For Mother's Day, made two of the "Finland" recipes by Chef Easter, the Tuna Tartare (complete with his presentation), and the Zucchini/Carrot Tart Pinwheels. Mwah, chef's kiss, especially the Tuna which was flawless. One note is that my market was out of fresh oregano so I used dill, which I know was a favorite of Greg's and he at one point planned to write a whole book about just dill! So I thought it was apropos. Extremely elegant first course, strongly recommend. The zucchini/carrot was also good but simple; more beautiful that tasty, perhaps a good plating element for a beef dish (like a steak or similar). Anyway, a home run as usual from Chef Greg Easter

2024.05.15 22:01 fickentastic Any idea what could cause my cutlets to stick together ?
I've been following a recipe for cutlets. Pretty simple but they are tasty. It's a can of mashed chickpeas, some mushroom seasoning, nooch, onion and garlic powder, 1 1/2 cups of VWG and enough water to bring it together. They get steamed before breading and frying. Anyway, I was placing them in the steamer, some overlapping but no problems with them sticking. I decided to make a minor change by adding broth (the no chicken bouillon). Steamed them (gently) and when I went to remove the overlapping parts were glued together. I used a knife to slice them apart. They need some time in the fridge before the breading / frying. I figured maybe some wax paper to keep them separate but they stuck on to the wax paper like super glue. Is it possible the broth is causing this because when I was using water everything was fine.
I made some similar style but 'steak' flavorings and used broth in it and no issues. And that one contains soy sauce and tomato sauce which I'd think would be sticky but no issues, steaming or refrigerating.
Any ideas ?
edit: I should say that the amount of water / broth I add is about 3/4 cups.

I used one of these steaks yesterday for beef and broccoli.
I used this recipe ¼ tsp Baking soda 2-3 tbs Water 2 tbs Cornstarch And let it sit for around 30 minutes or so.
It was still pretty tough. It's very possible I overcooked it.
Today I want to make some tacos with this cut. Should I retry this recipe? Try something else?

And the nutritional info on the pack reads 73% daily value of sat-fat in one 142g burger. A 152g fresh patty lands you at 60%. Know your food!

And isn't solid syrup just solid sugar? lol....
- T-bone/Wing steak - $6.99 per lb -- This might seem like a good deal, but it's ungraded beef. Why pay this price when metro has AAA-grade steaks for a smidge less?

- Produce Price Rating: Medium-low with very competitive specials on a shortened flyer. The small flyer is nice because it doesn't uselessly feature $6 heads of cauliflower and extremely high-price items that are either a confusion on the consumer, or an insult on the injury of not being able to afford supreme quality items.

