Pascha; a Reminiscence from the GULAG

Pascha; a Reminiscence from the GULAG
Should at any time we feel ourselves to be alone, or for the secular world to be so overwhelming and powerful as to render spiritual life redundant, we can reflect on the difficulties of our predecessors and be inspired by their cheerfulness and joy in the face of tremendous privations.
As mentioned before, the mid 1920’s was a period of ferocious attacks upon the Church by the Bolsheviks, both clergy and laity. Many of the faithful were executed or imprisoned in the Gulag for extended periods on nonsensical charges. The Solovetsky Island concentration camp (Solovki for short), formerly a remote monastery on an island in the White Sea region of Russia’s far north, was reserved for particularly “recalcitrant” prisoners, in particular priests from throughout the Soviet Union, including the newly annexed Georgian Soviet Socialist Republic. Conditions were brutal and fatalities commonplace.

This letter from Bishop Maxim of Serpukhov, a Russian priest, is a moving testament to the resilience and cheerfulness of interned clergy during tremendous oppression. The Paschal context of his letter is poignant for us this week.
At Solovki we had several secret Catacomb “churches,” but our “favorites” were two: the “Cathedral Church” of the Holy Trinity, and the church of St. Nicholas the Wonderworker. The first was a small clearing in the midst of a dense forest in the direction of the “Savvaty” Assignment Area. The dome of this church was the sky, The wails were the birch forest. The church of St. Nicholas was located in the deep forest towards the “Muksolm” Assignment Area, It was a thicket naturally formed by seven large spruces. Most frequently the secret services were conducted only in the summer, on great feasts and, with special solemnity, on the Day of Pentecost. But sometimes, depending on circumstances, doubly secret services were celebrated also in other places. Thus, for example, on Great Thursday of 1929, the service of the reading of the Twelve Gospels was celebrated in our physicians’ cell in the 10th Company, Vladika Victor and Fr. Nicholas came to us as if for disinfection. Then, catacomb style, they served the church service with the door bolted. On Great Friday an order was read in all Companies informing that for the next three days no one would be allowed to leave the Companies after 8 p.m. save in exceptional circumstances and by special written permit of the Camp Commandant.
At 7 p.m. on Friday, when we physicians had just returned to our cells after a 12-hour workday, Fr. Nicholas came to us and told us that a Plashchanitsa (burial shroud with the image of Christ) the size of one’s palm had been painted by the artist R. The service-the rite of burial–was to be held and would begin in an hour. “Where?” Vladika Maxim asked. “In the great box for drying fish which is closest to the forest, next to Camp N. The password: three knocks and then two. It’s better to come one at a time.”
In half an hour Vladika Maxim and I left our Company and started out for the indicated “address.” Twice patrols asked for our permits. We, as physicians, had them. But what about the others?–Vladika Victor, Vladika Ilarion, Vladika Nektary, and Fr. Nicholas? Vladika Victor worked as-a bookkeeper in the rope factory. Vladika Nektary was a fisherman; and the others weaved nets. Here was the edge of the forest. Here was the box, about nine yards long, without windows, the door scarcely noticeable. Light twilight, the sky covered with dark clouds. We knock three times and then twice. Fr. Nicholas opens. Vladika Victor and Vladika Ilarion are already here… In a few minutes Vladika Nektary also comes. The interior of the box has been converted into a church. On the floor, on the wails, spruce branches. Several candles flickering. Small paper icons. The small Plashanitsa is buried in green branches. Ten people have come to pray. Later another four or five come, of whom two are monks. The service begins, in a whisper. It seemed that we had no bodies, but were only souls. Nothing distracted or interfered with prayer… I don’t remember how we went “home,” i.e., to our Companies. The Lord covered us!
The bright service of Pascha was assigned to our physicians’ cell. Towards midnight under various urgent pretexts arranged by the section, without any kind of written permit, all who intended to come gathered, about fifteen people in all. After the Matins and Liturgy, we sat down and broke the fast. On the table were Paschal cake and cheese, colored eggs, cold dishes, wine (liquid yeast with cranberry extract and sugar). About three o’clock we parted.
Control rounds of our Company were made by the Camp Commandant before and after the services, at 11 p.m. and 4 a.m. Finding us four physicians headed by Vladika Maxim, on his last round, the Commandant said: “What doctors, you’re not sleeping?” And immediately he added: “Such a night…and one doesn’t want to sleep!” And he left.
“Lord Jesus Christ! We thank Thee for the miracle of Thy mercy and power,” pronounced Vladika Maxim movingly, expressing our common feelings.
The white night of Solovki was nearing its end. The delicate, rose-colored Paschal morning of Solovki, the sun playing for joy, greeted the monastery-concentration camp, converting it into the invisible city of Kitezh and filling our free Souls with a quiet, unearthly joy.

