 | Insanely good!! Used chopped sun dried figs, cheddar and toasted pecans. My go to recipe is full proof baking’s basic open crumb bread. submitted by peafowlenthusiast to Sourdough [link] [comments] For 2 loaves- 140g whole wheat flour 510g bread flour (I use KA) 475 g water, 90 degrees F (73% hydration) 15g salt (2.5%) 130g leaven (20%) Final dough hydration with 100% hydration starter is 75.5% method: Fed starter right before I went to bed, 100% hydration and 1:2:2 ratio. Mix flours and water. Had to get flour so autolyse was only a half hour. Add starter, wait 30 mins. Add salt, wait 30 mins. Stretch and fold, wait 30 mins. Divide and “laminate”, add mix-ins. 3 folds spaced 45 mins apart. At this point it was about 2:00, I shaped at 5 and gave it an hour in the banneton as an extra final proof. Baked at 8 am the next day in preheated Dutch oven using the ice cube method. 500F with lid for 20 mins, lid off, take out of DO and place on oven rack with tin foil. 450F for another 20 mins.  | Cast Iron Cinnamon rolls!!! submitted by plantbasedmood to castiron [link] [comments] Dough: 3/4 cup milk 1/4 oz active dry yeast 1/4 cup room temp butter 1 egg + 1 egg yolk 3 cups flour 1/2 cup brown sugar 1/2 tsp salt 1 tsp vanilla Filling: 1 stick butter 2 tbsp cinnamon 1/2 cup brown sugar plus more for dusting 1 cup chopped pecans Activate yeast according to instructions, mix dough by hand for abut 8 minutes. Put in a greased bowl, cover with a towel, and proof for 1.5 hours. roll the dough out into a large squareish shape. spread out butter mixture, then fold. Then repeat three times, rolling the dough out, covering with the butter mixture, then folding so you’re laminating the rolls with cinnamon sugar butter. Before the last roll, cover the butter mixture with more brown sugar and the pecans. Roll it up into a long and slice sideways into 8-12 even rolls and place in a greased cast iron. Cover with a towel and proof for 30-45 minutes. I put a slab of butter on each roll before baking! Bake at 350 till gold brown (20-25 mins I think!!) and lightly sprinkle the top with salt 😎 |

 | Today I baked. Yesterday, I subdivided my dough (800k bread flour, 200k whole wheat flour, 700k water, 209g starter (100% hydration) and 20g salt) prior to bulk fermentation. One third was laminated with raisins and pecans and bulk fermented in a separate container. I did a second lamination of that loaf with a brown sugacinnamon mix before final shaping. UPDATE: I printed off a list of safe/not safe foods for dogs and showed it to dad. We talked about it and he even agreed to get the paper laminated for us to keep put up on the cork board in the kitchen. He’s reading it over and hopefully this will change things moving forward. My dad doesn’t really educate himself on what’s safe for dogs to eat and what’s not. So he keeps feeding my dog (my ESA for severe ptsd) random things like pie and candied pecans, or really salty foods or things with garlic. Not bothering to see if it’s safe first. I’m all for giving her veggies, fruits, meat, etc that are safe but i cannot get through to him that he has to check the food he wants to give her first and he continues to disrespect me and feed her whatever he’s eating and justifies it by saying “well you see my dog is still alive” 💀 it stresses me out so much as my worst fear in life is losing her. I’m so close to absolutely flipping out on him because i have had so many conversations with him and he won’t stop. What do i even do? I live with him for now due to a previous complicated situation (left abusive ex) and can’t afford to live on my own as rent is too high and especially the city i moved to to stay with him. I’m just at my wits end. This is upsetting me so much and it’s like he doesn’t care.

We love to try street foods and new kinds of dishes and want to explore the culinary scene as much as we can. The advice I got was to carry a laminated card stating our allergies. But we do not speak Spanish and would like your help translating something like the following in basic Spanish that anybody would understand:
"I have severe nut allergies - I am allergic to all nuts including peanuts, walnuts, pecans, almonds, cashew, pistachio and macadamia. Can you please make sure to prepare my food without any nuts, and to not to use any cooking utensils that may have come in contact with nuts before?"
Please also let me know which types of moles or dishes (like Chiles En Nogado) have nuts. As well as words to watch out for on menus that indicate the use of nuts.

Hello! I was hoping people might be able to help. I'm writing a book where a person goes from the modern world to a world that is a mesh of late medieval / early renaissance Europe. The character is attempting to 'invent' modern baked goods.
Of course this runs into the problem of certain ingredients that just wouldn't be available or are too expensive. I've done a lot of research on substitutions and was wondering if any bakers might have any suggestions on desserts/pastries.

I live in a 2 story home of which 90% is covered in the same laminate plank flooring (on both floors). The bathrooms are tiled, which is the only exception. The issue is that I have to replace the entire first floor's flooring, due to some unfortunate cat related issues and unfortunately, the existing flooring has been discontinued by Armstrong.
How do I choose new flooring that will obviously not match with the 2nd floor flooring? This would not be a big issue if the stairs connecting the first and second level weren't also covered in the same flooring. I don't want it to look like I tried to match the flooring and was unsuccessful, nor do I want it to look so jarring and disparate.
I'd like to keep the same style of flooring, though due to aforementioned cat, am looking at luxury vinyl plank for a more water resistant nature. But any other recommendations are welcome.
