, I think it's under proofed and could have cooked another 10 mins with lid on. It has a spring but definitely could be cooked longer. Open to thoughts!

I'm following this Japanese Milk Bread recipe from Bob's Red Mill. Using the exact same flour. I changed the recipe by increasing liquid content until it's about 75% hydration. Also instead of proofing at room temperature, I decided to cold proof it overnight in the fridge since I want to bake it fresh the next morning.
Everything went well right up to the proofing stage. My dough passed the windowpane test after kneading. It doubled in size during bulk fermentation. 1st pic is how my dough looked like after shaping and right before going into fridge covered - I let it proof for about 10 mins first at room temperature just to get it going before storing it for the night. About two hours later I opened the fridge to check up on it and saw that it has slightly increased in size so I thought things were going well.
The next morning however after about 10 hours in the fridge, I saw that the dough had massively shriveled (2nd pic). So I reshaped it (3rd pic) let it proof at room temperature for about 1 hour (4th pic).
It all turned out ok in the end though. 5th pic is how it looked like after baking and the bread was as fluffy as you would expect a Japanese milk bread to be.
So now I wondering how can I prevent the dough from shrivelling after cold proofing? I really would like to just prep my dough the night before and bake it straight from the fridge the next morning.

Recipe: 3 kg honey
1.5 gallons water
5 cups lilac petals, half fresh picked and half frozen from the previous day
EC-1118 3/4 pack
2 tsp Pectic enzyme
Start off by pouring the water into a pot. Bring the water just to a boil. Remove from heat. Add in lilac petals and allow to steep for 15 minutes. Allow water to cool down to warm and add in honey. Once water hits room temperature add in the yeast and pectin enzyme and any nutrients.

Hello Crumb Companions.
After my last post, I wanted to try remaking the loaf of bread. Thinking I could blame the insane density on over proofing, I wanted to see what a proper loaf would feel like. This time, though, I decided to eliminate some sources of error. This included actually using a kitchen scale to measure ingredients, rather than cups and spoons.
Let me tell you - the difference is night and day.
Current Loaf:
This is most certainly bread! And it's not exhausting to eat!
Where my last loaf was dense, heavy, and hard to chew, this one is actually edible! From when I started mixing the dough, I knew things were very different with this one. The dough was actually sticky, where the last felt more like a big, unyielding lump. If I had to guess, I think the flour was compacted in my previous attempt, making me add more flour than I intended.
Previous Dough:
Looking back, I think there's a mismatch in the flouwater ratio.
Current Dough:
Instead of hard and unyielding, this dough was sticky and springy.
Not only was the result way better, but I found using a scale was much easier than messing around with teaspoons and cups. Granted, a skilled baker would be able to adjust on the fly, knowing what the dough should look and feel like at different stages. But for me, actually knowing how much ingredient I should be using transformed a doorstopper to deliciousness.

Addendum: Obviously, there are still places to improve. Judging the dough after its first rise and final proofing, I think I let it sit for far too long before baking (At least, I think - let me know if it looks good or bad!). Plus, it could use a little less salt. After all, baking is a science - what good science is there without experimentation?

Hey all, I've finally mustered the courage to post on this sub, since the silliness is spreading to my lungs and made me delirious with slight confidence ᕕ( ᐛ )ᕗ . I'm 25, turning 26 soon, pansexual and non-binary (AFAB), although any pronouns are fine!
A little bit about myself, and by a little, I mean a novel. I couldn't write a short bio even if my life depended on it.
I have two partners currently, my nesting partner of 10 years, and my long distance partner of 2 and a half years. I've been practicing polyamory for around 7 years, with several dynamics. We all date separately, and I'm also open to just making some friends! While I’d heavily prefer to find someone in Tennessee or close by, if you're open to travelling or being online, that's also okay.
I'm heavily into writing, whether it's fanfictions, books I'm working on, my D&D campaign lore, or just some poetry. I just started a campaign with 4 players, but if you're local, would love to add people to it!
When it comes to gaming, I prefer horror-survival. Games like 7 Days to Die, Green Hell, Project Zomboid, and The Forest/Sons of the Forest. Point and click's RPG's, rhythm, VR, you name it I've probably played some of it. (Bonus points if you're into Undertale)
I'm a complete menace in the kitchen, so be ready to eat. I love cooking, grilling, baking, you name it. Always trying new recipes, making my own pasta, homemade bread, etc. I love hotpot, sweets, and anything chicken.
In terms of my appearance, I'm 5'9", and around 220lbs. A thicc girl, if you will. I've lost about 25lbs since the start of this year and want to continue improving my health, but I do like being a bit curvy. I've got long black hair, with a hime hairstyle. I fluctuate between slightly pale and very tan, since I'm half white, half Native American. I have a few tattoos, and a few piercings, but had to remove a lot of my facial ones due to one of my medical conditions.
Speaking of medical conditions; I am disabled, and am currently on SSDI. I have a few conditions that I won't completely list here, but the main factor is a type of seizure disorder and neurological disease that can give me flare-ups. These flares impair my ability to walk, speak, or use my arms/hands at times. While I'd be happy to disclose more in private, I feel it's necessary to be at least a little upfront beforehand. Not everyone wants to date someone who is disabled, and that's okay! I do have limitations in what I can do/where I can go during a flare up, and navigating a relationship with someone who is disabled can be different if you've never experienced it before, so no hard feelings. However, I don't let this stop me from still trying to enjoy myself and have a good time. I still try to stay active, go to the pool, and practice my hobbies!
What I'm looking for? Preferably someone local or close, but online works as well. A person who loves laughing at shit posts, dumb memes, playing videos games, D&D 5e, and is at a point in their life where they are comfortable emotionally. You'd be able to clearly communicate with me, your needs, boundaries, wants, desires, and of course your interests! For age, preferably between 25-40, but I don't have a big preference on appearance. I would love to meet someone taller than myself considering I've been taller than most of my past and current partners, but it's not super important haha. Gender does not matter to me, so shoot your shot!
All in all, I'd like someone I can laugh like an idiot with, game with, eat good food with, and maybe have deep discussions with while sitting around a bonfire, sipping on some drinks.