Carrot cake bars free
Hello, I bake and give it away. I am in Kennewick and am pick up only. If you see this post at least one of the items are available to pick up.
I accept donated ingredients, but it's not necessary to pick up something. If you donate expired/rotting food I will block you.
I do not do special requests, bake sales, and non profits, so don't ask. If you see something posted you want to pick up to give to a charity that would be great.
But do not try to arrange something for me to make things for a specific reason. My anxiety cannot handle it.
Please do not come here and suggest I take a class, or sell baked goods. That is ablist, unsupportive, and upsetting.
I am autistic, and am the only one doing this, so please be kind.
Today, I have carrot cake bars to give away.
They have coconut in them, grated carrots, walnuts, and raisins.
Also cinnamon, nutmeg, and ginger. And the cream cheese frosting leftover from the cupcakes.
It's one pan for one household.

2024.05.16 08:38 xxx_R1LEY_xxx Great River Brewery reopens bigger and better in the historic Motor Row District in downtown Davenport since the 2019 flood.

Great River Brewery will host its grand opening at 4 p.m. Friday, June 7, at 332 E. 2nd St., Davenport, according to a news release.
The event is open to the public and will feature giveaways, live music, and a ribbon cutting ceremony.
Great River Brewery is one of the many downtown Davenport businesses to be hit hard by the flood of 2019. Before the flood, the brewery was home to a vibrant community of beer-lovers, local live music, and downtown events, the release says.
After nearly five years, the brewery is getting a facelift and coming back with brand new features, and fan-favorite beers.
Part of the renovations include turning the historic motor-row garage – what used to be GRB’s brewing floor – into a 100-seat restaurant, featuring pizza, pretzels, and craft beer.
“We have been so grateful for the support of the community even after all these years.” says Paul Krutzfeldt, GRB’s master brewer who opened the original location in Iowa City in 2004 before moving to Davenport in 2009. “We can only hope to honor our community through re-opening bigger and better, and we think everyone will be pleased with the new facility, and all the work we put into it.”
The brewery planned to open this week, with finishing touches done before the party on June 7.

Chocolate tahini cake with chocolate tahini buttercream!
My first attempt at adding tahini to desserts and it turned out delicious! For some reason I didn't realise that if I'd add coffee to the cake batter like the recipe says I would end up wide awake as coffee in cakes still has caffeine, my mistake! Lovely recipe: https://www.thebrickkitchen.com/wprm_print/5247

2024.05.16 05:36 AwkwardLameDude Does anyone know what brands like Halo Top put in their cake & brownie mix ?

They always have really good calorie-food ratios, and usually low-mid protein. Like 900 for a whole pan of brownies and 170 for a mug cake.
I feel like there should be a way to make it homemade, but also I wonder if it’s just made in a lab and impossible. Any similar macro recipes?

2024.05.16 04:48 Restlessly-Dog The Bumblebee Canned Salmon Experience

Bumblebee wild caught sockeye salmon in a 14.75 ounce can was on sale in my grocery store for just over a buck. It had the MSC badge on it. How could I pass it up? I bought a couple cans.
https://www.bumblebee.com/products/salmon/bumble-bee-red-salmon/
The amount of fish to liquid was quite good. It came with some bones, but not a lot. But how did it taste?
OK straight from the can, but this is definitely for cooking. I'll give them credit though for maintaining a fairly pure salmon flavor through the canning process, much better than most mass market canned tuna. Not what you'd get from fresh cooked salmon or well smoked salmon by a long shot, though. But respectable and lacking strong off flavors. A nice change of pace from other canned fish.
I experimented by trying to sub salmon one for one into a crabcake recipe, with a minimum of filler and egg, coated lightly in breadcrumbs, and fried.
The verdict? OK, but not great. Crab holds its shape better and I think canned salmon would benefit from more interesting-flavored filler, rather than less. Bumblebee has a number of recipes on their website which look awfully dubious to me, like salmon kale pesto pasta. But this one looks like it could be a winner.
https://www.bumblebee.com/recipes/spicy-salmon-cakes/
I think this would also be good in a salmon salad replacing tuna. It also has potential as a topping for pasta added at the last second, but probably not cooked in a sauce.
For a buck-ish it's definitely a good thing to have in a cupboard. MSC approved, decent flavor, quick to prepare, and some good nutritional value, it's worth thinking about.

