So excited to find this group! I'm a collector (ok, hoarder) of old recipes and cookbooks. The one recipe that has eluded me is my grandmother's chocolate cake. She made it in a loaf pan and frosted it with basic old-fashioned boiled icing and sometimes sprinkled with coconut. We used to joke and call it "Grandma's 10-pound cake," but it was the best chocolate cake I've ever had, hands down. It was actually heavier than a pound cake-- nothing light and fluffy about it, and super moist. I've tried doctoring my recipes to get that same density and moistness, but something gets lost in the flavor and it ends up bland and never as dense. She was born in 1905, so the recipe would be Depression-era or before, since my mother remembered my grandmother making it in her childhood. Any clue would be helpful!

My eldest sister is having a first soon. She's about 20 weeks now. I want to throw a baby shower for her but I don't know where to start. A baby shower is uncommon in my culture and I've never been to one before. So I really don't know where to start. What I've found out online is that games, food, cake and gifts are involved.
Also a thing to note, I gathered a baby shower is something you'd invite fellow women but my sister doesn't have a close female friends besides those from work. If I do plan a baby shower for her, it's only going to be our family, total guest up to 5, women and men. One of them is her own husband 😅. Would that be weird? I reckon her colleagues will probably throw her a party at work anyway. I know she doesn't care about having a baby shower, much less a traditional one.

Chocolate Olive Oil Cake — 150 ml regular olive oil, 50 g cocoa powder, 125 ml boiling water, 10 ml vanilla, 150 g APF, 2.5 g baking soda, 1.25 g salt, 200 g granulated sugar, 3 whole large eggs
Chocolate ganache using bain-marie method — 200 g milk chocolate, 200 g dark chocolate, 300 ml heavy cream, 30 g unsalted butter, salt is optional if you want to make salted chocolate ganache. Note: for best results aka smoother and shinier ganache, i-immersion blender mo while still runny
Oven temp.: 325F Duration: 15-20 mins depending on your oven type Yield: 2 8D” cakes for layering
Preheat oven to 325F, grease and line 2 8” cake pans. Measure & sift cocoa powder while whisking in boiling water. Add vanilla, set aside. Combine APF, b.soda, & salt. In your stand mixer bowl using the paddle attachment, beat together olive oil, sugar, and eggs for about 3 mins until pale in color, aerated, and thickened. Add chocolate-boiling water paste while mixer’s running on low, and then slowly add in dry ingredients. Bake for 15-20 mins. Test doneness using a cake tester. Let cool for 10 mins in pan, remove only when completely cooled.
Fill and frost to your liking.

Hi everyone, I’m making an easy bread based on a recipe and it called for 450g of bread flour and 375ml of water aside from yeast and flour.
When I mixed it all my dough was bone dry but te recipe said it should be not kneadable, but it should be wet but not cake batter wet.
So I kind of poured a bunch of water in until I thought it might be good? And let it rise but looking at the images the creator provided I’m worried my dough may be a little too liquidy as hers looks thicker after it was rested.
Can I add flour after I already let it rise? Or should I add flour before the second rise?

But all of that in due to people baking in their own homes. I’m a cake decorator at another bakery. And they have allowed me to buy cake and buttercream from them and decorate and sell when I get started. Basically use them as a wholesale supplier. And I can use and decorate as I want. Does that need a permit also. Because I’m not baking at home. Does that make a difference in the rules and the law. Or am I still required to give the state the recipes and everything needed to get a cottage license and needed to sell products. Thanks for any help!

Both of these are a basic ingredient in Chinese or Korean cooking, so if you're trying to recreate some of your favorite dishes, having access to these will go decently far.
I use coconut aminos or No-Soy Sauce from Ocean Halo to replace the soy sauce. I haven't personally tried the marmite replacement for dark soy sauce, but I've seen that listed as an option by someone.
Korean tteokbokki sauce recipe: 1 tbsp gochujang; Honey to preference; No-soy sauce 1 or 2 tsp; Minced garlic; And maybe 1 tsp hondashi but it can be omitted.
Prepare rice cakes, hard boiled egg, veggies as normal and mix with sauce. It's so addictive.
Chinese take-out beef and broccoli recipe: Thinly slice beef against the grain and marinate with 1 or 2 tsp of baking soda, 3 tbsp oyster sauce, 1 tsp corn starch, and a splash of Shaoxin wine or a sweet wine. Mix and marinate for 30 min to 1 hr. Blanche broccoli until it's pretty and set to drain. If you add carrots you can cook them a little longer so they're not so crunchy but not to mush. You want to drain the broccoli really well.
Stir-fry sauce: 1 tsp corn starch, mixed into a slurry; 1 tbsp oyster sauce; splash of Shaoxin wine, 1tsp sugar, pinch white pepper, minced garlic, 1 tbsp No-Soy Sauce or substitute.
In a pan that can withstand high heat, add 1 tsp oil, ginger, onion, push aside or remove, add meat allowing it to sear, add sauce, add broccoli and onion back in. Mix and serve.
When I made the beef and broccoli I was so happy. It was delicious.

