I just had my colonoscopy today. I’m writing this to detail what happened for Ethan to reference, because I wish I had someone to do that for me. I’d never had a colonoscopy before, but I recently had two endoscopes due to autoimmune / digestion problems.
Yesterday I was instructed to only consume clear liquids and no solid food for the entire day. It definitely sucked. There was heavy emphasis on not consuming anything with red or purple coloring. I was ravenously hungry and couldn’t help but think about every single delicious food I’ve ever enjoyed.
Later in the day, it was time to drink the “solution” prescribed for “bowel prep.” This basically means you gotta drink this stuff that’s supposed to clear out everything that’s in your intestines. I had heard horror stories about this drink and they weren’t wrong. The paperwork I was given recommended that this solution be refrigerated first and it also suggested that it’s easier to drink with a straw. I had to just slam it down and chug it… there was no time for cute little straw games.
Once it’s time to start drinking the solution (for me it was 6pm the night before the colonoscopy), you have to drink a cup every 15 minutes until the jug is half empty. This stuff is the worst tasting thing you’ll probably ever drink. It’s like ocean water, but thicker. It also says to stay close to the bathroom and that the stuff should start working within an hour (once you’re about 4 cups in) and they aren’t wrong. The jug of solution is the size of a gallon, by the way. Somehow every cup tasted more horrible than the one before it. The drink is slightly thicker than water, just enough to feel wrong in your mouth. I can’t sugarcoat this — it’s horrible. Every part of my body wanted to resist drinking this stuff.
Once the “movements” start, it doesn’t really stop. Bring your phone charger, bring whatever you need, and prepare to be in the bathroom for a long time. And for the love of God, get wet wipes. The worst part is that while you’re enduring “the process”, you also have to continue drinking cups every 15 minutes. And that is the last thing you want to do, because you know it’s going to make things escalate and continue. It’s not like taking a normal poop. It’s not even like having normal diarrhea. Nothing about it is normal. Everything just comes out. You will feel exhausted and want to bathe.
For me at least, once you get half the jug down, you at least get to go to sleep… but then I had to wake up super early to start again on the second half of the jug. I had to do this at 4am. Everything was kind of a blur at this point, but you just have to get through it and complete the cursed drink. You either have to finish the entire gallon jug or stop when you’re (pardon my French) shitting nothing but clear water, because that means everything in your body is now flushed and empty. It’s not a nice feeling.
Once you’ve completed the drink part, everything else is a piece of cake. You go to the appointment, wait, get your IV, and go to sleep. They do the rest. I’m totally fine and mostly back to normal now (other than being super tired). But yesterday and this morning leading up to the appointment was rough. That stuff you gotta drink to flush everything out the day before… it’s no joke. God speed, Ethan. Papa bless.

The amber one is unflavored - sort of a control group.
Have acquired a new gallon jar to go with my half gallon starter jar. Believe I will now brew a new gallon and a quarter, divide between both jars, and split the original remaining liquid between the two.
Also, I basically have a double pelicule in the liquid - the new one that grew on top of the one I started with. May split them both and divide between the two jars.

So I swapped out a condenser today, hooked my gauges up to the old unit, gauges read zero, even opened up the refrigerant side line to make sure. Cool, must’ve been a leak that was let go for a long time. didn’t have to reclaim it or suck it back, saves me some time. Cut into the liquid line and then refrigerant starts pissing out and all of sudden the pressure on my gauges jumps up to about 70psi. Closed off the base valves real quick and had to let whatever was in the lines go. I feel like an idiot and I don’t understand how that was possible. Could anyone shed some light on what happened here?

This is why these kids are uncouth and can’t properly fall asleep! Common sense just ain’t common in Nika’s world. He needs a BATH! Then she fed them dinner around 10:30pm smh, how tf are they supposed to fall asleep like this? Not to mention, somebody is lying on the floor DIRECTLY in front of a TV in the other room! Sy taking antibiotics PRN instead of on a schedule like she should be, Amoxicillin should be refrigerated and it’s not! Sorry to say but Sy will never properly recover from whatever tf she has! Whew!