Weird bread-what did I do wrong?
I followed a random recipe I found online to make bread for sandwiches. It came out kind of cake looking? The dough seemed really wet but I just kept letting it proof, adding flower periodically. What did I do wrong? And how do I get it to be one of those breads that is crusty on top and airy/chewy in the middle?

2024.05.16 04:25 hesperoyucca The Shredded Carrot bakery in Alhambra is changing ownership

The Shredded Carrot announced on their Insta that they are changing owners (https://www.instagram.com/theshreddedcarrot/?hl=en). Really bummed to hear this since I liked the current crew. Shredded Carrot makes my favorite carrot cake in the Southland, having a walnut concentration and moderate sweetness I find ideal. Their hummingbird cake is also excellent. I'm hoping the new ownership does not change up their recipes too much.

Sister in law loves biscoff so I made her these chocolate cupcakes with biscoff buttercream. I’m new to cake decorating but this buttercream was so nice to pipe. I was also soooooo delicious.
Any tips for more professional piping?

2024.05.16 02:04 stockys7 Simple Coconut Flour Recipes

Rather use applesauce than eggs, but can save the whites (yolks oxidize with heat).
A mug cake recipe is ok, understand the issues with lack of protein in gluten-free flours.

2024.05.16 02:03 mike-smit Focaccia: tips for second go-round?

Focaccia: tips for second go-round?
Made this focaccia last week via a Fleischmann's yeast recipe. Although I was reasonably pleased with the overall taste and the lightly crisped top crust, the inside texture was a bit dense and cake-like. Perhaps I could've left it cook a few more minutes (I'm chronically afraid of overbaking). Any tips for improvement?
Fwiw: A quick search yielded every type of suggestion from hotter water, more water, proof overnight at room temp instead of overnight in fridge, different dough folding techniques, etc. Curious what y'all think.

2024.05.15 22:31 grendel2000 How could I convert this pie recipe to a gelato or ice cream?

Since we were kids my brother and I Bothe preferred my mom's "lemon icebox pie" recipe to a cake. It's a simple and DELICIOUS recipe! I just got my Creami Deluxe yesterday and I tried my first creation TODAY (Kinda a Pina Colada thing and it's AMAZING!) and it got me thinking more about what I can make with it.
I'm not experienced miking ice cream or gelato but I notices in the gelato recipes that they are custard/egg based, and then I realized this lemon icebox pie filling seems similar to some degree and I started wondering about how to make it into a frozen something (not sure if it would be gelato, ice cream, or what...). The recipe for the pie filling is as follows (it goes on a simple graham cracker crust and has meringue baked on it but I won't bother posting those parts since they don't seem applicable):
  1. Separate your eggs with whites in one bowl and yolks in another.
  2. Combine the egg yolks, lemon juice, and sweetened condensed milk in a large bowl. Pour into crust.
You then top it with the meringue and toast that, then let it cool & gel in the fridge.
Any suggestions? Maybe I should make a batch as-is and try the standard Creami process of freezing it?

2024.05.15 22:02 Aggravating-Drawer39 dense cake!

hello all,
i'm a bit of a novice when it comes to baking, but i like surprising people i love with cakes (though i have only done it a few times).
today'a attempt was a rose water olive oil cake, following this recipe:
dry ingredients: - 270 g flour - 150 g sugar - pinch of salt - 3 teaspoons baking powder
wet ingredients: - 195 ml soy milk - 90 ml olive oil - 1 tablespoon rose water
i mixed the wet and dry ingredients separately and let them sit for 10 minutes, then i combined the two by adding wet to dry. i baked the cake in the oven on 180°C for ~40 minutes.
all seemed well but when i tasted it, (after patting myself on the back for not overdoing the rose water) was hit with the fact that the cake was super dense.
based on the description, could anyone give a diagnosis?? id love to retry this to make it better for when i can actually give it to my loved one.
thank you for your help and enjoy the rest of your week!!
