As a university student (basically broke) i have found the difference in the cost between pork and beef to be absolutely unjustifiable.
Since I have started carnivore I have eaten beef only 2 times, one of which was a rib-eye and the other was a lean meat which was like eating rubber. The rib-eye was good but it was 10$ (converted from my national currency) for 300 grams and it was on sale! Basically 33$ for a kilogram ON SALE! The overall preparation was the same as i cook my pork steaks, fried. As I was ravenous I watched that juicy rib-eye cook and I finally had the opportunity to take a bite. It was nothing like people here glorify it to be. Yes, It had juice, i cooked it medium-rare, it had some crust on it but overall the taste was nothing significant. In fact I can generally say that pork IMO is a lot better than beef and a lot cheaper being only 4.5$ for a kilogram on sale (grass-fed beef is 733% more expensive!). Given the price difference and the literally no difference in taste (in fact it might be worse) I say that pork is a lot better for someone like me (broke). I understand that beef might have some micronutrients or be healthier overall but pork being red meat is still fulfilling your daily needs of micro- and macronutrients and is still generally a lot better than anything you eat otherwise such as junk food or processed meat or anything like that.
I can surely say that if we compare the huge price difference of 700%+, i just cannot find how can beef be even 200% healthier in order to justify the price being so high. I am from Eastern Europe if anyone wonders. I should add that the salaries here are way lower than your average American salary so keep in mind that affording to eat this type of beef everyday is not achievable by the most of the population.

Hello mold subreddit. First time reddit poster here. Thank you in advance for any insight you can offer to my case. In what follows, I'm going to first describe the health journey that led to my mold discoveries and questions, so please bear with me through the health stuff. I have included excessive detail in the hopes that my case might help others navigate possible mold problems.
If you don't feel like reading all the below, the tl:dr version: After struggling with unknown health issues for 15 months, I eventually linked my symptoms to my new home and subsequently discovered very high volatile organic chemical levels. I linked the VOCs to mold. I also had a mold inspection done, and the results are at the bottom of this post. The levels of mold were high in my kitchen and bathroom. However, oddly, the mold levels in the outside control group were much higher than inside. Can anyone help me understand how high my indoor mold levels are? Does anyone know whether the outdoor levels are reasonably normal? Is my specific blend of mold types implicated in neurological symptoms for others? And if anyone has dealt with mold before, do my possible mold symptoms described below seem similar to ones that you've had?
I bought my townhome in late 2022. Within four months, I started having new neurological symptoms. These symptoms started with a postural tremor in my left index finger and thumb. The same hand eventually began to appear smaller and shriveled, especially around my thumb. I also started having extremely frequent muscle twitches and jerks. These twitches take three general forms:
  1. The most common is an odd sensation of something wiggling under my skin. These primarily happen in my face, around my mouth, my butt/legs, and ribs.
  2. A pulsing regular beat in a muscle that lasts for several seconds and in some cases longer. These usually happen near joints, especially just above my elbows and knees. These are almost always visible to the naked eye.
  3. A sensation of rapid vibrating underneath the skin that lasts briefly. These vibrations are usually not visible but you can feel them if you press a hand over the area.
The twitches and apparent change to my hand have lasted for 16 months. At this point, the tissue loss in my thumb is also apparent in my forearm and upper left arm. My leg on the same side arm appears different and feels as if it has lost some muscle. I also have frequent trembling with specific muscles when I flex them. For example, sometimes when I try to hold a smile my face muscles will shake or give out. My neck tissues are especially liable to shake and vibrate when flexed, such as when doing tasks like flossing where I need to hold my lips back. On a few separate occasions, I have felt slight paralysis on one side of my face for an evening or so that then mysteriously goes away.
Aside from these neurological symptoms, I also have had frequent hoarseness, sneezing, jaw pain, and headaches. My joints often feel like they are more bony and poppy, especially in my left knee and knuckles. In addition, I've had a lot of issues with one ear on the same side as the shriveled hand. The ear had an apparent infection or cloudiness 12 months ago that went away, it then had recurrent pulsatile tinnitus, and now it just occasionally hurts at random times. There have been many other symptoms.
I have seen two neurologists, an endocrinologist, an ear-nose-throat doctor, and an orthopedic doctor. I've had countless tests done including two electromyographies (EMGs) over my whole body several months apart, an MRI, and a lyme disease blood panel. Every test has been normal, although the orthopedic doctor suggested possible thoracic outlet syndrome. The neurologist said my nerves are quite robust. My borrelia blood panel came back negative, although as a side note I did have a tick bite in early 2022 that caused a rash. I was treated for Lyme with 10 days of doxycycline. The tick bite itself still occasionally flares up red and its timing might be correlated with my symptoms.
Back to the house-- I was on a two week vacation out of state and noticed my twitches go away. Then I saw my arm become more normal sized again and the veins start to come back. I didn't feel the same joint issues, had no hoarseness, lost the headaches. All the symptoms came back as soon as I returned home, but nevertheless after that vacation and subsequent extended trips, I was able to conclude with a reasonable level of confidence that these symptoms are linked to the house. I bought an air filter and an air quality monitor that shows volatile organic chemicals, PM, formaldehyde, and C02.
Using the air quality monitor, I discovered that volatile organic chemicals (VOCs) and formaldehyde were usually abnormally high and sometimes extremely high. VOCs are usually above safety thresholds at >0.5 mg/m3 and formaldehyde >0.1 mg/m3. Sometimes, the VOC levels will stay consistently above 1.8mg/m3. I witnessed them reach a peak level of 5mg/3 in one bedroom late at night when I was woken up by a feeling of shortness of breath. I tried but failed to correlate these high VOCs to electronics, chemical sources in the home, cooking sources, heaters, and cleaning supplies. The way the VOCs would spike all over the house for no apparent reason in the evening helped me rule out some of these other possibilities. I also actively removed other sources.
Eventually, I realized that the VOCs were likely caused by mold, so-called microbial VOCs. The formaldehyde could also be explained by mold. The levels of VOCs would spike on rainy days, when the humidity was high inside, and in the evening. I don't think any other chemical source near the house would display this pattern. It took me a while to reach this conclusion because the mold issue in my house isn't too obvious. The house has always had a slight musty smell, especially if the air is stagnant for a while. The bathroom also has recurring mold growth on a tiles, in the shower, and on the various shower liners. A couple cabinets in the kitchen have always smelled musty. I didn't think these obvious signs of mold growth were that big of a deal, but given the extremely high levels of VOCs I now believe the mold has always been the issue.
Once I realized it was likely mold, I started noticing all the signs. The house is about 100 years old. The prior two owners of this house each moved out within five months. The house is not ventilated except from windows. It sits in a damp area near where water puddles up in the yard. It's mostly solid brick, so the house frame has a way of trapping hot air and releasing a lot of moisture onto the floors each evening. There's also a cheap layer of vinyl flooring throughout that could easily cover up a massive mold problem underneath. Finally, the townhome sits on top of an old shared crawl space that was used as a furnace. It has had known water puddling issues for which reason a vapor guard was installed underneath my first floor.
So, I had a mold inspection done. The results are at the bottom of this post. The bathroom results might be diluted because I left the window open the night before. Nevertheless, both my kitchen and bathroom had mold detected at levels between 6480 - 12,300 spores/m3. Oddly, the outdoor levels of all of the molds were often much higher, 3-6 fold higher than the levels indoors. It was a humid day, but it still seems odd for me that an outdoor space could have higher levels than indoors.
On later reading about my specific mold spores and neurological symptoms, I noticed that the two most elevated groups of spores in my house, ascospores and basidiospores, are the same class as all of the funguses known to have colonized the nervous system of ALS patients according to this published article. Those specific types of fungus found in the nerves of ALS patients are Candida, Malassezia, Fusarium, Botrytis, Trichoderma, and Cryptococcus. It naturally led me to wonder if my chronic als-type neurological symptoms could be caused by some latent fungal infection in my body that gradually improves when I'm away from the home.

