Hello guys,
Last year I was at a birthday party with catering. One of the desserts was a kind of cream/custard. Some fruit and berries were served alongside it. It was the most delicious thing I've ever eaten, but unfortunately I never found out what it was. The host didn't know and the other guests couldn't tell what exactly it was either. It was pure white, it didn't taste as greasy and wasn't as fluffy as whipped cream. The consistency was soft, but not extremely runny, more like a thick sauce. I don't remember the flavour exactly, it was a mixture of vanilla, something citrusy and something else I couldn't pinpoint. A cream that would come closest to what I ate would be Créme Diplomat, but that doesn't hit the spot either.
Does anyone have any idea what it could be? :)

Okay so I made two fruit tarts for mother's Day. They turned out beautifully but let me explain what I did with the custard. I followed the recipe exactly to a T.
The custard came out beautifully after cooking it on the stove top. I put Saran wrap immediately directly on top of the custard as instructed. It sat out on the counter for no more than 10 minutes before I put it in the fridge overnight. Was this my first mistake? Should I have let it come completely to room temperature before putting it in the fridge? Which probably would have taken an hour since I doubled the recipe and it was a double batch.
The next morning after my pie crusts were completely cooled, I took out the custard and I saw how lumpy the mixture was. Even after mixing and mixing with the whisk, there was no way I could pour that into the shells. The lumpiness wouldn't go away. I read online that you could use an immersion blender to soften it up again. Well I don't have that so I used a food processor and in a matter of 2 minutes it was silky smooth again. So I don't think coagulated and grainy are the right words for my mixture because it definitely wasn't. It's not like I needed a strainer for it. I would probably describe the texture as slightly scrambled eggs. All it took was a few presses on the food processor to bring it back to normal. I was honestly amazed lol.
So I poured it into the shells and served it about 6 hours later. And right when I cut into the shells, all of it started pretty much oozing out of the sides. It was not a firm thick custard whatsoever. I thought it was my fault for not letting it sit overnight, so I had to see the texture the next day and it was definitely firmer than it was on the day that I served it. But if I had to give the custard a rating in terms of firmness, it would be a 7 out of 10 (The first day I'd probably give it a 3 out of 10). The fruit was still sliding off of the custard when I cut into it the next day.
Was my mistake possibly food processing it for a little bit longer than I should have? Maybe I should have done it in about 5 to 10 second intervals and tested the consistency instead of doing a straight run of about 30 to 40 seconds?

I (27f) have been together with my husband, "Jeremiah" (33m) for 7 years and married for 2. We met during when he was a TA in my class and I'm currently 6 months pregnant with our baby.
Jeremiah is lactose intolerant, and during the years I've known him, he's usually taken lactaid or ate dairy-free foods. However, two months ago, he declared that he would eating dairy from now on.
When that happened, I thought he was just joking since I had tried out an recipe for dairy-free mac and cheese that turned out to be awful. But no, he tossed out all the lactaid, dairy-free foods, and almond milk we had only to replace them with dairy products.
Ever since then, the house has stank. Every other night, I'd be woken up to some terrible smell and wondering what the hell happened only to realize it's coming from our bathroom since my husband has been shitting his brains out.
Jeremiah refuses to use the bathroom fan, air freshener, or any special sprays I bought that help cover up the smell. He says that the chemicals mess with his body's adjustment period to the lactose, but I think he just likes me smelling him.
His farts are almost worse, and even cling to our bedsheets, making me have to change the sheets or I just sleep in the guest room after getting out of my previous clothes and putting them in the wash.
The odor has pushed my usual nasuea up to the nines, which is not fun combined with the baby now kicking the shit out of me too. I've begged for Jeremiah to go back to his old diet, but he's refused, saying he needs to be "all natural" to be a real man and good father to our baby. That his body just needed time to adjust have been forced to consume unnatural ingredients for so many years.
He even yelled at me for ordering vanilla almond milk for myself after I ordered some groceries from Kroger and tried to throw it out before I yelled back at him to stop.
This has caused major tension between us, especially because I brought up our baby possibly being lactose intolerant too and having to give them lactose-free formula rather than breastfeeding. Jeremiah barely spoke to me for a few days after that. He also hogs time in the bathroom due to this, and I had to pee in a container a couple of times.
On Saturday, my parents invited us over for an early "Mother's Day" dinner since they wouldn't be in town on the actual day. Jeremiah brought over an Oreo cream pie for dessert despite me begging him to bring literally anything else.
Things were going well until when we were eating dessert, Jeremiah excused himself to go to the bathroom. I must've had an upset look on my face, since my mom asked what was wrong.
I kinda just unloaded on my parents. and explained what had been happening for the past few months. When I was done talking, both my mom and dad looked horrified at what I said.
My husband barely had time to sit down after he came out of the bathroom before my mom was laying into him about how selfish and inconsiderate he was. My dad called him disgusting and how he'd never subject my mom to that, especially when she's pregnant with his kid.
Jeremiah just looked stunned at the way he was being talked to by my parents, and at the end just quietly told me that he wanted to leave, so we left.
It was a quiet car ride back home, but Jeremiah wasted no time yelling at me once we were behind closed doors. He said that he couldn't believe I would let my parents speak to him like that. and I needed to make them apologize.
I refused and told him my parents were speaking the truth, and they would have never done that if he just kept up his old diet.
Now Jeremiah is giving me the silent treatment, and has only spoken to me once just to say he wouldn't be taking me to my checkup tomorrow. AITA?