My current plan is to double Claire Saffitz's "Chocolate Layer Cake" published in NYT Cooking. The math works out close enough but I'm worried that taking a recipe meant for three 8-inch pans and the doubling it for one big pan might throw something off.
Is there any reason to think that this is a terrible idea?

I make this in game all the time, because one of my favorite RPG activities is to celebrate Evelyn's birthday. I make a chocolate cake and fried mushrooms first thing in the morning, take her the cake and give George the mushrooms so she doesn't have to cook. And then I take her to the movies and buy her a treat. She loves both of the sentimental Winter movies because of course she does
And George is totally right about these. This dish is delicious! The teen who "doesn't care for mushrooms" came back for seconds and my husband must have mentioned half a dozen times how good they were. He spent the rest of the evening talking about it. I tried a couple today as leftovers, and they're even good cold (not as good, obviously)

Blue Oysters was the only "wild" type Whole Foods had (and they made me feel feverish but they were also out of cowbell so no help for that). I think any mushroom you can find would be good. I cut the creminis in half and tore up the oysters.
The batter is perfect for the mushrooms. I'm used to either buttermilk OR some kind of beer to give the bubbles and this batter mixes both. Buttermilk batters tend to be puffier and thicker and beer batters tend to be thinner and more crispy. The mix of both was so good! The texture is great with something softer like a mushroom. Don't skip the step of tossing the mushrooms in flour - it made the batter stick without any falling off in the hot oil.
The recipe calls for either an IPA or a lager. I chose Stone Double Delicious IPA mostly because I knew the leftovers would be Double Happiness for my IPA loving husband. I used peanut oil for my frying and I put more than the recommended inch so my thermometer was properly submerged. You can save $ by reusing frying oil. Once it's cooled just strain it through a cheesecloth for next time.
The dipping sauce is also very delicious (I think the whole cookbook is going to be four candles and I'm fine with that). The flavor is more herbal with the malt vinegar being a background taste. You're supposed to season "to taste" with salt and pepper. I tasted it before and after the salt and pepper and both were good. It doesn't even need salt.
Tips: Just like a trip to Skull Cavern, the trick to successful deep frying is preparation and the right supplies. In addition to the slotted spoon/spider the recipe recommends, I highly recommend a candy/oil thermometer. The hardest part of this recipe is keeping your oil at the right temp. Too hot and it will be spattering everywhere and overcooking the batter without cooking the mushroom. Too cold and the mushrooms will be soggy and the batter won't crisp.
I also recommend using tongs (I have a silicone tipped pair that don't mind being in hot oil) for moving the mushrooms from the batter to your oil.
Don't overcrowd your pan - that will make them stick together into big multi-mushroom clumps. The recipe said do it in three batches. I used a smaller pan so four worked better for me.
The last step of the batter (mixing the wet into dry) will start your bubbly reaction so do that last to keep everything nice and light. I had everything setup and oil heating before I made the final mix and then went right into frying.
You will end up with a LOT of leftover fresh herbs if you buy the dill & parsley in a bunch. This is a good place to look at other recipes that might use the same herbs. I'm making baked fish this week, too, to use up the leftovers. Ditto the Poppyseed muffin to use up the rest of the buttermilk I purchased for this. These were so good with the leftover beer, too!

I am aware yogurt needs fat for plant based and oats dont have enough, i did find this recipe so i figured i would just give it a try since oats and water are cheap

I did not use sugar but i used about 1/4 cup of almond yogurt that i made previously as i figured more existing yogurt would help, its been 12 hrs and i tasted it, it still has an oaty taste and kind of just makes me think its just oatmeal and not yogurt
I did strain it so that it was milk and then i thickened it with the boiling, its in my instant pot and i used the same 115f temp as i did for the previous almond yogurt
I put sugar in it and let it go for another 12 hrs and now its yogurty the oatmeal taste is not there anymore, is it unsafe now since it didnt ferment for those initial 12 hrs at 115f?