My 9 month old staffy has been on salmon and rice kibble up to this point- with an allergy to chicken , and boneless pork loin at 1.80 a pound, is this not the best option if I want to start making her homemade food? I trimmed up 4 pounds of loin and am sous vide at 135 degrees ATM (is this considered gently cooked?) and am going to add a bit in with kibble to see how she reacts… with the plan of eventually either doing 50/50 homemade and kibble or full pork and potato balanced with supplements . Has anyone had success feeding there dog pork and if anyone has any tips or advice it would be well appreciated! Also , what temp would you think is best to cook pork at? I have a sous vide so accuracy shouldn’t be to big of a problem.. like I said this first batch I’m doing at 135, but I keep seeing people say ‘gently cook’ without giving real temps.. thanks y’all!

The field was down to five and Van was very sad to see Anthony go as he was a great Chef but if it came down to him and Anthony then it was always gonna be his buddy going. The final five celebrated their journey they had all been on and Nikki noted she was nominated in the second service and thought going back may have been the worst decision of all time but Nick said everytime he'd worked with her she had been a beast and was very proud of her performance. Kanae told Paula she hoped the 2 of them could be the final 2 and Paula said Kanae had a great future in this industry but between the 5 of them, she didn't see much of a difference. Chef Ramsay welcomed the final 5 back and said this had been a journey for not only them but himself and said the next challenge was to show their abilities as an executive Chef as this was the pricing challenge with the final 5 given $20 to make a stunning dish and good value for money. Paula said she'd been an executive Chef for 15 years and had her own restaurant so this should be the challenge where she shines and Van said he'd been waiting for a challenge like this and he can make a great meal out of anything.
Chefs Suzanne Goin, Bruce Kalman and food editor Lesley Barker Suter were pricing each dish and Paula was up first with her striped bass and it got a very strong review from all 3 judges to score an average of $39.33 and Paula said that was as good as she could have wished for and said that there better be something sexy to beat her. Kanae was up next with her halibut and while the fish was cooked perfectly, it lacked acidity and the garnish was lacking and Kanae scored an average of $31.66 to end up easily behind Paula, and Kanae said this was clearly not the challenge for her. Van continued the trend of seafood with his swordfish and it also got great reviews other than the potatoes maybe being a bit too salty and Van got a strong average of $37 but was still behind Paula who was the chef to beat. Nikki was up next with her pork chop and despite how rustic the dish was, it got great reviews but scored an average of $37.66 to still be behind Paula and Nick was the last chef who could dethrone Paula. Nick's tuna was praised as well but scored an average of $36.66 to end up in 4th as Paula won the challenge! Paula was rewarded with a day on a fighter jet and was allowed to take 1 chef with her, and she took Nikki as she came second.
Nick, Kanae and Van had to clean the front of Hells Kitchen, as well as Marino's car and prep the kitchen for dinner service. Kanae was grumpy all punishment as she thought Paula would take her and Nick didn't understand why Kanae was so upset as Paula was being fair in taking Nikki as she came second and Van felt like the stress of the competition was getting to Kanae and it was time for not letting up as this was the furthest he had gone in Hells Kitchen and it felt good. Nikki and Paula enjoyed their day out and Nikki said she hoped to face off against Paula in the final 2 as she thought Paula was the best chef there and Paula noted it was funny both Nikki and Kanae had wanted to face off against her but she wasn't going to get over confident as with 5 left the pressure was gonna be on.
Chef Ramsay said he expected as good a service as last time and Nikki was running the appetizers station and her first risottos and tortellinis came out nice and Nick who was on meat with Van was happy to assist with the salads and tartares to get the first 6 top out as Chef Ramsay said it was a great start. Paula was on fish and said this was going to be her hardest station by herself as Ramsay was pushing the tickets fast and she did get her first scallops out but trying to cook apps and entrees at the same time became an issue and admitted she needed help from Nick as Nikki was good on appetizers with help from Van. Paula started to have communication issues as she didn't respond to Nikki and Nikki was surprised that a chef as strong as Paula was getting so flustered and Chef Ramsay had to finally force a response out of Paula. Paula then got confused and fired an order of scallops with Nikki still 2 minutes out on risotto which saw Ramsay calling for risotto and wondering why he had scallops dying in the window now. Paula admitted she wasn't talking with Nikki and Nick at all and said she was going to fire fresh scallops and the ticket was finally completed as Nikki and Nick completed appetizers to give the black jackets a pretty strong start. Kanae was on garnish and determined to show herself as a leader and Van on the meat station was instantly stunned at the high orders of fillets and despite Nick trying to help him, Van said he was fine which made Nick nervous as he had 6 fillets to cook for the next 2 tables. Kanae said she was good on garnish but Paula said she was behind on pork so to not walk garnish but Kanae ignored her and walked garnish anyway and Paula was fuming at the communication as Ramsay was now demanding to know where the pork was! Paula managed to serve her pork but 1 of Van's fillets was RARE.
