I’m planning to do some chuck roasting barbecue Memorial Day weekend. The plan is to smoke the meat a couple of hours the morning before, SV for 24 hours, then put it back in the smoker a couple of hours the day I plan to serve it. I’m considering doing the first smoke this weekend, freezing it, then doing the rest next weekend. Would freezing it first change anything? I just think it will be easier to get one step out of the way around a week before.

Hey all! Long time lurker on this sub and I've learned quite a lot (in between all the humor). A few days ago I visited a barbecue joint that said they smoke their brisket for 24 hours and was pretty expensive. I thought, what the hell and decided to try it. It was...good. But I don't know if it was 24 hours good. I'm not convinced that I wouldn't have enjoyed it just as much if it was smoked for only 12 hours, for example.
Separately, a friend asked me, when I "complain" that smoking a brisket is a 12 hour affair and why I can't just do it whenever I want, he was like, "why don't you just turn the temperature up so it cooks faster?"
And so that got me thinking. Say you have this magic technology that instantly cooks your brisket to 200 degrees internally. Forgetting about the smokiness (or let's assume this tech lets you set how smoky you want it to be). Would it be just as tender, juicy, and tasty as someone slow smoking it for 8-12 hours? Or, more realistically, say I'm in a time crunch (or I don't have enough beer) and decide to run my smoker hotter so that the brisket hits temperature faster.
Is it more important to cook it to temperature, or does the amount of time it takes to hit that temperature also matter?

Hi folks, we're about to release an update to the Prediction Engine, which adds some very nice improvements in speed and accuracy. But we're still not happy with its performance for low-and-slow cooks for barbecue or low-temp reverse sears where the algorithm currently gets thrown off by the stall. We've been working on improving this, but to do it we need more data. Here's where you can help:
If you are doing some low-and-slow cooks with your Predictive Thermometer (ideally at temperatures below 250 °F) we'd love your data. Here's what would be most helpful:
(1) Cooks below 300 °F (and preferably below 250 °F)
(2) Cooks that are 4+ hours in length (but shorter reverse-seared cooks are helpful too)
(3) Cooks where there is a stall (no sous vide please)
If you would export the cooking data from the app, and email it to us at beta@combustion.inc
Things to include in the email:
(1) The .csv data file
(2) The oven temperature or smoker temperature you were using.
(3) What food you were cooking (and if you know it's starting weight or thickness please let us know).
(4) Did you wrap the barbecue at any point, and if so, what was the temperature at the core when you wrapped it.
(5) What sensor inside the food was closest to the surface? (If you insert it all the way to the handle, then T7 is the surface sensor. Otherwise, you will see 7 little black dots on the probe that indicate the location of the sensor, with T1 at the tip and T7 closest to the handle)
(6) Photos showing the food and how the probe was inserted are super helpful. Close-up shots of the probe would help us identify the the surface sensor location.
Large foods like brisket, ribs, pork shoulder are helpful. But steak, chicken breasts of legs, etc are helpful too.
Your help in making the Predictive Thermometer work better for barbecue season is very much appreciated.

I just went down a rabbit hole and I'm now determined to spend hours and hours smoking pork belly ribs. But where I live (Asia), a smoker isn't really a thing that can be found in stores very often. For barbecuing, we usually just have rocks to hold charcoals/wood and a grate on top.
I've got a grill, very basic. It's kind of just a tin tub for throwing charcoals/wood into. So I was thinking of taking that and putting the wood on one side, with water on the other and big pan lids for trapping in smoke.
Any other ideas?

So the plan is to pull it from the fridge and toss it on the smoker. His instructions have it coming straight from the bath to the smoker. Any issue with waiting til the next day to smoke? Also should I just leave it in the SV bag until I’m ready to smoke it?

I work from home and used to live in SF, which was fantastic for casually meeting new people and making new friends…all you had to do was literally step outside of your front door and walk down the block. By comparison, San Jose always looks dead (not many people walking around).
I’m trying to be open minded because I haven’t had the chance to get to know San Jose very well yet, but I think I’d feel better if I had a plan for how to quickly meet people and consistently put myself in situations where social opportunities are available. I’m apartment shopping and will be there within a month or two (have to live there for reasons I don’t wanna go into it in this post). I’m happy to throw a barbecue or some kind of hangout when I get there, if anyone would be interested. My bbq skills are mediocre but I can provide whiskey, bad puns and the company of a shockingly cute dog to compensate
Little bit about me: I like rock climbing and plan to join a climbing gym there, I can bring my laptop to work (software engineer) from anywhere during the day and enjoy hunting for hidden gem coffee spots, I’m interested in new experiences and totally down to try new hobby suggestions, love immersive art and diy communities, have a diverse collection of friends (none in SJ yet) and like getting to know all types of personalities, not a smoker but many of my friends have been, have a big board game collection and want to host game/movie nights, am the human to a great dog. Where do you think I should be hanging out in San Jose to be intentional about making friends?