My boyfriend [23] and I [21] have been dating for about 7 months. He has celiac disease, and he's adamant on there being no gluten not only in the kitchen but any part of the property in his future home. Baking bread has been a huge hobby of mine for years, I've spent so much time getting better and better to give great homemade pastries and breads to the people I love.
On one of our first dates he asked me if I'd be happy if he bought us a separate kitchen in the home, and I said in response "Of course not, that wouldn't make sense." He wanted to make me happy, but he's changed his mind and realized it's something he wouldn't want. It didn't fully hit me what giving up gluten would mean to me before a friend offered me a spot in pretzel- making class at the King Arthur Baking school. I realized, what is the point in taking the class when it's a hobby I'm going to have to give up entirely. I said no, when I really wanted to say yes.
I asked him if he would forbid me from even buying myself a space separate from the home, like an outside shed with an oven, sink and counter, so that I could continue baking. Even if I did everything possible to prevent any contamination where we actually lived. He was not comfortable with it at all.
I have had my boyfriend over countless times for dinner, breakfast etc., and I've dedicated an oven in my home to baking his food in there. I make him gluten free desserts too. I'm very careful with cross contamination. I'm happy doing what I do now, but I don't know if I can live like I have celiac disease, the way he wants me to. Knowing there's a time limit on me baking bread, pizzas, pastries, for myself and the people I love, is so so hard for me. It is such a huge part of my identity.
I guess I'm making this post because I'm specifically wondering if it's something I should sacrifice. He does so much for me, he treats me so well, and I thought love comes with huge sacrifices. My family loves him. But every time I bake something for my friends and family, it makes me sad. I know that there are gluten free baking recipes, but the process and result is just not the same. I want to give him the best gluten free dishes I can make, but I also want to continue giving away the pastries my friends and family love.

Made by yours truly, these beautiful little delights have an apricot jelly surprise in the centre and a sponge base. The cream cheese is flavoured with notes of lemon. White chocolate feather, ginger sable, charred apricot and gold leaf to top this dessert off. No recipe for this one, just used acetate and clean PVC piping to mold, allowed to set and then carefully de-molded and acetate removed gently.

Hi! I’m currently looking for ideas for desserts to make for a large group, are individually sized, and maybe don’t make a huge mess. I’m baking for a school band auditions. Basically how it normally works is that people sign up to bring cookies so that after a student auditions, they get a treat to hopefully make them feel better about how they did. I don’t feel like making ordinary average chocolate chip cookies though, so I want something a bit more glamorous, like something elevated in quality, or maybe a different flavor, or something the lines of that. Just made the Blueberry Streusel Ice Cream recipe from Sally’s Baking Addiction. Always love her recipes and they turn out great but for some reason I didn’t quit vibe w the mouthfeel of her Philly style recipe. I have a go to custard base recipe but wanted to be able to taste the blueberry more so decided to try Philly style.
The mouthfeel was way too rich and creamy. It didn’t feel like ice cream at all and more like whipped frozen butter. Could barely taste the blueberry or even finish 1 scoop.
The base ingredients are: 2 cups heavy cream 14 oz sweetened condensed milk Pinch of salt
Is this just personal preference or did I go wrong somewhere?