Nick said it was ridiculous that Van was not asking for help as he had an insane amounts of fillets and lamb to cook and Van finally asked for Nick's help even though he said he hated needing help on his station. Nick got him organized but Van then served his refire fillet and there was no sauce and Van realized he hadn't fired enough sauce, and Nick said there was meant to be 2 of them on there and it was Van's own fault for getting behind. Van did finally get his sauce hot to complete the table but Ramsay was not slowing down to push the next tickets out and Kanae now was flustered, forgetting what garnish she was cooking and struggling to respond to Van and getting completely lost on her station. Kanae did manage to get her garnish out but Paula was now dragging on turbot and when she pulled it out of the pan it was overcooked and dry. Paula's timing was well off and now Nick was jumping onto fish to help Paula get organized but the refire turbot came out to complete the table. Kanae wanted to show herself as the leader but called 6 all day on salmon but Paula corrected that to 4 and Van was now confusing things by calling the wrong all day on duck and Nick wondered what the fuck was going on. Chef Ramsay jumped in to tell them all to stop talking and called the real all day and while Paula and Van managed to get it together, Kanae ended up behind on garnish again and almost killed the table with Ramsay wondering where the fuck the fries were. Kanae finally bounced back and the rest of the black jackets did get their act together to finish service with Van's last duck and chicken as well as Paula's salmon perfect but Chef Ramsay said that was not what he expected at this stage!
Chef Ramsay said it wasn't a terrible service but the communication at times was a joke and asked for 2 nominees. Nick said there was no way him and Nikki were going up and it was between the other 3. Nikki said she hated voting for Paula but felt like she had the worst service tonight and Paula agreed it was a rough night as Nikki voted for Paula and Kanae. Nick voted for Paula and Van and this led to the other 3 all voting for everyone else and Van said if anyone needs to go home tonight it was Kanae as she confused everyone tonight. Kanae was livid with Van as she had nothing sent back while Paula was firing scallops too early, overcooking turbot while Van was fucking up fillets and this led to an argument between Van and Kanae as Van angrily said he was swamped by steaks and only messed up 1 and to cut that noise. At elimination Nick called Paula as the 1st nominee but said it was tied between Van and Kanae for the 2nd nominee and a furious Ramsay called all 3 of them forward! Ramsay said this was a very hard decision but eliminated KANAE for failing as a leader tonight but said her passion and fight were exceptional and told her to keep her jacket. Van said he was happy to survive especially as Nick wanted him gone and when he beats Nick to the prize it was time for humble pie and Paula said there was no time for slip ups at this stage and to get redemption after 16 years would be the best moment of her life.

2024.05.15 06:02 ejrole8 Bone-in Skin-on Chicken thighs are great on a budget for more than just meat!

Making this post because I had a less-than resouceful friend buy herself the boneless, skinless chicken thighs for way more than she should’ve. These tips also work for different cuts of chicken with skin and bones (though with drumsticks I usually just cook them in soup as-is).
Yes, the ones with skin on and bones included are cheaper by weight than the alternative, but if you’ve been just throwing the skin and bones away, stop! I have some budget friendly tips for you.
1) Collect the skin and bones and put them in separate gallon-sized freezer bags. You will be adding to them as you get more chicken. For the skin, keep adding chicken skins and fat to them. For the bag with the bones, you will also want to add veggie scraps such as the skins of onions, garlic, carrots, ginger, and celery. There are others you can add, but if you aren’t familiar with cooking times and qualities of vegetables yet, I’d try to just stick with those. Again, it’s better to use organic veggies or ones sourced from someone you know uses less pesticides when growing as you’re using the skins for this.
2) when you have a good amount of skins(like 3/4lbs or more), make shmaltz (rendered chicken fat). It’s basically the Jewish alternative to lard and tallow. It’s healthier than most cooking oils aside from avocado, olive, and coconut. It has a high smoke point so you can use it to fry, roast, bake, or whatever it is you do with your cooking oils. Because it is animal based, the chemical structure is easier to digest. You might want to steer clear if you have heart problems, though. I used a recipe from Serious Eats which goes like this:
3) When you eventually collect enough bones and scraps to fill the ziplock bag, you can make bone broth (or stock, for the anti-hippies). I sometimes add pork bones if I get any with my meat. I make mine in an instant pot so I’m going to use that recipe.
Bone broth(stock) is really good for your bones and adds a really nice flavor to whatever you use it for. Consider using it instead of store-bought stock or Better than Bouillon. You can use it for a healthy egg-drop soup. Supposedly some people use it in smoothies, but personally that’s not for me!
I like to get the crunchier packs of chicken when I can afford to (think free-range, organic, locally sourced), and if you have the means to, you should too since you can utilize all parts of the cut.