They told him he needed to pay 100% of the invoice before they would even schedule people to come out for the repair (is this standard practice?), and then after he paid, they sent him this invoice with barely any details. He commented to them, that must be an expensive filter and the tech said it’s all the labor. Seems to me it should have been a one person job, these guys sent 5, had them sitting in the truck the whole time while one guy worked for barely over an hour doing the repairs. Am I missing something, or is $1600ish for 1 hour work totally unreasonable?

So I've made Sous Vide brisket a couple times with the straight up Anova Kenji recipe.
They did not turn out well. Dry. Overly peppery. Not good.
I did the 155F for 36 hours version of the recipe. I bought a brisket point that was probably overly trimmed too.
I think my big failure was not resting the brisket after the Sous Vide bath to bring it back to room temperature before putting it in the smoker.
Regardless, I don't like to lose, so I am going to do a cook again with the following recipe. I might be resting it too much, and not sure about the dry brining. Please let me know what you think!
Ingredients
Steps
  1. Trim the brisket. Remove any hard fat that will not render. Save trimmings to render into tallow. Weigh the brisket after trimming. Trim minimally.
  2. Dry brine. Season the brisket with kosher salt. If possible, refrigerate the brisket uncovered for 12 to 24 hours to give the salt time to be absorbed. The rule of thumb is 1/2 teaspoon of kosher salt per pound (453.6 g) of meat or 1% of trimmed meat mass.
  3. Once dry brining is complete, combine other rub ingredients together. Rub meat with 2/3 of rub mixture. Reserve remaining 1/3. Let rubbed meat rest for 2-3 hours in fridge.
  4. Set sous vide to 185F. Add liquid smoke and seal brisket in bag. Bag will need weighted down. Sous Vide for 9 hours.
  5. Remove bag from water. Rest on counter and allow the bag to come back down to room temperature (at least 30 minutes). An ice bath can speed this up, or the bag can be refrigerated. Meat core temperature should reach 34-35F. Brisket can be refrigerated at this point for up to 1 week. If using ice, refrigerating, or even freezing, let meat return to room temperature before proceeding.
  6. Start smoker or oven and set for 225F. Open bag and blot the brisket dry with paper towel. Reserve all liquid. Rub brisket with remaining 1/3 rub. Place on smokein oven fat cap up. If in oven, place brisket on a wire rack set in a rimmed baking sheet. Roast until dark bar forms and/or reaches an internal temperature of 131F (about 2 hours).
  7. Transfer brisket to cutting board and tent with foil. Rest until brisket reaches an internal temperature of 145 to 165 (about 30 minutes).
  8. Slice against the grain and serve.

This is a take on Tartine's Book 3 recipe Sprouted Black Emmer. I changed it up a bit - left out the sprouted grains mainly. I find using flours that aren't malted or low in gluten need some help for a good rise and a nice crumb so I added a small amount of vital wheat gluten and 5g diastatic malt to compensate and the result was excellent!
150g Black Emmer Flour 150g Carolina Grounds High Extraction Nu East Hard Red 300g Central Milling Artisan Bread Flour 2 Tbs vital wheat gluten 5g diastatic malt 100g young ripe starter 150g Safety Glasses "White" non-alcoholic beer 350g water 35g maple syrup 10g salt Bran flakes for coating
Mix flours, VWG and malt with all liquids including syrup and starter - let autolyse for about an hour. Add in salt and then bulk ferment 3.5 hours at 78 degrees with stretch and folds every 15 minutes and then 3 coil folds every half hour. Pre-shape, bench rest, shape and into banneton. I let it sit out for 1/2 hour because I only gave it a 12 hour refrigeration after.
This is such a delicious loaf of bread. There's a hint of sweetness, complex flavors. Highly recommend trying the combination of beer and syrup in your sourdough. I used all specialty flours that aren't malted - also compensated for the lower gluten in the black emmer. The crumb is perfect; delicate, airy - If you're struggling with making sourdoughs that have a nice rise when using alternative low gluten flours, consider adding diastatic malt and vital wheat gluten.