Promptly after that diagnosis, he stopped seeing her and denied the diagnosis. He has instead likened to the idea of being autistic without a professional evaluation and for sure has adhd though I understand all three can often coexist/be confused for one another etc etc. My issue lies in his inability to coherently comprehend what I say without perceiving it as an attack or manipulating it as if I am saying something else entirely. Additionally, he gets violent and hurts himself or damages property while he blames me for something as seemingly harmless as me asking if he added water to a recipe or casually asking if he’d done a task he said he’d do two weeks ago (that made him flip a chair and also threaten to stab himself with a steak knife). I think I need more resources to understand if reactions like this is common in BPD, or if this is even what he has because I feel like i’m the one who is crazy. I’ve neutrally brought up a conversation about how he might reconsider his medication because of his outbursts (lots of broken glass in our house lately, and he even punched the screen of my imac, my traumatized brain can’t even begin to tell you what triggered that) but now he dismisses me and then walks away and then screams “Don’t talk at my back!” or reengages in the conversation by making up what I said and when I correct him, he yells “I don’t want to talk to you! Stop baiting me into conversation!” and i’m left baffled and at a complete loss. He also has had trouble holding down jobs (he’ll make up a reason why it’s suddenly abhorrent then jump ship) and recently admitted to “his dreams of wanting to be a teacher” and went on to say he has “connections to teach a college course” and when I asked if he’s ever taught before (which, to my knowledge, is a big no), I suggested maybe he should try and get more opportunities to do that, to which he responded, screaming that I was “belittling his dreams”, and the next day he argued that he meant PLANS and not DREAMS, but there already was a hole in the wall and the actual topic didn’t matter anymore because he didn’t hear me when I voiced that I felt scared or that he was denying and accusing me of things that weren’t accurate (which I learned recently is DARVO, and he does it all the time). Deepest apologies for the immense detail but my current dive to find solace and resources about NPD (because after that episode, I get love-bombed) OR BPD and my spouse’s ability to pedantically take “clinical information” and vocabulary and use it out of context or in sentences to defend or deny and reverse it on me is truly making me question myself, like, is this my fault? 7 years of marriage and I’ve tried all the ways to speak to him kindly, patiently, directly, use a neutral tone - everything I say, he’ll try to tone police or question as if it’s an attack or entirely fabricate and avoid the point. Even if it’s something about how I’m feeling, suddenly we’re having a therapy session about him. I really want to bring him in to somewhere so he can get some professional insight where a space can be held where I don’t have to referee for both of us and someone else can point out the ways he’s communicating in unhealthy ways and call out things that are triggering (Space hasn’t been held for me for so long and the stress and pain is finally metaphysically showing up as nerve damage in my body. When he shows up in public, he acts as if he’s normal and charismatic and fine and I just feel like the out of context scorned wife, when for example, prior to us arriving, he’s just punched a hole in the wall before we left the house. Any resources would help. I am personally a high functioning and award-winning in my career with goals of becoming a pilot to fight fires and do rescue (which has entirely been put on hold because we seem to be tending to him a lot lately) and the more accolades, and goals I plan out and the more I achieve in my own personal career, the more my spouse seems to act terribly towards me. Despite me trying to encourage him to look inwards and seek his own purpose. Lots more details to divulge but the intention is the same, to gain resources in how common his reactions are, how one keeps themselves sane if or when their partner is like this, if you noticed almost parabolic mood swings (he was the perfect husband two weeks ago) and ultimately, for me not be overcome by whatever it is he has. Okay so I have this recipe for beef and broccoli and I love marinading the steak strips. I’ve always been told that the longer it marinades the better, not sure how true that is. I’ve marinated the steak for an hour or two and flavor wise has been weak. Then I’ve marinated for a couple long hours. Better. This is my first time trying to marinate overnight since I have work and I get off late, thought it would be a good idea. All I’ve used for the marinade is sesame oil, garlic powder, ginger powder, corn starch, brown sugar and soy sauce. After some time in the fridge it starts to get like a white cloud to it, but if I mix up the bag it just disappears into the marinade, if that makes sense. I wondered if it was just the sesame oil in the marinade being in the fridge? I real hope it isn’t something to worry about. When I smell it, it smells fine to me. I’ll check it in the morning but I seriously hope I didn’t just screw up dinner for my boyfriend and I.

I want pho constantly. Like at least three times a week. So, I’ve decided I need to start making it. I’ve made it before, but ob anyone have a quicker recipe that doesn’t require the time it takes to make homemade stock? I’m in the heart of the Bay Area, so getting good ingredients won’t be an issue. Im assuming it would be something like getting a good beef stock and simmering anise/cardamom/coriander seeds etc in a sachet for a little and then getting some good noodles and thinly sliced steak (plus accoutrements) but if anyone knows of a good recipe let me know!
(Also - recommended rice noodle brands?)

The bulgur wheat was a first time try and was AMAZING. The tuna was a bit overcooked but still extremely flavourful. I’m planning on starting this soon, a patient of mine told me about it today and I was curious. However I’m not the biggest red meat fan especially when it’s fatty which seems to be a staple for this diet, I love chicken, eggs, fish, but I’m wondering how I can still incorporate the required level of red meats and fat into my diet. A lot of the cooking I’ve seen on this diet also seems unspiced and lacking flavour. Am I essentially going to be eating steak 3-4x a week does anyone have any recipe recommendations, and can I make flavourful bone broth soup rather than just boiling some bones and drinking it like that ?

Hello. I am just getting into cooking and starting out small.
Currently the dish that I'm working on is a beef stew that is slow cooked.
This is what I currently do with my beef stew.
I take a 1 lb chuck steak with cut up potatoes, carrots, onions, and tomato. Throw it in the slow cooker with beef broth as the liquid. I have it in for about 7 and a half hours. Put it over some white rice and I enjoy.
My question is what is one or two things I can add that doesnt require significant prep time. I only have about 35 mins to prep. And I would prefer to not rush.
I don't want a recipe I just want a few things I can do differently to slowly improve my beef stew.
There is nothing wrong with it currently for me. I love it. However, I know there are improvements to the flavor and maybe something else I'm not even thinking of that can be done.