I graduate college soon and I want to have a dinner instead of a party. My mom is throwing a party just to state that she did something for me when all I really want is a simple dinner with my immediate family.
I told her that since she wants to throw the party I don’t want certain foods(i.e. my grandmothers cooking). I don’t even like her cooking like that so why should we bother.
She then proceeds to say how she’s wants the people I invite to bring a dish….A DISH. This isn’t a potluck. What’s the point of having a party if you’re just gonna have people bring the food?
Then to top it all off my boyfriend offered to grill the meats at the party and bring burger meat ONLY. She wants him to buy the chicken, ribs, and burger meat by himself. I told her that you should be happy that he is offering to buy the burger meat and grilling for you and she told me that that’s my man and it’s his just to provide.
Please let me know what I need to do at this point. I already told people about my graduation date but I’m thinking about telling them that the party is not gonna happen because of the bullshit my mother is suggesting we do.

La Belle Tonki's Ma-Po Tofu Poutine
Okay, so hear me out before typing an offended response ;
I live in Montreal and there's a restaurant here called la Belle Tonki that made a Ma-Po Tofu Poutine during Poutine Week (a yearly celebration of poutine in which restaurants create new, funky recipes of poutine). I think they won last year with their kimchi poutine which I didn't try, so this year I went and tried the ma-po one, being a big fan of the original sichuanese dish.
It was good as far as poutine goes, but for something "ma-po", it was very disappointing. Nothing close to the classic mala taste that I was yearning for. For context, I come from Singapore and near my auntie's place there's a chinese restaurant that makes probably one of the best ma-po doufu of chinatown, if not the whole planet. Their sauce is spicy, numbing, and fragrant with huge undertones of ginger and chili bean.
The La Belle Tonki ma-po tofu poutine was nowhere near close to that, tasting more like a regular, american-style ma-po laddered onto fries and cheese instsead of rice, and that was about it. So I tried to make my own version of the fusion dish myself. Here is my first try :
First, knife-cut fries. The potatoes I had where small yellow baby potatoes, so I cut them in wedges instead of sticks. Boil them for 5 minutes in water, then mix with a bit of oil, salt, pepper and garlic powder and then 400F in the air-fryer for 15 minutes. Alternatively, i guess you could do 20 minutes in the oven too.
Ma-po : so there's a lot of different takes on ma-po. Each chinese auntie and grandma will have her own recipe, with sligh variations. But basically, you need doubanjiang (豆瓣酱), that we find under the name pixian douban in Canada, sometimes labeled as "Chili red bean paste" or something like that. If you can, avoid the Lee Kum Kee one. it's personal preference but I don't find it as good as other brands. You also absolutely need sichuan peppercorn. I think it was missing in the Belle Tonki's recipe, which is unfortunate because I can't imagine ma-po without those. You then need ground pork, garlic and ginger. For the "poutine" side of the dish, you need cheese curds (I actually have no idea what kind of cheese it is. Here in Canada you can buy a bag of cheese curds in every convenience store, but I guess if you need a sub, then any kind of hard, white cheese could do the job), and for the gravy I actually use a mix of tahini with a reduction of beef stock.
Finely chop garlic and ginger and set aside. In a pot of boiling water, add 1 tbsp of white vinegar and your tofu. Now the kind of tofu here depends on taste, but traditional (to my knowledge) are usually silken tofu or soft-medium tofu. You can cut it in cubes before the boiling too. The vinegar helps keep the tofu and prevent it from breaking, while also getting rid of the soury taste when it comes out of its water. I boil the tofu for 10 minutes on medium heat, and then strain and cover in cold water until I add it to the dish.
In your wok, high heat and go in with 1 tbsp of sichuan peppercorn (or according to your own taste. I like it very peppery). when it starts to smell like heaven and the peppercorns leave behind small splatters of oil you can put in a mortar and coarsely pound. In the wok again, put 1 tbsp of neutral-tasting oil (I use peanut oil), then fry a small amount of ground pork (not really weighing my own portions since I eat alone, but my guess is it's rougly 90-110grams) until it releases its fat (around 6 minutes). Then go in with the garlic and ginger until fragrant (1-2 minutes). At this point I like to add some chinese cooking wine (shaoxing) but I guess it can be skipped if you don't have that in your pantry. When the pork is cooked (and the wine eventually reduced), push it on the side of the wok and in the fat go in with 1 tbsp of doubanjiang (careful for the splatter, the red stains might be hard to remove!) and your grounded sichuan peppercorn. Fry for half-a-minute then combine with the meat, and add 1/4 to 1/2 cup of chicken stock. Reduce, and when there's only like 1 to 2 tbsp of sauce left you can add your tofu and continue to cook for 5 minutes, at that point you can turn off the heat.
Now, assembly. Get your fries in a bowl, sprinkle cheese curds on top. For the sauce/gravy, that's where I differ from the traditional poutine gravy. I put 1/2 tbsp of tahini in a bowl, along with one clove of grated garlic, a spoon of chili oil and a spoon of sesame oil, then 1/4 cup of beef bouillon (concentrated ? reduced ? I don't really know the exact name). And then 1 teaspoon of sugar and mix well. When pour your sauce onto the fries, and finish with the mapo and a lethal quantity of green onions.
Et voilà! A fusion dish that actually got me very skeptic at first when I heard about it, and while it was disappointing in the restaurant as I said, it was interesting enough to make me try to copycat it.