Even though I like Cole, I think this response was so, so mild. I understand it's not personal beef, so I didn't expect him to say he'd kill his grandma and have a barbecue with her, but I expected at least somethin more than ranking his albums and calling them boring. Kendrick said it: it's time for him to prove that he's a problem! Every two songs he's saying he's prepearing the bullets, writing down names, that he's the best, that he's Muhammad Ali, and then when it comes time to prove it he says Kendrick shows fell off like the Simpsons? 2022 he had the highest grossing rap tour, 2023 he had the 8th and Cole wasn't even in that conversation! And then he says Kendrick grew on controversy? I get the "Control-verse-see" wordplay, but even so, that's just not true. He did the Control verse, but Kendrick isn't who he is solely because of that, and Cole knows that. "If he wasn't dissing then we wouldn't be discussing him". He was talking about the best rappers working now on a Drake song and HAD to bring up Kendrick. Kendrick wasn't gonna be the talk of the town right now without that diss, but he's always brought up in conversations of who's the GOAT, and Cole knows that. It's hard not to sound like a Kendrick dickrider, but Cole just kinda said shit that's not that harmful nor truthful, made a few empty threats, called him short (funny as fuck to just throw that in there) and said he didn't like all his albums.
The best lines are the "a hard verse every 30 months" and saying fuck the Grammys, because that already shaves off a big leverage Kendrick has. But the rest are generic threat lines about killing him and shit, and he has some good ones like the swatting a fly and Falcon 9 one, but it just falls flat if he doesn't back it up with agressiveness in the prior lines. Say TPAB was made for white college kids and that he did it for the Grammys. Say Mr Morale was trash and that he's fake deep. Say GKMC was predatory and that he never lived that and that he did it for money. Take it the extra mile. Put a fire under him, still make it a warning but show him what you're loaded with. Only saying you thought his album was kinda lame doesn't compute when the talk is about being the GOAT. Cole obviously doesn't want to burn the bridge with Kendrick, which I understand, but then the whole "I wish somebody tries to fuck with me" talk just falls flat.
He lacks hunger. He lacks the edge to prove he is the best rapper alive. He seems too worried about still being friends rather than actually proving he should not be fucked with. I understand the idea of a "warning shot", but this was at max a snap'n'pop from accross the street.
All that said, if Kendrick doesn't respond Cole with this mild-toast of a diss, Cole wins. If Kendrick actually keeps quiet from an album ranking and some eight different lines about how Cole's gonna shoot at him eventually some day some hour of some week, Kendrick loses and embarrassingly so.

Sorry, no photos. A great pork shoulder looks just like every other great pork shoulder.
First time SV a pork shoulder. I've been smoking pork shoulder for years (using a converted charcoal grill), however it's harder now to dedicate many hours in a morning trying to keep active watch over the coals prior to a party. Thought I would use my tried and true method of pork butt (with minor modifications) and see if it would work. I couldn't find a ton of info about previously smoked recipes being SV'd so here's my experience.

Coming from smoking, I almost always do injections. I had 2 7-11 pound shoulders. I follow Chris Lilly's injection recipe: https://www.virtualweberbullet.com/pork-butt-chris-lilly-big-bob-gibson-championship-injection/. I also use Lambert's sweet rub o mine from the store for rub. Smoke for about 3-4 hours, then wrap until it hits 205 internal. I tend push the wrapping sooner because it could just make that outer layer too dry.

I thought the pink ring may be somewhat desirable, so I picked up pink Himalayan salt. I also was worried about not having smokey flavor, so I added a dash of weber's liquid smoke. I know how overpowering this can be, so I wanted to stay conservative with its use. So I injected as usual, patted dry with paper towels, then rub. Tossed it into bag and into SV.

I read seriouseats write up about time and temp with SV (https://www.seriouseats.com/sous-vide-barbecue-pulled-pork-shoulder-recipe) however I also read other articles that people did good with it being lower. I wanted pull apart but not mushy. I had about 15 hours, so I set my temp for 165. Bagged it and went. Next morning, I pulled it out. I fired up the charcoal smoker / grill and got to temp around 300. Tossed some wood chips / chunks in water and off we went. I didn't touch it for about 3 hours then just pulled it and let it rest. Then shred and serve.

Shredding - So when it came time to shred, the outside was fine, but the inside was still too connected. Had to chop up those parts. So when I do it again, with that much time I may bump it to 175. I was thinking about that before I started but decided to be a bit lower just in case.
Bark - Bark was great. Tasted just like my usual pulled pork, but more juicy because it didn't get too dry being in the smoke.
Taste- Same great flavor as my usual pulled pork. I didn't know if the liquid smoke had much of an effect, so I may do a little bit more next time. Didn't see the pink ring having any effect, so I just may skip that next time.
With how hands off SV is compared to smoking, this will probably become my go to. Hope this helps.