I am in the phase where I don’t want anything chicken (I’m also very tired of pasta) but love meat. I also don’t like steak, it’s hard for me to digest. 2024.05.13 01:04 Wontons-or-Steak If I can't find what I want, should I just take what I can get?
Pretend you are me (45F) for a moment in this metaphor for my life. You grow up around steakhouses and have never had anything else so you think you like steak too. Its all you've ever had, and you don't love it, and you'll never understand why people go gaga over steak, but it sates your hunger and you think that's normal. So you eat steak a lot, but one day you have spicy wontons and you're like, "WOW What is this?!" It's the best thing you've ever had, but nobody you know likes it and if there are Chinese restaurants near you they aren't advertising. Steakhouses, however, are beating down your door to get you to eat there. And you could only eat at that Chinese restaurant (20+F) a few times because you found out it has a drug problem and doesn't want to change. So you go back to eating steak when you're really hungry.
When you are a wonton lover in a steak world where everyone you know is a steak lover you have to trust that they know more about steaks then you do. So when the steak is bad, but it was advertised as being really good, and steak lovers tell you its a good cut you think there's something wrong with your ability to judge steak. So if it turns out that the steakhouse spent a lot of money on atmosphere and marketing, but the steaks are in the alley out back, covered in flies, sitting in the sun, about to be cooked on a rusty kettle grill, you don't know when to cut and run because the steak lovers told you this was going to be good steak. You think this is normal, so you pretend to be happy with the steakhouse. If you ever talk about wontons all the steakhouses get really weird. They either want to invite a Chinese chef to the steakhouse to watch you eat steak and wontons, or they say "You just haven't had good steak" and make you eat more steak. But you don't have room for wonton's and steak. In fact if spicy wontons were on the menu, you'd never eat steak again.
Then after asking around for wontons a while a new Chinese Restaurant (30F) beats down your door with advertisements, but the place doesn't appeal to you. You don't know enough about Chinese restaurants to know how diverse the menu is, so you think maybe you don't like Chinese restaurants and maybe that one dish at that one restaurant was the only Chinese dish you'll ever like. But when you look at menu's online you look for spicy wontons, and sometimes you even dream of eating spicy wontons. You're tired of steakhouses, and you don't know where to get wontons, so you start making steak and wontons at home. You even purchased wonton and steak cooking tools, spent a lot on them, but it doesn't satisfy the craving. The cooking isn't great, and you don't starve but it gets to the point that you lose your appetite. You eat so little that when you try steak again it physically hurts. So now you just make enough shitty wontons to get by. The problem is that the recipes you find for wontons are made by and for steakhouses, and are buried in with a lot of steak recipes, but its obvious that these wontons are meant to appeal to steakhouses. The people who make good spicy wontons have their own language and you tried to learn but got overwhelmed. You can't talk to your steak loving friends because they think wontons are gross and they feel bad for you but can't do anything to help. You don't know anybody who advertises wontons either, in fact, as statistically improbable as this is, you don't know anybody who openly cooks at a Chinese Restaurant at all. You try to get your steak loving friends to eat spicy wontons with you, but even though they love you as a friend, they want to eat steak and won't even try wontons. Some steak lovers pretend to like wontons because steakhouses like to watch steak lovers eat steak and wontons. As a result some Chinese restaurants tell you they are closed when they find out you have spent a lot of time at steakhouses because they believe steakhouse-wonton lovers are often wonton pretenders.
You moved from a place that had almost no Chinese restaurants, to a place that has tons of them, and they serve not just wonton's but all types of new Chinese dishes, but in this place many of the steakhouses attack the Chinese restaurants. Some steakhouses are trying to pass laws to make Chinese dishes of all kinds illegal, and its working. But since there's more Chinese restaurants around you get to read more menus and learn that not all wonton recipes sound good. You learn what wontons you crave and which are less appetizing. Its been years of you surviving off steakhouse wonton recipes, and recently you've noticed your appetite comes back a little here and there. Sometimes it comes and goes before you can even make wontons, but a few times the wontons just aren't enough and you crave more, so you want to try other people's wontons. Now that you are learning the recipes online you find that the dish you like isn't on many menu's, its not illegal or immoral (except to people who religiously love steakhouses), it's just difficult to find. You come to the realization that if you find someone who really likes wontons they will want you to make wontons with them and you still can't cook well, and don't have a good recipe to practice. You really need to be taught by a wonton chef, but you remember what it was like learning to cook steak for the steakhouse which wasn't satisfying, but you didn't know how to leave. You hated that experience so much you're afraid to start over with spicy wontons, but also why would a wonton chef waste their time teaching you when they could find someone else who knows how to cook. Some Chinese restaurants are open to steak, but wonton chefs are usually not, and you have had a lot of steak.
You've only eaten spicy wonton's at a restaurant once many years ago, but its the best thing you've ever had, and you can't find anything like it. Recently you've seen advertisements for a nice steakhouse. Of all the steakhouses you've seen, this looks like it might be the nicest, and you've been to enough steakhouses that you think you might be better at judging them by now. Its been years since you've shared a meal. You know that you crave wontons and you don't have room for steak and wontons, but steak is better than starving. You're starting to get hungry and don't want to eat alone forever. If the steakhouse has a reservation available, do you take it? Or continue looking for a good spicy wonton dish while quietly making wonton's for 1 at home?
