I was making notes for my WIP, involving a baker and her relationship with a prince) and one of the things I like to do is plan and prepare my character's favorite foods. I'm not sure why but it helps me get into the mood. Also I considered being a pastry chef at one point of my life (had to stop because I was losing fine motor skills) so I needed the practice.
So far, I'm adapting my world famous chocolate cake (my late partner jokingly proposed to me after I made it for him the first time, he said that he would marry a woman who made him the best chocolate cakes whenever he wanted) and maybe playing with Sansa's Lemon Cakes, maybe making them into tarts topped with either whipped cream or Italian meringue.
Does anyone else do something similar to get into the mood if you will?

Bakers, I desperately need help. My daughter and I are reasonably skilled bakers. Wedding cakes? Easy. Macaron? No problem. Breads, biscuits, pies? Check, check, and check. The one thing we can't master, no matter how hard we try, is the chocolate chip cookie. I feel like we have mucked about with every possible variable, one at a time: butter vs margarine vs crisco vs a mix; dark pan vs shiny; mixing with a fork vs hand mixer vs stand mixer; room temp vs cold ingredients; weight vs volume for ingredients; resting the dough vs not; convection vs not. It doesn't matter what we do, we cannot recreate the texture of my husband's grandmother's cookies. They were heaven--someone once described them as having the texture of kinetic sand, which sounds weird, but they were sort of slightly cakey and a little puffy and soft with a little tiny crisp at the edges. She swore that she only used the recipe from the Toll House package. Please help! How do I get a cookie with this texture????

Hi! Im making a Marquise Cake for the 1st time, and it only has 5 ingredients. I know I need to use top quality ingredients so the flavors shine through, is there a brand of 70% chocolate you’d recommend?
From my research, it seems Valhrona or Guittard are highly rated on this sub. I’m in the USA and was hoping to find something high quality that would be available at Whole Foods, Costco, local grocery stores etc. I suppose I could order online if it was worth it, but that seems like overkill. I’m not a baker, so idk if the difference in taste is that noticeable to warrant custom ordering ingredients online.
For context, I’m trying to impress a date whose favorite dessert is chocolate cake. Thank you!

2024.05.20 23:12 Alarmed-Stage-7066 Stardew Valley Cookbook recipe reviews

Because of whimsy & completionism, I've decided to cook every recipe in the new cookbook. I thought it would also be fun to post "reviews" of each recipe for additional whimsy and to encourage/help other players who may be newer to cooking. Initial, general thoughts on the cookbook are: it is gorgeous and anyone who loves Stardew and cooks AT ALL would enjoy having it. The recipes seem thoughtful and well-crafted. It seems targeted for a more intermediate cook or an adventurous beginner. If you haven't cooked before, this could make a fun first cookbook if you're willing to do some work to learn new skills and try things out. The instructions do a good job of hand-holding without any steps left out. They are (obviously) mostly made from fresh, whole ingredients and most of them are a little more work than a usual weeknight dinner. Scratch cooking with a side of game lore, who could ask for anything more?
I'm going to follow each recipe exactly as written with notes of any substitutions (e.g. I'm not sure if I can source fiddlehead ferns where I live) I plan to do it with teen daughter and we've created two rating systems. Both ratings are completely subjective and just for fun. I'm a hobby, but very experienced (*), cook/baker. Teen is about to turn 16 and obviously not as skilled. Between the two of us we should be able to give you an idea of how hard a recipe would be.

First rating scale: Grandpa's candles, This is how much we (again, subjectively) enjoyed eating the dish.
Second rating scale: Tool rating Complexity/difficulty/time consumed. On a scale of copper, iron, gold or iridium, how much work is this recipe? The rating might reflect a trickier technique or just a lot of steps/time involved.

Afterthoughts

Just a little haul today since I unfortunately didn't get a midweek Ibotta bonus. This is going to make finishing my big bonus a lot harder, especially since the weekend bonuses have been terrible lately. I did grab some of the Mac A Roni at $0.50/each to work towards the big bonus, and I'll probably pick some more up tomorrow as well when I go by. I left it off my haul since it isn't a money maker on its own, but there will be a slight profit once I finish my bonus.
If I get a good weekend warrior bonus, I might head out this weekend to finish it.
 
Wal-Mart is switching out a lot of their stock right now. I'm seeing markdown prices pop up everywhere. Quite a few coffees, teas, and razors have IB rebates, but unfortunately my store was sold out of it all. There's also one of those hello toothpaste on IB + SB + SK
 
Note: The Social Nature rebate for the goat milk only let me select Amazon or Visa. Not sure if this is a mistake or an intentional change, but just be aware of that if you're going to get it.
 