So Saturday I put in a new condenser did everything went to fire it it ran good for 20 minutes and then my pressure went to zero on the liquid line and about 80 on the suction.
I checked the eev it tested out fine everything said it was fine but I had no refrigerant in my liquid line at all when I left there the second picture is my boss is readings today when he went back he said he just added a little refrigerant and everything's fine
I don't understand how low refrigerant would cause this wouldn't it trip out on low pressure

I have had 2 root canal treatments on one tooth, and 4 on the tooth next to it in the last four weeks. The last treatment was last Wednesday the 15th of May. My jaw still hurts though. I have had 7 days of Amoxicillin, last capsule was yesterday morning. I am still in a lot of pain. Is this TMJ or is this something else? Pain is on the left side, up to my left ear. I am on painkillers, but still am very sore. No pus or extreme redness, no fever. I have had TMJ before. Will this take long or do I have to call the dentist again? (only thing that helps is chewing soft foods, and liquids) Can I do something else?

Time to taste again, now 20 days since initial brew.
Outside Visual: looks good, don’t see additional brown fibrous things.
Inside visual: looks good, nice gelatinous blob at top.
Smell: smells like booch.
Taste test: pipe out with straw - it tastes like somewhat sweet kombucha. It’s possible there’s some sugar at the bottom of the jar, or that I over-sweetened. Or not.
Conclusion: I think F1 is complete.
With F2 now finally at an action point - I decide to change my strategy.
Was originally going to bottle off with 3 sets of two different flavor combos.
Now, I think I want to increase my batch size sooner rather than later; invest in some 3 gal jars and a seed heater (which also helps me in the garden)… figure out if I need a jar size in between to make the jump.
In any case, the new plan is to retain more OG liquid to use as starter for next, perhaps larger batches.
So, for F2 the plan is now one flavor combo done three different ways. I select sweet cherries and tart cherry juice.
After cleaning way more than I almost ever do for anything, and remembering to follow scalding water with cool down water, I chop my cherries by hand.
Mistake. Next time will use blender or food processor.
16 oz bottles. 2 cherries in one. Three in the next. Four in the final. Add what I assume is the same amount of cherry juice to each - a bit more than a dash, a bit less than a half-shot.
Attach lids to Grolschesque bottles. Attempt to attack lids. Get all three on the wrong way. Flip one without removing. Can’t do the other two. Scold myself for not dealing with lids when I rinsed prior to adding cherries.
Move gelatinous blob to VERY CLEAN glass bowl. Cover with liquid, but it floats!
Begin to funnel in liquid to bottle 1. Quickly realize steel funnel is awful, glugs up, hard to measure where you are. Fill bottle one - maybe a tad high.
Surprised to see fizzing at top. Then realize it’s just the booch meeting the sites on the cherries, nothing to see here, I’m not creating three pipe bombs (or bottle bombs, if you will).
Fill all three bottles. Return blob and liquid to OG jar. Take photo for records and for y’all.
There’s kind of a lot of liquid still in there.
What to do? Cut up more cherries? Slap together something else.
Nope.
Bottle number 4: nothing. Nothing but OG booch. May as well get to know my sourdough starter.
Return all items to shelf.
Will check twice daily, plan to refrigerate in 48 hours.
Now plotting strategy for expansion.

I'm torn about this situation since summer is quickly approaching, but recently figured out that there's a leak in my HVAC system. We bought this house in Feb 2023 and I had Company #1 come in April 2023...
Only for them to figure out 2 days later - Found flat on refrigerant. Found leak at metering device. Tightened up. No more leak. Tested with nitrogen. Held for 20 . Vacuum down to 650. Added 6.5 lbs of r410a.
And then 2 months later in June 2023 - Reset and found the dual cap at 0. Replaced cap and ran in cooling with good amps.
NOW May 2024 - I was't sure about going with Company #1 again and this time tried Company #2.
They're trying to replace my furnace and evaporator coil... for an estimated $7,700. My condenser unit is from 2021, but apparently the previous owners didn't match the insides with the outside work. There were pictures taken of the coil having a leak that can't be welded given that its on the inside of the coil.
Time for a 2nd opinion and reached out to Company #3. They want to do a dye test and charge $825 to find the leak. Tech didn't go into the house and even take a look at the attic and just looked at the condenser unit outside.
So what do I do to move forward? It's getting hotter in Vegas...