Help please.
I attempted a country loaf and tried mixing in some wheat flour. 40-45% wheat flour. 1.5 hour rise time (original recipe with white flour calls for 3 hour rise). I’ve been told that wheat bread dough should rise less time than white.
Normally this recipe (all white bread flour) turns out great.
After baking at 450 degrees for 30 minutes in the Dutch oven (lid on) then 10 minutes (lid off), this is the result.
Does this look under proofed or over proofed to you? Trying to figure out why my wheat bread never seems to rise.

True desire.
While potatoes are not native to Ukraine, Tovchanka is - and it's a very old dish indeed.
Tovchanka is comprised of potatoes, beans, and poppy seeds - and often onion. I was thinking it would be aa perfect potato-salad-style side dish for your summer barbeque, if you want to impress your friends with your deep knowledge of traditional Ukrainian cuisine :)
It's a super simple dish that really just involves boiling a couple things, throwing it all together and smashing it up. The poppy seeds really add a complex flavor profile that is sure to intrigue your guests.
Note: Tovchanka is not to be confused with the Tachanka, the fierce and highly mobile machine gun carriage perfected by Ukrainian anarchist Nestor Makhno.
A Makhno tachanka at the Huliaipole museum. Huliaipole was Makhno's base of operations and is currently a frontline town.
That said, I suppose one could argue that today's dish is nearly as fierce in terms of its potential to surprise an unsuspecting target!

How to Make Tovchanka, by Chef Klopotenko

Boil 'em, Mash 'em, Stick 'em in a Stew
"As much as we, Ukrainians, love potatoes, quite a few of us rarely bother cooking them creatively. Sure, we love steak frites, mashed potatoes or fried potatoes, but what about something a little more interesting? I’ve decided to shake up the game a little and share the recipe for a wonderful and very old traditional dish, which has been cooked for more than a hundred years. Tovchanka is a dish made from potatoes mashed with beans and poppy seeds. Trust me, you’ll love it!"
Ingredients
  • 3-4 potatoes
  • ½ cups beans (fresh or canned)
  • 1 bay leaf
  • 2 cloves allspice
  • 3 tbsp dried poppy seeds
  • 50g unsalted butter
  • Salt and ground black pepper
Recipe
Step 1: Peel the potatoes and chop them up roughly. Place the potatoes, bay leaf and allspice in a pot of water, bring it to a boil and cook until the potatoes are tender. In a second pot, cover the beans with water and also bring to a boil. Cook until they are soft and discard the water from the beans. [Editor's note: if you are using dried beans, make sure to soak them overnight beforehand!]
Step 2: Transfer the potato water to a cup, remove the bay leaf and allspice and set the water aside. In a pot or a large bowl, combine the beans and potatoes, add the dried poppy seeds and the butter.
Step 3: Using a potato masher or a fork, mash the potato and bean mixture until it is smooth. If the mixture is too thick, add a little potato water from time to time.

I did it.
After almost 16 hours grinding I finally managed to complete all skill levels. Foraging and cooking were especially hard😭 A few tips for cooking: - do easy recipes like bread or pancakes. You can grow the wheat yourself and take the milk and eggs from your chicken and cows or you can go to the bakery and the family farm to purchase it - don’t cook 4 bunches in one. The game only gives experience for one cooked food atm so you would’ve wasted 3 times food xp. So you have to cook it one by one. - you can pair it with the cook every recipe achievement but you don’t have to - i managed to get one skill level in about 6 days with that trick (it might go faster in the first few levels) - prepare for a long time of grinding and doing the same everyday. If your character seems to get old, turn the aging off so you have infinite time I think the other skill levels should be clear, it just takes some time. For foraging just walk around, pick everything up and shake every bush and tree.

On my 7th or so loaf. I seem to get a good rise during my bulk fermentation but when I transfer from my proofing basket to dutch oven to bake it flattens. Need to work on my shaping, any other tips are appreciated! Also looking for advice on my crumb, tastes good and has a nice crust.
Recipe & Method: 50g flour + 50g water + 50g starter 350g water 500g bread flour 11g salt
Roughly mixed the above and allowed to sit for 1 hour before first stretch and folds x20. Did two more series of stretch and folds x8. Then allowed to proof for 12 hours. Transferred to basket and placed in fridge for 9hrs. Baked using cold bake method. Put in dutch over turned oven temp to 500f. Once at 500f decreased to 450f for 25mins then removed lid and bake another 20mins at 425f.

So I’ve been seeing the cottage cheese wraps online and I checked in threads on Reddit where people said it tasted like a cold omelet. So that sent me down a rabbit hole and I found one with eggs whites! So I tried this recipe last night
Cottage Cheese Flatbread
I added my own twist with 1 cup of shredded Parmesan and might I say…..YUM!!! It tasted like a very thin garlic bread! Tonight I put pepperoni with a little shredded parm, broiled on low until cheese melted, then rolled and they tasted like pizza rolls!
Just in case anyone was thinking of trying to make this :)