PS: on my picture, there's a little bit too much sauce. It drowned the mapo a bit, so next time I'll put in a bit less sauce (I actually made more than what I indicated in the recipe). Also this picture sucks. I don't know how to properly photograph food

With Anthony joining the black jackets in the lounge, he felt like he had fully proven himself after his meltdown to get eliminated in Season 11 and Van was happy for Anthony as he had worked his ass off all season and said the final 6 was a strong ass 6 and it was going to be tough to beat anyone in black jackets but he wasn't letting up now. Nick said somehow despite their being less drama that this had been tougher than all stars as he felt the pressure of being a favourite and Paula said she didn't actually expect to this well having been gone from Hells Kitchen for 16 years but was very proud to show she could still work a line after so many years away. Chef Ramsay welcomed back his black jackets and said to show how proud he was of them all getting this far, he reunited them with their families to give them a boost for the next service and said the reward for the next challenge would be spending time with their family with Nick saying this was the exact boost he needed to kick on in the competition. Ramsay said the next challenge was one of his favourites as it was time for the fusion challenge and Nikki said this was the challenge she was looking forward to as she had become a great fusion chef since season 19 and Paula said she could still remember getting a fusion dish on the menu in Season 5 so it was time to relieve her glory days of Hells Kitchen Season 5.
It was King of the Hill with the chefs taking a seat in the chair until a better dish beat them and was being judged by Chef Curtis Stone who said he was very excited for some amazing fusion. First up was Nick with his fusion of Indian and Spanish which he said wouldn't be his ideal fusion as he presented his cod which Stone said was a strong effort, the only issue being there wasn't enough Indian spice in there but it was a good dish as Nick sat in the chair. Next up was Paula with the fusion of Mexican and Japanese which Paula said would not be her first choice and her pork ended up being a bit muddled with flavours as well as having underseasoned daikon and Nick remained in the chair. Anthony was up next with a fusion of France and Thai, and unfortunately his hanger steak was overcooked as well as Stone describing it as a Thai dish with some asparagus lumped in there to make it French as Nick remained in the chair. Kanae was up next with a fusion of Thai and Spanish, and her salmon was praised as being almost perfect and the dish of the day so far as Kanae took a place in the chair to dethrone Nick and Kanae claimed the reign of Queen Kanae was beginning. Van was next with Chinese and Mexican and he also had a superb effort with his snapper with Stone saying the levels had gone up but said Kanae's dish just had the edge! Nikki was up last with French and Indian, and her duck was cooked perfectly as well as combining both cuisines superbly to give Nikki the throne and the victory!
Nikki said to not only get the 2nd black jacket but win the 1st black jacket challenge showed she was here for business this time round and she got to enjoy a lunch and day out with her family while it was ice delivery day for the other 5 black jackets and Anthony said he still thinks about when he overloaded Hells Kitchen with ice. The Chefs had no dinner service tonight so came back the next day refreshed and Chef Ramsay said there was a big challenge coming up in tonights dinner service as the chefs would be facing off against another team of all stars! Out came the first all star who was Season 21 winner Alex Belew and Alex was pumped to take on a team of new all stars and Anthony knew what was up, it was gonna be winners returning. Out came Season 19 winner Kori, Season 17 winner Michelle, Season 18 winner Ariel, Season 20 winner Trenton and Season 12 winner Scott Commings, and Van said this was serious game time tonight as if the all stars could beat a team of winners, it showed Chef Ramsay they had the best black jacket squad of all time. It was noted by Nick that when Scott and Trenton came out, Scott shook everyones hand but Trenton said he'd rather not as it was a competition and Nick said that gave him even more motivation to win tonight and maybe he might be finally able to beat Michelle in a season. Chef Ramsay said both teams could add 2 appetizers and 2 entrees to tonights menu and the black jackets added a tortellini and a tuna tartare appetizer as well as a NY strip and pork entree. The returning winners were less cohesive in picking a menu as Michelle and Trenton disgareed on the entrees and Ariel said it didn't matter what went on the menu as long as they all agreed as they got a shrimp pasta, a squid salad as well as a veal and fillet entree.
The returning winners had Ariel and Kori on appetizers and Kori did admit to being a little nervous to come back as she didn't want to tank on her return on Hells Kitchen but her and Ariel's first risottos and pastas came out perfect and with Michelle serving perfect scallops, Kori said it was just like riding a bike. Ariel continued to have a great service but Kori ended up 2 minutes behind on pasta somehow, and Ariel expected a bit better from Kori than struggling on such a simple dish but Kori did finally complete the ticket as the winners finished appetizers in quick fashion. Scott was happy to be on the garnish station and was extremely vocal as usual with Michelle on fish, and Alex and Trenton on the meat station getting the first 6 top out despite Trenton complaining that Scott doesn't need to count down every 10 seconds as they know what they're doing. Michelle had a strong service on fish but ended up ignoring Alex and Trenton's cry to wait as their steaks and lamb weren't ready to serve her snapper. Alex and Trenton did catch up eventually as the winners continued to serve nice entrees going into the last few tables. Despite claiming he was the prince,of steak, Trenton served an overcooked NY Strip and then served a rare strip on the refire and Alex didn't know how Trenton managed to mess up twice on his own dish. With Alex's help, Trenton got organized and the returning winners completed a strong service with Scott noting that was the easiest service he's had in Hells Kitchen.
Nick and Kanae were on appetizers for the black jackets and Kanae was confident of beating the winners as half of them are probably in their 60s by now and her and Nick worked very well together to serve delicious risottos and carbonara. Anthony on fish ended up dragging on lobster as he hadn't dropped it early enough and Ramsay said we should never wait for lobster as Anthony bounced back to finish the ticket. Nick and Kanae continued to have great services as the black jackets finished appetizers ahead of the winners and Van on garnish was pumped to have his best service yet to lead his team to victory. Nikki and Paula on meat served perfect fillets and duck, and the black jackets finished the first half of entrees in great fashion with Anthony serving nice salmon. Van though started dragging on mashed potato and was unresponsive to Chef Ramsay on a time on mashed potato as Van finally caught up with Paula and Nikki. Nikki continued to have a great service but Paula got behind a minute on lamb and was struggling to stay organized as she had 1 duck ready and 1 not before she finally caught up again, and Ramsay said the bounce backs had been strong all night and to keep it up. Anthony though on a late ticket, realized the skin had fallen off his salmon and had to refire and him and Van's timing went completely off as Anthony served raw salmon and Van mushy cauliflower! Anthony and Van did fight back and the black jackets completed a relatively good service.
Chef Ramsay announced that while 92% of the diners in the red kitchen were happy, the winners had 98% satisfied so the returning winners won and Nick said he still can't beat Michelle. The black jackets had to come up with 2 for elimination and both Kanae and Nick said Van was the first nomination for his issues on garnish but Van said he was by himself and everyone on garnish gets in the weeds at least once and was nominating Anthony and Paula as there was 2 on meat and still issues. Paula said it wasn't her best service but Anthony was the main issue and the team did finally decide on Van and Anthony as the 2 nominees. Despite Anthony pleading for one more chance after his first bad service, Ramsay eliminated ANTHONY for losing control of his station but told him to keep his jacket for being a force all season and said he was happy he invited him back. Van was relieved to survive after his first bad service but tomorrow he was coming back with a vengeance and Nikki said she'd had a couple of great days and was gonna keep it up for the rest of the season to win the whole thing.