Unrelated to the haul - My profits from today went towards my plant addiction.
My store had a ton of those mini rose bushes. I usually don't get them, but I haven't gotten a plant in a while, and I saw one with these really beautiful orange flowers with a hint of pink on the outside, and it also had these peachy roses. I couldn't just not get it. Here's hoping I don't kill the thing, because I definitely didn't consider the fact that I don't have a sunny enough window for it until after I was already home...
 

Time Spent

I spent around 10 minutes planning my haul while I brushed my cat before realizing I didn't have an IB bonus. So I stopped there. I was in the store for about 45 minutes, but a good 15 of that was seeing if there were any better roses. As usual, that time also includes my regular groceries, and I was walking SUPER slow today because the cart I picked out started screaming any time I walked at my usual pace after I got the first few things in the cart.
 

Food From Deals

Here's an idea: Mix up a white cheddar Mac a Roni, with your choice of ham, sausage, chicken, pork, or one of the vegan meat alternatives. Add a little soy sauce, and some green peas if you wish. You could even add some extra butter and milk (or plant based milk) to make it a bit creamier. Serve with a slice of buttered toast or some Jasmine Rice. Perhaps make a little Banana bread for dessert. (Note: Everything mentioned has Ibotta deals available.)

2024.05.20 09:12 throwaways_all_day Dog ate chocolate cake

We just discovered our 38 pound female terriebeagle mix (8 years old) just ate two big pieces of plain chocolate cake. It was from a standard cake mix box (Duncan Hines/Betty Crocker, etc), and it’s 3am where I am. This was maybe 45 minutes ago at this point when we heard what was going on.
All the calculator websites don’t allow for calculating cocoa powder ingestion when it’s a percentage from cake mix - only when a dog eats dry cocoa?
Essentially is this diluted enough that we shouldn’t worry?
UPDATE: It’s been more than 12 hours at this point and she’s shown no signs of distress. No issues with her poop (solid, regular) and no vomiting. Only thing we noticed is she may have drank a little more water today. I’ll update again after a full day.
I wanted others to be able to see this same thread like I was looking for last night. I understand if she had consumed any amount of dry cocoa and/or high content chocolate baker’s/dark I wouldn’t have hesitated to bring her to emergency or to call pet poison control, but I was looking for similar situations where it was a regular baked good that clearly wasn’t concentrated. I’m not looking to insult anyone’s expertise, but to charge $99 for a phone call seems insane to me. I wish the calculators were updated for real events, and I hope this helps others, but obviously, each person’s situation will be different and they should use their best judgment.

As a single person, making a big cake or a full tray of brownies at one time is never ideal. I love that I can make a batch of cookie dough, portion them out, stick them in the freezer, and grab one or two (or three or four) when I get the urge. A freshly baked dessert at my fingertips without having to start from scratch every night.
But I need to branch out from the chocolate chip cookies, no matter how delicious they are. Do any of the seasoned bakers in here have ideas foexperience with baked goods that I can make a big batch of, individually portion, and freeze? For instance, would brownie batter work just as well as cookie dough? Someone told me that cake batter wouldn't work very well because of ice crystals ruining the texture after it's baked. Is that true?
Any tips are appreciated. Extra credit if you have a recipe to share!

  1. How many cake pops can you get out of one regular sized cake recipe?
  2. Do you prefer to start with a super light, moist cake or a more dense cake?
  3. Do you mix frosting in with the cake before rolling or not? What are the benefits either way?
  4. Typically when I make anything chocolate coated I use Ghiradelli melts from the grocery store and thin that with Crisco. Will this method work for cake pops and do you recommend something other than a melt (I have worked with Merkins and that's good too. It's just that I can get Gheradelli at several local grocery stores).5. I have never looked into costing cake pops. This would basically be a donation to a local event handing out school supplies in under privileged areas. They are looking to have all vendors at no more than $1.00 per item. So I'm wondering if it is possible to make a cake pop for less than $1 in ingredients. The time is donated. This is a super small town and this is the downtown 2-block strip of store owners putting the event on. My mom owns 2 of those stores and is the one inquiring, so I'm hoping to do anything possible to help.

So I have this baptism coming up for my nephew, and the colors are white, silver, and blue. I am in charge of the dessert table. I’m supposed to be dipping strawberries, pretzels, and Oreos into chocolate but need to make it blue. Is it possible to melt chocolate melting is it possible to melt chocolate wafers into a different color even though it’s brown!?