2024.05.14 08:04 InsidiousDormouse Soprobec 200 possible systemic side effects, long-ish

I'm a 38 y/o female.
I was diagnosed with asthma as a kid.
Current meds Soprobec 200 two puffs AM, two puffs PM, ventolin as needed.
I moved into this flat in 2022, was fine before I moved and to begin with, then I developed worsening asthma symptoms as the months went on. I spent ages trying to fathom out the possible cause. I found no sign of mold or anything like that. then found out tobacco smoke from the man downstairs was coming into mine, it's been so bad on a couple of occasions my bathroom has 'fogged up' with smoke. I have tried everything, including having the council works department out to see if we could seal up any gaps etc, nope, no way of stopping it. He seems to vanish for long periods of time, leaving his flat empty. During these periods, my asthma symptoms vanish completely.
In response to my worsening asthma symptoms, in Jan 2024 the asthma nurses at my surgery decided to increase my ICS dose of Beclomethasone from 400mg a day to 800mg a day. Now I have high functioning Autism on top of all this, I am far from dumb or stupid, but anything to do with numbers seems to go over my head a lot of the time, even though I am better at maths now, amounts of things can still flummox me.
NOBODY told me this was considered a moderate to high dose and I should be carrying a steroid warning card, nobody, not once. I wrongly guessed it was only a few mg more than the soprobec 100 I was on. The Soprobec 100 was two puffs am, two puffs pm.
Now, since I have been on the Soprobec 200 at 800mg a day, I have developed some extreme and very disruptive possible side effects.
All possible other causes of these symptoms just got ruled out in a complete bloodwork which included diabetes, hypercalcemia, thyroid and iron deficiency, which are all possible causes of the things I have listed below, all tests have come back requiring no further action.
These are:
EXTREME, unquenchable thirst. I am drinking easily over four liters of water per day. I am also waking up several times a night for a drink, and if I go out I must carry water with me otherwise the thirst is VERY distressing. I feel dehydrated on a 'cellular level', like it doesn't matter how much I drink, I feel thirsty WHILE drinking water!.
Fatigue so bad I can hardly get up out of my chair most days and I am asleep by 9pm, where before I would like to chill with my dog watching a film or something till about 12pm. I have gone from waking literal miles through local fields and woodland with my dog, to barely being able to take her on the local park which is only across the road. I hardly ever go out, and if I do, I suffer immensely as my muscles start aching. I live upstairs and I am struggling getting up the stairs.
It feels as if I have lost all muscle tone all over my body. I no longer feel safe walking my dog as she is med size mastiff cross who is quite strong, she has almost pulled me over at times and I cannot even lift my kitchen bin bag or the laundry basket, I have NEVER had this problem before.
I have lost my appetite and have to force myself to eat every meal, often taking hours rather than minutes.
Episodes of vaginal thrush, something I have NOT had for YEARS, started when I went on this high dose of ICS.
My once 'perfect' periods are now very heavy and irregular.
I feel more angry than before. I had to seriously check my anger levels in my adult years, and developed a much more patient and stoical outlook to life, which brought my stress levels down massively. Since I went on this inhaler I have been snapping at people again, including my own family :(
Tingling hands. This can come on anytime, never had it before the inhaler.
A terrible hoarse voice and it feels like my voice is getting deeper and I am starting to sound 'male' other people have noticed this too.
Profuse sweating on my hands and feet. My hands DRIP with sweat, to the point I hide them from people. Never happened before this inhaler.
Salt and red meat cravings. I am not a big fan of either, and due to heart problems in the family I keep my salt intake low. Other day I just felt compelled to walk into the local coop and buy pork loins and a pack of beef biltong, things I haven't eaten in many moons. I recall saying to myself 'this is SO out of character for you'.
Episodes of nausea, two episodes of vomiting in the morning over two months (not preggers before anyone asks lol) which were not related to anything I had eaten.
Dizzy spells and almost fainting, usually happens if I push myself to do even basic stuff like household chores, which I usually enjoy doing.
I know these are listed as 'rare' side effects, but unusual thirst, tiredness and weakness is mentioned both in the patient info leaflet with the inhaler, and in various other information regarding side effects, such as this article: https://www.mayoclinic.org/drugs-supplements/corticosteroid-inhalation-route/side-effects/drg-20070533?p=1
I take the inhaler via a spacer, my technique is good, I've been doing this whole asthma game all my life, so I am pretty ofay with it all now lol.
I have had a battle over this inhaler with my GP and other asthma services as well. They just do NOT believe ICS can have systemic side effects, in contradiction to what the drug manufacturers say on the leaflet. I think I am going to have to go back to the GP and stand up for myself, which is not something I am good at at all, and present them with this information leaflet, which actually tells you to consult your doctor if you develop any of them!.
Would it be worth asking to try the same dose, as I do not want to risk withdrawal, I have experienced this before from ICS, but on a different steroid with a different inhaler?.
Is there any more bloodwork I could ask for, perhaps adrenal function or cortisol levels?.
I am at a loss, I need to control my asthma, but I also need to be able to live!.

I need advice! I am doing a lot of ribs this Sunday for a family dinner. I have a Yoder 640s pellet smoker and I just purchased their 3-tier rack insert. I have cooked a lot of ribs, but never in this quantity at once. I did a test this last weekend with the new 3-tier rack with a couple slabs - looks like I can do about 9 racks in total on the 3-tier rack
I have always normally just cooked ribs on the 640s top shelf. With 3 shelves, should I rotate? Swap the ribs from the bottom shelf to the middle shelf? Since ribs are about a 5 to 6 hour cook - how often to swap? I will not be wrapping them.
Additional info: These will be spare ribs and I will trim to St Louis style. And any “open” room will likely be filled with the large trimmings. I will be following Meatheads best rib recipe. I will be using a smoke tube with cherry pellets. I’m picking up a case of spare ribs from Sam’s this week.

This question may sound odd and/or incredibly obvious but let me explain. I did not grow up in a home that made sandwiches (outside the occasional basic grilled cheese), It was just never a thing. We cooked a dish for every meal we ate, we only ever ate sandwiches when we went out (aka from a local diner or subway or something like that) every once in a while. I never took sandwiches to school for lunch, it was always a meal lasanga, or chicken and rice, or pasta or something like that and so because of this I never truly learned how to make a good sandwich. I know the basics - you put things inbetween 2 pieces of bread prefereably some vegtables, a condiment or 2 and a lot of people like meats etc. but I just find it so increadibly challenging to know how to build a perfect sandwich at home that tastes good. What would be incredibly helpful would be an inforgraphic or description of options and how to layer them like types of bread and how they impact the flavour and texture of the sandwich, ways to toast or prepare them (grill vs a panini press, vs stove top or whatever), types of condiments, types of veggies and how to prepare them (pickled vs raw and chopped finely or sliced?). Types of cheese? do you melt it everytime or are there instances where its better to just leave it? Types of meats ( I have never truly tried deli meat, not something my family ever bought growing up and as an adult i just never felt the interest to dable but if there are any must tries please let me know - no pork!), and Lastly I am a major sauce girly so condiments (specifically when and how to use them?) i make a lot of compound butters and stuff which i think may be nice on a sandwich but again the question comes is butter used in your sandwiches and if so how do you judge when to add butters? - This question stems from reading somewhere that you use mayo as a basic condiment to act as a barrier to prevent your bread from getting soggy? (which i thought was brilliant and never knew prior to today lol) Anyway, any help would be very much appreciated!

2024.05.13 19:17 dz1986 Homemade bone broth/stock - perfect post surgery food

Hey just thought I'd share this home remedy (not to replace Metamucil+Colace) for constipation. I've always kept leftover bones from any meat I cook in the freezer for making stock. Generally I separate pork/beef/lamb bones in one container and chicken in another so I can make two different stocks. I accumulate these pretty quick because I buy all my chicken bone-in and tend to eat a lot of beef/pork ribs.
Anyway, homemade stock I have always found to be an ideal laxative and that's certainly holding true post-fistulotomy (had my surgery this past Friday and first BM this morning). Whether that's just drinking it straight, or if you sub it in for water when cooking white rice it has the same effect. Not to mention bone broth has a ton of minerals/collagen that I expect is good for the healing process.
I think you have to make it homemade, the stuff you'd buy in a store (unless you buy it frozen from a butcher that makes it) is going to be so extensively filtered/strained that you lose a lot of suspended proteins that cause it to be a laxative. Those same suspended proteins is what causes bone broth to spoil very quickly so you need to be careful in prep to be food safe.
Instructions: - fill a stock pot with as much bones as you've got (I've got a big stock pot and fill it to the brim) and some whole peppercorns
- cover with cold water and bring to a boil, skimming foam that collects on the surface continually (about an hour)
- once it hits boil, immediately reduce to the lowest simmer you can
- simmer for as long as you can (I go for about 10 hours, longer would be better and you definitely wouldn't want to go much shorter) adding water as needed to keep the bones covered. I pour in boiling water from a kettle so that I don't have to turn the heat up on the stock pot to get it back to a simmer
- in the final hour, add a couple onions, head of garlic sliced in half, couple carrots, couple pieces of celery, parsley if you've got it and continue simmering
- strain out the solids through a mesh strainer and/or cheesecloth
- put it back on the heat and reduce by half
- take off the heat and add a bunch of ice to cool it rapidly. This is key. You do NOT want to let the stock sit out to cool, nor can you just throw it in the fridge. The stock will stay in the bacterial growth zone for way too long if you don't ice it down (which is why you reduce it first since you'll be diluting with ice) and with all the suspended proteins in it it's like the best ever environment for bacteria to grow in. Add enough ice to get it chilled.
- once you've cooled it down with ice, put it in a large container in the fridge overnight.
- the next day, skim any accumulated fat off the top and then you can portion the stock into individual containers to throw in the freezer. I keep used plastic containers for this whether thats yogurt containers or ones from takeout food.
- stock will only last a couple days in the fridge once unthawed but personally I wouldn't risk that. I take it straight from the freezer, rehheat and use immeadiately.

I've just finished 28 days on carnivore. 43M. Diet before was a typical Australian/US style diet. Lots of carbs from bread, potatoes, chips, fries, sugars, processed foods and such.
For context, I went 100% full carnivore, no period of change. My foods consist of: Beef (Mince/Ground, Rib Eye, Chuck, Shortribs), Pork Belly, Bacon, Chicken wings/legs, Lamb (Chops, leg, fatty parts), Eggs, Grass fed butter.

I just recently upgraded from an electric wood chip smoker to a CharGrill Offset and after using it for the 3rd time today, realize that all my smoking knowledge came from running on "easy mode" and need any pointers or guidance you can provide for temperature regulation, sealing leaks, meat placement, etc.
The last pork butt and 2 sets or ribs I've cooked have come out dry even with water baths on the bottom and adjusting how close the meat is to the firebox.

Couscous and sandwiches, stew and pasta salads, miso soup and tteokbokki; countries around the world vary in the ways they provide school lunches, from universally free, to income-based, to no standard system at all.
The New Zealand government has proposed a full redesign of the school lunch programme to be crafted over the next two years.
Ka Ora, Ka Ako, the current lunch programme targets the top 25 percent of students facing the biggest economic barriers. This is determined via the Equity Index, which replaced the decile system.
Just under 1000 schools participate in the programme, accounting for 40 percent of all Kiwi schools and 27 percent of all students.
Before the new programme was introduced, the government was looking to cut costs over the next two years, allocating $480 million to the scheme, which will fund 10,000 pre-schoolers but also result in a menu change from hot dishes to fruit, muesli bars and sandwiches.
RNZ looks at how other countries deliver school lunches for their students.

Free school lunches for all

Finland became the first country to provide free school meals to every child between the ages of 6 and 16 in 1948. Sweden followed suit, serving free meals to children aged 7 to 16, a scheme enshrined in legislation since 1997. There was no specific targeting based on family income, rather, meals were universally free.
South Korea recently introduced the initiative in the last decade, expanding the programme where it was offered in just one province in 2011 to the entire country. A national referendum was held on the scheme and now free lunches are provided to all students from kindergarten through high school.
The central government covers around 67 percent of the cost, and local governments pay for the rest. In 2022, South Korea's Ministry of Education allocated around 7.53 trillion won (NZ$9 billion) to the school meal budget, which included the service's operation costs, nutritionists, ingredients and equipment.
Portion sizes were based on students's ages to provide the appropriate calories. Meals included dishes such as noodles, stir-fried meat, suyuk (simmered pork), tteokbokki (rice cakes cooked in a spicy sauce) and bibimbap (rice with vegetables), which provide protein, vitamins A and C, and riboflavin or vitamin B2.
All three countries believe children should have access to healthy food and be encouraged to build healthy eating habits without having to pay.

2024.05.12 22:03 novahcaine Hey beautiful souls, Mothers day sucks so I wanted to share with you all what I decided to do today instead of lay in bed and rot comfortably.

First of all I read some posts here about some celebrating themselves for mothers day and that kind of helped the sadness and emptiness. Then I finally got up and out of bed at 3pm and did the dishes that had been piling up for three days. I also pulled out some boneless country style pork ribs that I plan to bbq for myself in the oven. I wrote in my journal about how I so desperately want to relapse but can't and won't. (2 years clean) I also wrote about how mad I am that I can't seem to get the help I need no matter how much I try so apparently I need to start being louder for myself which is really hard. I keep imagining lighting up a cigarette or vaping or something but I quit all that too and it's been really hard not having any of those crutches to fill the emptiness. I've been having an extra hard past couple days and been isolating myself in bed because of it. I might shower today but so far that's at the end of my list. Mostly I just want to try to have an ok day for me and for others who are struggling. Today my purpose is to eat bbq pork and probably do some jigsaw puzzle of candied popcorn.
Hope you guys are ok out there and I'm sending comfort your way in the form of a fluffy purple cloud with sparkles in there. 💜☁️✨
